CRISPY HAM AND CHEESE WAFFLES

Get ready for the savory waffles you didn't know you needed in your life! With crispy ham and cheese in these waffles, plus a dose of green onion, they're everything you could dream of in a savory waffles, and then some.

1 3/4 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon granulated sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 large eggs
1/2 cup light oil, such as canola, vegetable, or avocado oil
1 3/4 cups milk
1 cup finely chopped ham lunch meat
1 cup shredded cheese, such as sharp cheddar or swiss
2 green onions, finely chopped, optional

Steps:

  • In a medium mixing bowl, combine the flour, baking powder, salt, sugar, garlic powder, and onion powder, and stir to combine.
  • Make a well in the center of the dry ingredients, and add the eggs, oil, and milk.
  • Whisk all ingredients together until a thin and slightly lumpy batter forms.
  • Fold in the ham, cheese, and green onion if using.
  • Pour the batter into your waffle iron according to manufacturers directions.
  • When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
  • Serve waffles hot.

Sliced ham, Swiss cheese, and arugula sandwiched between cheesy toasted waffles are grilled until melty make a delicious twist on a classic sandwich.

1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon chopped fresh basil
1 ½ teaspoons baking powder
¼ teaspoon salt
1 egg, lightly beaten
1 cup milk
½ cup shredded Swiss cheese
¼ cup vegetable oil
2 tablespoons Dijon-style mustard
1 (16 ounce) package Farmland® Deli-Style Sliced Ham
4 slices Swiss cheese
½ cup arugula or spinach leaves
2 tablespoons butter

Steps:

  • In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. Add batter to a preheated, lightly greased waffle iron and bake according to manufacturer's directions. When done, use a fork to lift waffle off waffle iron. Repeat with remaining batter. You should have 8 4-inch waffles.
  • For each sandwich, spread waffles with mustard. Layer ham, sliced cheese, and arugula on half of the waffles. Top with remaining waffles, spread side down.
  • Heat a griddle or 12-inch skillet over medium heat. Add butter until melted. Add sandwiches. Cook for 4 minutes or until cheese is melted, turning once.

3 large eggs
2 cups whole milk
1/3 cup vegetable oil
2-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1-1/2 cup shredded part-skim mozzarella cheese
1/2 to 3/4 cup cubed fully cooked ham or Canadian bacon
Fried eggs, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; add to egg mixture and beat until smooth. Fold in cheese and ham or bacon. , Bake in a waffle iron according to manufacturer's directions until golden brown. Top each waffle with a fried egg if desired.

4 cooked waffles
2 slices Swiss cheese, halved
Dijon mustard, optional
2 slices ham
Butter or nonstick spray, for greasing

Steps:

  • Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
  • Heat a nonstick skillet or cast-iron pan over medium heat.
  • Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
  • Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.

1 tablespoon unsalted butter, at room temperature
2 slices sandwich bread
2 ounces Gruyère cheese, sliced
3 ounces Black Forest ham, sliced
1 tablespoon Maple Butter
Special Equipment
Belgian or standard waffle maker

Steps:

  • Preheat the waffle iron on low.
  • Spread a thin, even layer of butter on one side of each piece of bread.
  • Pile the cheese and ham on the unbuttered side of one slice of bread, and put the open-face sandwich in the waffle iron as far away from the hinge as possible. (This allows the lid to press down on the sandwich more evenly.) Place the second slice of bread on top, with the buttered side up, and close the waffle iron.
  • Check the sandwich after 3 minutes. About halfway through, you may need to rotate the sandwich 180 degrees to ensure even pressure and cooking. If you'd like, you can press down on the lid of the waffle iron a bit to compact the sandwich, but do so carefully-the lid could be very hot. Remove the sandwich from the waffle iron when the bread is golden brown and the cheese is melted.
  • Spread the Maple Butter on the outside of the sandwich. Slice in half diagonally and serve.

16 slices firm white sandwich bread
8 thin slices boiled ham (1/4 lb)
8 thin slices Swiss cheese (1/4 lb)
Special Equipment
a large square or rectangular electric waffle iron (not a Belgian waffle iron)

Steps:

  • Preheat waffle iron on high until just beginning to smoke. Reduce heat to moderate and brush generously with some butter.
  • Spread butter on 1 side of 8 bread slices and turn slices over. Top 4 slices with 1 slice ham and 1 slice cheese, folding in any overhang, then top with remaining 4 buttered bread slices, buttered sides up. Cook sandwiches in batches (number of batches will depend on size of your waffle maker) until bread is golden and crisp, 4 to 6 minutes.
  • Assemble and cook 4 more sandwiches in same manner.
  • Just before serving, cut each sandwich into 4 triangles.

3 tablespoons unsalted butter, melted
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 pinch cayenne pepper
1 1/4 cups milk
2 large eggs
2/3 cup shredded cheddar cheese, preferable yellow
mustard
lettuce
6 slices ham
4 slices cheddar cheese
1 ripe tomatoes, thinly sliced

Steps:

  • Preheat the waffle iron.
  • In a large bowl, whisk together the flour, baking powder, salt and pepper to mix.
  • In another bowl, whisk together the milk and eggs until well blended.
  • Pour the liquid ingredients over the dry ingredients and stir with the whisk until just combined.
  • Fold in the shredded cheese and melted butter.
  • Lightly butter or spray the grids of your waffle iron, if needed.
  • Spoon out 1/2 of batter onto the grids, spreading it evenly.
  • Close the lid and bake until the waffle is golden and set.
  • Keep the waffles, in a single layer, on a cooling rack while you make the rest of the batch.
  • You can make sandwiches with these waffles when they are hot, warm or at room temperature.
  • Spread one side of each waffle with mustard.
  • Divide the remaining ingredients evenly between the remaining waffles.
  • Cut each sandwich into quarters.
