HAM & APPLE FILLED PUFFED PANCAKE
Oven pancakes are a great brunch idea or can be served as a filling weeknight meal.

Steps:
- Heat oven to 425°F.
- Place 2 tablespoons butter into 9-inch ceramic pie plate or metal pie pan; place in oven 4-5 minutes or until melted and pie plate is hot. Spread melted butter over bottom of pie plate.
- Combine flour, milk and eggs in bowl; beat with whisk until well mixed. Carefully pour batter into hot pie plate. Bake 14-17 minutes or until puffed and light golden brown.
- Melt remaining 2 tablespoons butter in nonstick skillet over medium heat. Add apples and brown sugar. Cook, stirring occasionally, 5-7 minutes or until apples are tender. Add ham; cook 1-2 minutes or until ham is heated through.
- Spoon apple mixture into center of hot pancake; sprinkle with cheese. Cut into wedges. Serve immediately.

- Heat pie filling until hot; keep warm.
- Heat griddle or skillet over medium heat or to 375°. Grease griddle with margarine if necessary. Beat baking mix, milk and eggs with wire whisk or hand beater in large bowl until smooth. Fold in ham, cheese and onion.
- Pour batter by scant 1/4 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown. Serve with warm pie filling; sprinkle with cinnamon.

BAKED HAM AND APPLES
WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. - Preheat oven to 400 degrees F (200 degrees C).
- Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.
- Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.
