SAUCE:
1/2 cup peach preserves
1 tablespoon horseradish
1 teaspoon wasabi powder
1/2 teaspoon ground mustard
1/4 teaspoon ground ginger
SCONES:
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons salt
2 cups finely chopped fully cooked ham
2 cups shredded cheddar cheese
2 cups heavy whipping cream
TOPPING:
1 large egg
1 tablespoon water
1 tablespoon poppy seeds

Steps:

  • For sauce, combine all ingredients. Refrigerate until serving. Preheat oven to 375°. , For scones, in a large bowl, whisk flour, baking powder and salt. Add ham and cheese; toss to combine. Stir in whipping cream just until moistened., Turn onto a lightly floured surface; knead gently 10 times. Pat dough into two 7-in. circles. Cut each into six wedges. Place wedges on a greased baking sheet. , For topping, whisk egg with water; brush over scones. Sprinkle with poppy seeds. Bake 40-45 minutes or until golden brown. Serve warm with peach sauce.,

2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon baking powder
1/2 teaspoon baking soda
1/3 cup light brown sugar, packed
1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
1 large egg, at room temperature, beaten
1/2 cup plain full-fat yogurt
2 tablespoons whole Milk
4 ounces cheddar cheese, shredded
4 ounces ham, diced
1/3 cup scallions, chopped

Steps:

  • Preheat oven to 400°(F). Line a large baking sheet with parchment paper; set aside.
  • In a large bowl add the flour, salt, pepper, baking powder, baking soda, and brown sugar; mix well to combine. Cut the butter into small cubes then quickly work it into the mixture (using your fingers) until it resembles a coarse meal. Set aside. In a small bowl whisk together the egg, yogurt, and milk, beating well to combine. Add the liquid mixture to dry and use a fork to stir everything together until just moistened.
  • Add in the cheese, ham, and scallions and gently fold them into dough with a spatula.
  • Pour the shaggy dough out onto a clean, floured work surface and shape the dough into an 8-inch circle. Cut the dough into 8 wedges and carefully transfer to the prepared sheet.
  • Bake for 18-20 minutes, or until the tops are lightly golden brown.
  • Cool for 5 minutes on the tray, then serve warm.

1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 cup unsalted butter, cut into cubes
3/4 cup buttermilk
1 cup shredded cheddar cheese
1/3 cup diced ham*
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside. In a large bowl, combine flour, sugar, baking powder, garlic powder and salt. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. Stir in buttermilk, cheese, ham and chives until a soft dough forms. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pill, roll the dough into an 8″ circle, about 1-inch thick, and cut into 8 wedges. Place scones onto the prepared baking sheet. Place into oven and bake for 18-20 minutes, or until firm to the touch and lightly browned. Serve warm.

2 1/2 cups all purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 tablespoon baking soda
1/2 teaspoon salt
1/2 teaspoon garlic powder

1 stick frozen butter
1 cup buttermilk
1/4 cup sour cream
1 cup cheddar cheese (shredded)
3/4 cup ham (diced)
1/4 cup pre-cooked bacon pieces
2 tablespoons chives (diced)

Steps:

  • To make these Ham and Cheese Savory Scones, start by adding the flour, sugar, baking powder, baking soda, salt, garlic and onion powder to a large mixing bowl and whisking to combine.
  • Grab your cold stick of frozen butter and grate your butter on a cheese grater or cut into small pieces and them move your butter back to the freezer. While your butter is chilling, chop your ham into bite sized pieces and dice your chives. Remove the butter from the freezer and add to the dry ingredients in the mixing bowl. Using a pastry cutter or a kitchen fork, work the butter into the flour mixture until you have no more large lumps of butter present.
  • Add in the buttermilk and sour cream and still to combine. Next add in the cheese, ham, bacon pieces and chives (save some of those yummy ingredients aside for topping!) and using a large spoon or spatula, stir to combine. Once mixed, transfer your scone dough to the refrigerator for 15 minutes. Once chilled, move your dough to a large floured work space or a large glass cutting board (my favorite!) Your dough should be a bit wet and sticky so flour your hands. Shape your dough into a large circle about 10-12 inches wide and about 1 inch thick.
  • Using a sharp knife, cut into 8-10 wedges and then using a spatcula or pie server, scoop up the scone wedges and transfer to a parchment lined baking pan and sprinkle with your reserved toppings. Bake for 20 minutes in a preheated 425 degree oven. When done, remove from oven and serve immediately.

  • Sift the flour, baking powder, salt and sugar in to a large mixing bowl. Add cold cubed butter and rub with your hands to break in to tiny bits. If it's too warm in your kitchen, like mine was on a freak 85° April morning, let the bowl sit in the freezer for a while to prevent the butter from melting. Add ham, scallions, and half the cheese and mix in with flour.
  • Make a well in the center of the flour and add all the milk and cream. Use a fork to mix the milk and flour until it comes together in larger clumps.
  • Dump dough on to a lightly floured surface and knead for a minute to fully combine all ingredients. Form in to a ball and lightly dust with flour. Using a rolling pin, shape the dough in to a flat disc about 1 inch tall.
