  • Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
  • Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
  • Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.
  • Spring Herb Mix 1 cup panko (Japanese breadcrumbs), 3 tablespoons each chopped parsley and chives, and the grated zest of 1 lemon.
  • Cornmeal-Thyme Crush 1 cup cornbread stuffing mix; toss with 2 tablespoons chopped thyme, 1 1/2 teaspoons ground coriander and 1/2 cup cornmeal.
  • Spicy Sourdough Grind 3 cups cubed sourdough bread in a food processor; toss with 1 tablespoon chili powder and 1 bunch chopped scallions.

Awesome Baked Ham image

I love this recipe because it is so easy and it calls for hardly any ingredients, and I always have these ingredients in my pantry. This recipe came from a good friend's mother, who was always asked to bake the ham for get-togethers and family dinners. Now I get those requests. People who ordinarily aren't too fond of ham rave over this one. After I carve, I spoon a little of the glaze over the meat in the platter - yummmm!

15 lbs whole bone-in ham (I prefer Cooks SuperTrim brand)
1 lb brown sugar
1/2 cup yellow mustard
aluminum foil

Steps:

  • In a medium size mixing bowl, mix yellow mustard and brown sugar until you have a thick"paste".
  • Take all wrappers off of ham and trim away excess fat.
  • Line baking pan (I spray with Pam in case some of the brown sugar mixture escapes, clean up is easier) with Aluminum foil.
  • Place ham on foil and spread brown sugar/mustard paste on top.
  • Fold and seal foil.
  • Do not open again until ham is done.
  • Bake at 350° for 4 hours.
  • Let set for about 1 hr then carve.
  • One of the best tasting hams you will ever have!

8-10 pound (4-5 kg) bone-in fully cooked ham,
1/2 cup water
1/2 cup unsalted butter, (reduce fat or full fat)
1 cup brown sugar
1/2 cup honey
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
4 cloves garlic, (smashed)

Steps:

  • Preheat the oven to 300°F | 150°C and arrange a rack in the lower third. Remove any plastic packaging or netting from the ham. Trim away the rind and discard. Set the ham aside to rest at room temperature for 1-2 hours.
  • Line a baking tray or dish with several sheets of aluminium foil or parchment paper if you prefer (it will make cleanup a lot easier).
  • Remove the rind or skin of the ham (refer to steps in post), ensuring you leave the fat on. Using a sharp knife score a 1-inch-wide diamond pattern (don't cut more than 1/4 inch deep) over the entire ham. Place the ham in the baking tray; pour 1/3 cup of water into the base of the pan and cover the ham with two pieces of foil or parchment paper and bake for 30 minutes.
  • Meanwhile, heat the butter in a small pot or saucepan over medium heat until golden browned. Add in the brown sugar, honey, mustard, cinnamon and cloves, stirring to mix together well until the brown sugar has completely dissolved, (about 2 minutes).
  • Reduce heat to low and add in the garlic. Allow it to become fragrant, cooking for a further minute or two until the glaze just begins to simmer, then set it aside and let cool to lukewarm (the glaze should be the consistency of room-temperature honey).
  • After 30 minutes baking time, carefully remove the ham from the oven and increase the oven temperature to 425°F | 220°C. Discard the foil or parchment paper and pour 1/3 of the glaze all over the ham, brushing in between the cuts to evenly cover. Return to the oven and bake uncovered for 15 minutes.
  • Remove from the oven, brush with another third of the glaze and some of the pan juices, and repeat again after 15 minutes more minutes of baking until a dark golden-brown crust has formed, (about 30 minutes total). For added depth of flavour, mix some of the ham pan juices together with the glaze in the pot which will help keep it runny enough for brushing. If your crust is still pink after there suggested baking time, turn on your broiler (or oven grill), and allow it to broil for 2-5 minutes, while keeping an eye on it so it doesn't burn from the sugar.
  • Let the ham rest 10-20 minutes before slicing.

For the ham:
One half ready-to-eat, cooked ham, bone-in, shank end or butt end, about 9 to 11 pounds
For the Sweet Hot Honey Mustard Glaze:
3 tablespoons sweet hot honey mustard (or brown mustard with honey)
2 tablespoons brown sugar
About 50 cloves
For the Honey Thyme Glaze:
3 tablespoons melted unsalted butter
2 tablespoons chopped fresh thyme (or 2 teaspoons dry)
1/4 cup cider vinegar
1/4 cup honey
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Let the ham come close to room temp: Remove the ham from the refrigerator (still wrapped) a couple of hours before you intend to cook it so that it can get closer to room temperature. This will help it warm more evenly.
  • Preheat the oven: Preheat the oven to 325°F.
  • Prepare the glaze: If using the sweet honey mustard glaze: Mix the mustard with the brown sugar in a small bowl. If using the honey thyme glaze: Mix thyme in with the hot melted butter and let sit for a few minutes. In a small saucepan on high heat, let the cider vinegar reduce down from 1/4 cup to 1 tablespoon, and remove from heat. Whisk in the butter and thyme. Add the honey, brown sugar, and Worcestershire sauce.

1 fresh pork roast
Sea salt
Cane sugar
Freshly ground black pepper
Kitchen scale
Large bowl

Steps:

  • Dry the ham with a rag to absorb any extra moisture. Weigh the roast and write down this number.
  • For every pound of meat, weigh out 15 grams of sea salt and 2.25 grams of sugar. My roast was 7 pounds, so I used a total of 105 grams of salt and 15.75 grams of sugar. And yes, you want this to be precise (hence the kitchen scale). To this salt and sugar, you can add whatever spices you'd like - rosemary, all spice, cloves, thyme, etc. I chose to keep mine simple and added only a small bit of freshly ground black pepper.
  • Combine the spices in a bowl and use your fingers to mix them together.
  • Rub the meat with the salt/sugar mixture. Get into every crevasse that you can find. Really work it in there. If you have a bone-in roast, pay special attention to that area. Make sure that the roast is coated.
  • Place the roast in a large bowl and set it in the refrigerator. You'll leave it to cure here for a few days. Measure the diameter of the roast and add '3' to that to figure out how many days it will cure. My roast was 7 inches across. 7+3= 10 days total for curing.
  • After the proper curing time, remove the ham. At this point, the ham can be baked and glazed with whatever you'd like (honey? herbs? molasses?) or smoked. We chose to smoke ours. Three hours over some apple wood in a simple homemade smoker worked just fine. We used a small grill and covered a make-shift teepee around it with canvas. There are a million setup options for smoking: I'll let you get creative.
  • If you'd prefer, roughly halfway through the smoking process, the skin of the ham can be removed (if your roast came with skin, that is). Some prefer to leave it on. Some take it off. That's totally up to you.
  • The ham should be smoked and cooked to an internal temperature of roughly 170-180 degrees (use a meat thermometer... you'll want to make sure that it's cooked thoroughly.)
  • If you'd rather not smoke your ham, the ham can be baked in a 350 degree oven until the same internal temperature is achieved.

1 Tbsp. brown sugar
1 Tbsp. fresh lemon juice
Freshly ground black pepper to taste
Pinch ground cloves

Steps:

  • Preheat the oven to 325 degrees F. Score the top of the ham in a diamond pattern; making shallow cuts about 1" apart. Place the ham in a shallow, parchment paper-lined baking pan. Bake the ham for 25 minutes. While the ham bakes, make a glaze by combining the remaining ingredients in a bowl. After the ham has baked for 25 minutes, brush it with the glaze. Bake for 25 minutes more. Rest the ham 5 minutes, before slicing and serving. Note: 1/4 hams (a whole, boneless ham cut into 4 pieces) are available in the meat department.
