Envelop the makings of a ham and cheese sandwich in puff pastry to create a pretty tart elegant enough for a dinner party, but practical for lunch too.

1 1/2 tablespoons all-purpose flour, plus more for rolling
2 sheets frozen puff pastry, thawed
1 tablespoon unsalted butter
1 cup whole milk
Coarse salt and ground pepper
Ground nutmeg
6 ounces thinly sliced deli ham
1 cup grated Gruyere cheese
1 large egg, lightly beaten

Steps:

  • On a floured work surface, roll each sheet puff pastry to a 10-by-13-inch rectangle. Transfer to 2 parchment-lined baking sheets and refrigerate. In a small saucepan, melt butter over medium. Add flour; cook, stirring, until golden, 1 minute. Whisking constantly, add milk and simmer. Stir until thickened, 5 minutes. Season with salt, pepper, and pinch of nutmeg. Pour sauce into a bowl and let cool 30 minutes.
  • Preheat oven to 400 degrees, with rack in lower third. Arrange ham evenly on 1 pastry sheet, leaving a 3/4-inch border; top with cheese and sauce. Brush pastry border with egg; top with second pastry sheet. Fold bottom edges over top and press to seal. Brush top with egg and cut vents in tart. Bake until browned and puffed, 30 minutes. Serve warm or at room temperature.

1/2 cup French onion dip
1 tablespoon whole milk
1/4 teaspoon ground mustard
1/4 teaspoon grated orange zest
1/2 cup finely chopped fully cooked ham
1 tube (12 ounces) refrigerated buttermilk biscuits
1/4 teaspoon paprika

Steps:

  • In a small bowl, beat the cream cheese, onion dip, milk, mustard and orange zest until blended. Stir in the ham. , Split each biscuit into thirds; press into lightly greased miniature muffin cups. Spoon a scant tablespoonful of ham mixture into each cup; sprinkle with paprika. Bake at 375° for 12-17 minutes or until golden brown. Serve warm.

1/4 cup chopped onion
1 tablespoon butter
1 cup cubed fully cooked ham
1 tube (8 ounces) refrigerated crescent rolls
4 large eggs
1/2 cup whole milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Swiss cheese
1 tablespoon minced chives

Steps:

  • In a skillet, saute onion in butter until tender. Remove from the heat; stir in ham and set aside. Unroll crescent roll dough into one long rectangle. Press onto the bottom and 1 in. up the sides of a greased 13x9-in. baking dish; seal seams and perforations. Spread with reserved ham mixture. In a bowl, beat eggs, milk, salt and pepper; stir in cheese. Pour over ham. Sprinkle with chives. Bake at 375° for 23-28 minutes or until a knife inserted in center comes out clean. Refrigerate leftovers.

215g ready-rolled puff pastry sheet
3 tbsp sundried tomato paste
4 slices ham
125g ball mozzarella , drained and torn into chunks
50g roasted red pepper from a jar, cut into strips
25g pitted black olive , halved
large pinch dried oregano
handful rocket leaves

Steps:

  • Heat oven to 220C/200C fan/gas 7. Unroll the pastry onto a baking sheet and score a border 1cm from the edge. Prick inside the border with a fork and spread with the sundried tomato paste. Bake for 12-15 mins.
  • Squash down the puffed-up pastry inside the scored rim, then top with the ham, cheese, peppers and olives. Sprinkle with oregano and bake for 10-12 mins more until the base is nice and crisp. Scatter with rocket leaves and serve.

There's no need to make pastry for this tart, just buy a packet of filo. The leftovers are great for packed lunches too

6 large sheets filo pastry or 10 sheets if small
1 tbsp olive oil
100g sliced ham , chopped
1 bunch spring onions , sliced
2 eggs , lightly beaten
300g tub soft cheese , room temperature
2 large handfuls rocket leaves
50g blue cheese , crumbled
2 tbsp pine nuts

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Brush each filo sheet with a little oil and layer into a 20cm springform or loose-bottomed tin, overlapping each sheet at a different angle.
  • Mix together the ham, spring onions, eggs, soft cheese and rocket, then pour into the filo case. Sprinkle with blue cheese and pine nuts, then bake for 30 mins until just set. Cool slightly, slice and serve with a salad.

2/3 cup(s) milk
- 6 oz. cream cheese, softened
1 tablespoon(s) milk
1/4 teaspoon(s) dry mustard
1 teaspoon(s) chives
1 teaspoon(s) seasoned salt
1/4 teaspoon(s) garlic salt
1/2 cup(s) ham,finely chopped
1/2 cup(s) sour cream
- paprika

Steps:

  • Preheat oven to 350. Grease a muffin pan. CRUST: Mix baking mix and 2/3 C. milk together to form a soft dough. Knead several times on floured surface and roll thin. Using a 2 1/2' cutter, cut out 24 biscuits. Place each biscuit in prepared muffin cup. Mold biscuit to fit bottom and slightly up sides. Set aside. FILLING: Blend cream cheese, 1 T. milk, mustard, chives, seasoned salt and garlic salt. Fold in ham and sour cream. Spoon 1/2 T. filling into each cup. Sprinkle with paprika. Bake 20 to 25 min.

  • Let piecrusts stand at room temperature according to package directions. Preheat oven to 400 degrees F. Cut each piecrust into four equal sections (eight sections total). Press sections of piecrust onto the bottom and up the sides of eight, 4-inch fluted individual tart pans* with removable bottoms. Trim excess dough from top of pans.
  • Line each pastry shell with a double thickness of foil. Place pans on a baking sheet. Bake in preheated oven for 7 minutes. Remove foil. Bake 2 to 3 minutes more or until pastry is set and dry. Remove from oven. Reduce oven temperature to 325 degrees F.
  • In a medium bowl combine shredded Italian cheese blend, red sweet pepper, ham, green onion, flour, Italian seasoning, salt and pepper. Divide mixture evenly among pastry shells.
  • In the same bowl beat together eggs and half-and-half. Pour egg mixture over filling mixture in each pastry shell. Bake for 20 minutes or until filling is set. Let stand 5 minutes before serving. If desired, top with a fresh herb sprig. Makes 8 individual servings.
