HAM AND SWISS CROISSANT BAKE

This quick and easy breakfast casserole featuring croissants, ham and cheese, is perfect for breakfast, brunch, or even dinner!

3 large croissants
8 ounces chopped cooked ham
1 1/2 cups shredded Swiss cheese
6 eggs
1 cup half and half
1 tablespoon honey
1 teaspoon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
Fresh parsley, for garnish

Steps:

  • Spray a deep-dish pie plate or 9x9 inch baking pan with cooking spray. Cut croissants in half lengthwise, then tear or cut each half into 5-6 pieces. Place croissant pieces in prepared pan. Sprinkle with ham and cheese.
  • In large bowl, whisk together eggs, half-and-half, honey, mustard, salt and pepper.
  • Pour egg mixture over croissants; press croissant pieces into egg mixture to moisten completely. Cover tightly with foil and refrigerate for at least 8 hours but no longer than 24 hours.
  • Preheat oven to 325 degrees. Bake, covered, for 35 minutes. Uncover and bake 25 to 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Garnish with fresh chopped parsley, if desired.

1 loaf (1 lb) French bread, cut into 1/2-inch slices
2 tablespoons Dijon mustard
8 oz thinly sliced cooked ham
8 oz thinly sliced Swiss cheese
4 eggs
2 cups milk
1/4 cup grated Parmesan cheese
1/4 cup Progresso™ plain bread crumbs
2 tablespoons chopped fresh parsley
3 tablespoons butter or margarine, melted

Steps:

  • In ungreased 13x9-inch (3-quart) glass baking dish, arrange half of the bread slices, overlapping as needed. Brush bread in dish with mustard. Top evenly with ham and Swiss cheese, overlapping as needed. Top with remaining bread slices, arranging them over first layer of bread slices to make sandwiches.
  • In medium bowl, beat eggs and milk with wire whisk until well blended. Carefully pour over sandwiches. Cover; refrigerate at least 1 hour but no longer than 12 hours.
  • Meanwhile, in small bowl, mix Parmesan cheese, bread crumbs, parsley and butter. Set aside.
  • Heat oven to 375°F. Sprinkle crumb topping over casserole. Bake uncovered 30 to 35 minutes or until sandwiches are puffed and golden brown.

These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

2 ½ cups uncooked egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup white wine
¼ cup water
2 cups chopped cooked ham
½ cup shredded Swiss cheese
1 cup seasoned stuffing mix (coarse-crumb style)

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.

1 package (8 ounces) egg noodles, cooked and drained
2 cups cubed fully cooked ham
2 cups shredded Swiss cheese
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1/2 cup chopped green pepper
1/2 cup chopped onion

Steps:

  • In a greased 13x9-in. baking dish, layer half the noodles, ham and cheese. , In a large bowl, combine the soup, sour cream, green pepper and onion; spread half over the top. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until heated through.

1 (15 ounce) package frozen potato patties (slightly thawed)
1 tablespoon melted butter
2 cups shredded swiss cheese (can use more cheese)
2 cups finely chopped cooked ham
1 (10 ounce) can sliced mushrooms, well drained
4 large eggs
2 tablespoons whipping cream or 2 tablespoons 18% table cream
1 teaspoon seasoning salt (or to taste)
black pepper
1/4 teaspoon paprika

Steps:

  • Grease a 9-inch baking dish.
  • Cut and fit the potato patties into the bottom of the pie plate; press firmly, then brush with melted butter.
  • Bake at 425 degrees for about 20 minutes; remove from oven.
  • Reduce oven temperature to 350 degrees.
