- Prepare the bacon first. This can be done on the stove top in a frying pan or in the oven. For the stove-top, add half the bacon slices into a large frying pan and heat over medium-high heat. Bacon is best when added to a cold pan. Fry the bacon until golden and crispy and remove onto paper towels to absorb any excess oil. Prepare the remaining slices. If using the oven, line a large baking tray with foil and preheat the oven to 400F. Place the bacon onto the foil and bake for 15, until golden and crispy.
- While the bacon is cooking, slice the croissant buns in half lengthwise using a serrated knife. Toast the croissants using a toaster, toaster oven or under the broiler in the oven. The bread needs to be golden and crispy. Once toasted, spread a generous amount of mayonnaise and chipotle aioli spread, if desired (recipe in blog post).
- For the eggs, preheat a large non-stick frying pan and add a drizzle of cooking oil. Fry the eggs to your desired level of doneness - runny yolk or well done both work well for this recipe.
- Thinly slice the avocado and use 1/4 for each sandwich. Put the sandwich together with 1 slice cheese, 2 slices ham, 2 slices bacon and 1 egg for each sandwich; season with salt and pepper to taste. For easier serving, the sandwiches can be cut in half.

- Once eggs begin to look mostly cooked, stir in shredded mozzarella cheese until melted and combined, then finish cooking eggs to your liking. Remove from heat.
- Top ham and cheese with a large scoop of scrambled eggs. Top with second half of the croissant buns. Bake in preheated oven for 10 minutes or until cheddar cheese is melty and croissants are toasted.

- In a large bowl, whisk the flour with the sugar, salt, baking powder and baking soda. Pinch the butter into the dry ingredients to form pea-size clumps. Stir in the buttermilk, scallions and the beaten egg just until a dry, shaggy dough forms. Turn the dough out onto a lightly floured work surface and knead gently just until it comes together. Pat the dough out to a 1/2 -inch-thick rectangle. Using a 4-inch round cookie cutter, stamp out 6 biscuits. Gently press the scraps together and stamp out 2 more biscuits. Arrange the biscuits on a parchment paper–lined baking sheet and freeze for 30 minutes.
- Preheat the oven to 375°. Bake the biscuits for about 20 minutes, until golden brown. Let cool slightly, then split in half, laying the halves cut side up on the baking sheet. Cover each biscuit half with 1 cheddar slice and 1 ham slice. Bake until the cheese is melted, about 8 minutes.
- In a large nonstick skillet, heat the canola oil. Crack 4 eggs into the skillet and cook sunny side up over moderately high heat until the whites are set and the yolks are runny, 2 to 3 minutes. Set the fried eggs on 4 of the biscuit bottoms and keep warm while you fry the remaining eggs. Close the sandwiches and serve immediately.
