My family has enjoyed this hearty ham salad recipe for years. It came to be an unexpected leftover every time we had ham for a special dinner. Recently, I decided to measure the ingredients, write down the recipe and pass it on to my daughter and daughter-in-law. Number Of Ingredients 8

3 cups ground fully cooked ham
1 hard-boiled large egg, chopped
2 tablespoons finely chopped celery
2 teaspoons finely chopped onion
2 teaspoons sweet pickle relish
3/4 cup mayonnaise
1 tablespoon prepared mustard
Assorted crackers

Steps:

  • In a large bowl, combine the first five ingredients. Combine mayonnaise and mustard; add to ham mixture and mix well. Refrigerate until serving. Serve with crackers.

This recipe goes back over 30 years, it's wonderful served as appetizers on crackers or toasted party pumpernickle bread and of course it's also great in a sandwich! --- you may adjust all ingredients to taste, plan ahead this needs to chill for a couple of hours or overnight before using

3 cups minced cooked ham
1 hard-cooked egg (peeled and chopped)
3 tablespoons finely minced celery
1 green onion, finely chopped (or use 2 tablespoons minced yellow onion, or to taste)
2 tablespoons sweet pickle relish
1 -2 tablespoon chopped pimiento
1 tablespoon prepared yellow mustard
1/2-3/4 cup mayonnaise (I start with 1/2 cup and add in more if needed)
1/2 teaspoon fresh ground black pepper (to taste)

Steps:

  • In a medium bowl combine the first 6 ingredients together.
  • In a small bowl mix together the mayonnaise and yellow mustard until well combined; add to the mixture in the ham mixture; mix to combine.
  • Season with black pepper to taste.
  • Cover and chill a minimum of 2 or more hours before using.

4 slices deli ham, chopped
1/2 cup cheddar cheese, shredded
1/4 cup mayonnaise
1 teaspoon mustard
1 teaspoon vinegar
1/2 teaspoon salt
6 slices white bread, toasted

Steps:

  • In a medium bowl, mix together all but the bread; blend well.
  • Cover and chill 30 minutes.
  • Spread egg salad evenly on 3 slices of toast, top with remaining slices of toast.

1/4 teaspoon garlic powder
1/4 teaspoon pepper
salt, if needed, to taste
1/3-1/2 cup mayonnaise

Steps:

  • Place all ingredients except mayo into food processor and process to desired consistancy.
  • Remove to a bowl and stir in the mayonnaise.
  • Serve w/ crackers, veegies, etc, or spread on a sandwich.
