HAM AND EGG TEA SANDWICHES

6 large eggs
2 tablespoon mayonnaise
1/4 teaspoon paprika
1 tablespoon chopped fresh dill
Kosher salt and freshly ground black pepper
2 tablespoons mayonnaise
1 tablespoon spicy brown mustard
1 tablespoon pickle relish
1 tablespoon finely chopped onion
1 stalk celery, finely chopped
1 tablespoon chopped fresh parsley
1/2 pound deli ham, sliced thick, diced
Kosher salt and freshly ground black pepper
6 slices wheat bread
6 slices white bread

Steps:

  • For the egg salad: Start by hard boiling your eggs. Put your eggs in cold water in a medium saucepan, place on the stove, and bring to a boil. Turn the stove off, cover the saucepan with a lid, and after 15 minutes run them under cold water. Peel the shells from the eggs (reserve 2 whole eggs for Round 2 Recipe Nicoise Salad with Lemon Garlic Vinaigrette) and chop.
  • In another bowl, stir together the mayonnaise, paprika, dill, and salt and pepper. Add the chopped eggs and gently toss.
  • For the ham salad: In a medium bowl, whisk together the mayonnaise, mustard, pickle relish, onion, salt, pepper, and parsley. Add the celery and half the ham (reserve remaining half for Online Round 2 Recipe Ham and Cheese Breakfast Burrito) and toss to coat. Set aside.
  • For the sandwiches: Cut off the crusts from the wheat and white bread. On a clean surface, place 1 slice white bread down and top with half the egg salad. Top that with 1 slice wheat bread and spread half the ham salad on top. Top with 1 slice white bread. Slice crosswise into triangles. Repeat, alternating the white and wheat bread as the beginning slice, until you have made 4 sandwiches.

8 slices thick-cut bacon
8 large eggs
1/2 cup mayonnaise
1/4 cup finely chopped sweet onion
3 tablespoons sweet relish
1 tablespoon Dijon mustard
1/2 teaspoon paprika
1 celery stalk, very finely chopped
Kosher salt and freshly ground black pepper
12 slices white bread, lightly toasted
About 4 leaves green-leaf lettuce, torn in half
2 medium tomatoes, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a rimmed baking sheet with foil and place a rack on top. Arrange the bacon on the rack in a single layer. Bake until browned and crisp, 20 to 25 minutes. Let cool, then break the bacon in half.
  • Meanwhile place the eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Boil for about 30 seconds, then turn off the heat, cover the pan and let stand 20 minutes. Drain, add cold water and let stand in the cold water for 5 minutes. Drain, peel the eggs and chop.
  • Combine the eggs with the mayonnaise, onion, relish, Dijon, paprika, celery, 1/2 teaspoon salt and pepper to taste in a bowl. Stir, mashing the eggs slightly, until very well combined. Season with additional salt and pepper.
  • Lay out 4 slices of toast and top evenly with half of the egg salad, bacon, lettuce and tomato. Sprinkle the tomato with salt. Add another piece of toast to each and top with the remaining ingredients. Close the sandwiches with the last 4 pieces of toast. Use a sharp knife to trim the crusts from the sandwiches; cut in half diagonally.

1 Tbsp. GREY POUPON Dijon Mustard
1/4 tsp. black pepper
1/4 tsp. dill weed
1/4 tsp. paprika
3 Tbsp. KRAFT Mexican Style Finely Shredded Four Cheese
1/3 cup KRAFT Real Mayo Mayonnaise
1/4 cup KRAFT Real Mayo Mayonnaise
12 slices OSCAR MAYER Bacon, cooked

1 head green leaf lettuce

Steps:

  • In a large bowl, mix together first 11 ingredients. Add mayonnaise.

A fun twist on ham and eggs! I loved both these spreads. The egg salad is creamy and the ham salad has a touch of crunchiness thanks to the celery. The presentation is lovely too thanks to the two different breads. These would be great served at a luncheon or as an appetizer at a holiday party.

HAM SALAD
2 can(s) Hormel smoked ham (6 oz)
1/2 c Blue Plate mayonnaise (approx., i don't measure)
1/8 c celery, finely processed (approx, you may use less)
2 Tbsp pickle relish, Mt. Olive (heaping tbsp)
1/4 tsp black pepper (approx)
EGG SALAD
8 eggs, hard boiled, peeled & mashed
1/2 c mayonnaise, Blue Plate (approx, i don't measure)
1/4 tsp black pepper (approx)
BREAD
1 loaf, sliced white bread (Walmart brand bread, actually, works best)
1 loaf, sliced whole wheat bread (Walmart brand bread, actually, works best)

Steps:

  • 1. HAM SALAD: Drain liquid from canned ham, and place into bowl. Separate, and smash with a fork.
  • 2. Add remaining ingredients, increasing or decreasing mayonnaise to achieve a smooth spreading consistency while remaining stiff enough to not "run".
  • 3. Refrigerate several hours or overnight to allow the flavors to blend!!!
  • 4. EGG SALAD: Cook eggs with a pinch of salt to hard boiled stage.
  • 5. Immediately drain hot water, crack eggs, and place in cold water. They should immediately peel with ease.
  • 6. Using a hand grater, grate the eggs into a bowl, and add remaining ingredients, increasing or decreasing mayonnaise, as necessary to achieve a smooth spreading consistency while remaining stiff enough to not "run".
  • 7. Cover and place in the refrigerator.
  • 8. ASSEMBLE SANDWICHES: Remove the crusts from the bread.
  • 9. Spread a thin layer of ham mixture on one slice of bread, and top the ham with a thin layer of egg mixture.
  • 10. Place another slice of bread on top, lay flat on cutting board, and with an electric knife, diagonally slice the sandwich.
  • 11. Make half the sandwiches with whole wheat bread and half with white bread, attractively place on platter, and garnish!!!! THE PERFECT PARTY SANDWICH ... that EVERYONE LOVES!!!!

  • Combine eggs, ham, celery, onion, mayonnaise, mustard, salt and pepper; spread on six slices of bread. Top with remaining bread and set aside. In a bowl, whisk batter ingredients until well blended., Heat about 1/2 in. of oil in a large deep skillet. Dip sandwiches into batter. Fry in hot oil for 3 minutes on each side or until golden brown. Drain on paper towels.

6 Tablespoon mayonnaise
4 oz turkey slices
1 large tomato sliced
2 slices cheddar cheese
4 oz ham slices
2 slices cooked bacon (cut in half)
4 lettuce leaves
salt and pepper to taste

Steps:

  • Spread 1 tbsp of mayonnaise on one side of each slice of bread. Arrange 3 slices down on your cutting board with mayo side up. Top one slice with half of turkey, tomato slices, and a slice of cheddar cheese.
  • Place a slice of bread with mayo side down over the first slice with cheddar cheese. Top the second slice with ham, 2 slices bacon and 2 lettuce leaves. Season with salt and pepper and place the last slice of bread over the lettuce with mayo side down.
