Steps:
- Preheat oven to 180C/350F. Spray 2 baking trays with oil.
- Let the puff pastry defrost then cut into 9 x 8cm/3.5" squares.
- Spread about 1/2 tsp of mustard diagonally across ta square.
- Top with ham and sprinkle with cheese.
- Dab one corner with egg yolk using a brush. Fold the opposite corner over the filling first, then fold the corner with the egg yolk over it and press down to bond.
- Place on baking tray. Repeat with remaining square.
- Brush the top with egg. Bake for 15 minutes or until deep golden brown and puffed.
- Serve warm!

- Toss bread, ham and cheese; divide between 2 greased 13x9-in. baking dishes. In a skillet, saute onion in butter until tender; transfer to a bowl. Add eggs, milk and mustard; mix well. Pour over bread mixture. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 55-65 minutes or until a knife inserted in the center comes out clean. Serve immediately.

- Preheat the oven to 425 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.

- 1. 1.Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork or whisk. 2.Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 16x12-inch rectangle. With the short side facing you, layer the ham and turkey on the bottom half of the pastry to within 1 inch of the edge. Sprinkle with the cheese. Starting at the short side, roll up like a jelly roll. Place seam-side down onto a baking sheet. Tuck the ends under to seal. - Lay a large piece of plastic wrap on your counter (I pressed two long sheets together at the edges to create a single larger sheet). Unfold the first sheet of puff pastry in the center of the plastic, then roll it into a 10x12-inch rectangle. Spread with 1 1/2 tablespoons mustard, leaving a 1/2-inch border on all sides. Lay 6 ham slices on top, overlapping as needed. Sprinkle with 1 cup cheese.
- Starting at the long (12-inch) edge, roll the puff pastry into a log. Trim the ends so that they are even, then tightly wrap the log with the plastic wrap. Place in the refrigerator for 20 minutes. Repeat with the second sheet of puff pastry and remaining mustard, ham, and cheese. Preheat your oven to 375 degrees F and line two baking sheets with parchment paper or silicone baking mats.
- Once the log has chilled, using a sharp, serrated knife, carefully cut each log into 1/2-inch-wide slices. (If each log is 12 inches, you will get 24 rolls from each one). Arrange the rolls 1 inch apart on the prepared baking sheets. Bake until the puff pastry is light golden brown and the cheese is hot and bubbly, about 18 minutes. - Preheat your oven to 450 F.
- To make the egg wash, lightly beat an egg with 1 tbsp. of water. Set aside.
- Place a piece of parchment paper onto your work surface and dust lightly with flour.
- Lay one sheet of puff pastry on top of the paper.
- Using the back of a teaspoon, brush the dough with mustard leaving a 1-inch border around the edge. Use a ruler if necessary.
- Staying within the border, add the sliced ham in overlapping layers.
- Add the cheese.
- Brush the border with some of the egg wash to create a seal.
- Place the second sheet of puff pastry on top of the filled pastry lining up the edges.
- Using a sharp knife, trim the dough so that the edges line up and the square is even. It's just like cutting the crust off of a sandwich. Make sure to cut the dough in a swift downward motion (think paper slicer). If you drag your knife, it will not rise properly. Press down lightly.
- Brush the top with more egg wash and cut a few slits in the top to allow steam to escape.
- Transfer the dough to a baking sheet by lifting up the parchment paper.
- Bake for 20 to 25 minutes, until puffed and golden brown.
- Allow to cool for a few minutes and cut into squares (about 12-16 depending how large you want them).
- Serve hot.
CHICKEN, HAM AND SWISS CHEESE BAKED IN PUFF PASTRY
This recipe if for 4 chicken pastries, you can double the recipe. I always add in some fresh well browned sauteed mushrooms on top of the chicken breast before sealing the pastry, but that is optional.

- Lightly grease an 11 x 7-inch baking dish (if you are making 8 chicken pastries use a 13 x 9-inch baking dish).
- In a skillet melt the butter with oil.
- Season the chicken with salt and pepper, and cook until browned on both sides (about 8 minutes per side) then refrigerate for 20 minutes.
- Set oven to 400 degrees.
