Haluski (Polish fried cabbage & noodles) image

This authentic Haluski recipe features the traditional combination of pan fried cabbage leaves, pasta noodles, and white onion all deliciously caramelized in plenty of butter

Provided by Meaghan @ 4 Sons R Us

Categories     Dinner     Main Course     Pasta

Time 50m

Number Of Ingredients 6

8 oz wide egg noodles (uncooked)
8 tbsp butter
1 small white onion (roughly chopped)
1/2 large head of cabbage
salt & pepper (to taste)
crisp, crumbled bacon (optional)

Steps:

  • Fill a large pot half way full with water. Lightly salt it, and over high heat bring the water to a boil.
  • Once boiling, pour in the egg noodles, stir, and cook according to the package directions. Transfer the noodles to a colander when done, and drain away all excess water.
  • While the noodles are cooking, get started on the cabbage by adding 6 tablespoons of butter to a large Dutch oven set over medium heat.
  • Once the butter's melted, stir in the cabbage and onion. Cook the mixture, stirring occasionally, for 15-20 minutes or until the cabbage has browned/caramelized and is tender. Salt, to taste.
  • Melt the last two tablespoons of butter in the pot, and add the cooked pasta to the pot, stirring everything to coat. Cook just long enough for the noodles to heat through.
  • If using, stir in the bacon and season the haluski with freshly grated black pepper, to taste.
  • Serve immediately, and enjoy!

SLOVAK HALUSKI

Slovak Haluski image

Often used during Lent, this meatless recipe has been passed down generation to generation in my family. This recipe makes a generous amount, which is great because Haluski tastes even better the second day. My Bubba (grandmother) made potato dumpling noodles to go with her cabbage. Also great served with any fish!

HALUSKI

Haluski image

About 17 years ago or so I ate haluski for the first time and loved it and have been making it ever since then. It is cost effective if you have a family because the ingredients are cheap and it goes a long way. It is also very easy to make so it is not time consuming.

Provided by Sandra Ann Marie Harvey

Categories     Pasta

Time 1h50m

Number Of Ingredients 6

2 small heads of green cabbage
16 oz egg noodles, uncooked
1 large onion
2 stick butter
2 tsp black pepper
1 tsp salt

Steps:

  • 1. Chop the cabbage into small pieces and add to stock pot. Add chopped onion and 1 stick of butter and saute with lid on, stirring in between until the cabbage and onion is soft.
  • 2. In another pot, boil water and add 1 tbsp of vegetable oil so noodles won't stick. Add egg noodles and boil according to package directions. You can use bow tie or elbow noodles instead of egg noodles. When done, drain and rinse in cold water and drain again.
  • 3. Add cooked noodles to pot of sauteed cabbage and onions and add another stick of butter. Add pepper and salr and cook on low heat stirring in between until the butter is melted and it is all mixed well together and hot.
  • 4. If you want to you can also add cubed up ham or kielbasa. Both taste very good in the haluski.

SLOVAK HALUSKY DUMPLINGS

Slovak Halusky Dumplings image

Halusky are Slovak boiled dumplings made with grated raw potatoes, flour, and salt. Whip them up for a tasty side dish or main course.

Provided by Barbara Rolek

Categories     Dinner     Entree     Lunch     Side Dish

Time 45m

Yield 6

Number Of Ingredients 6

1 pound bacon (diced)
1 large chopped onion
5 large russet potatoes (peeled and chopped)
2 teaspoons salt
2 1/2 to 3 cups all-purpose flour
Garnish: chopped chives

Steps:

  • Gather the ingredients.
  • Cook bacon cubes in a large skillet over medium-high heat, until browned. If using onion, add it to skillet and fry mixture until bacon is well cooked and onions are transparent, or about 5 to 7 minutes. Set aside.
  • Bring a large pot of salted water to a boil. Meanwhile, add chopped potatoes in a food processor and process until completely puréed.
  • Add salt and flour into potato mixture a little at a time, processing after each addition. The batter is done when a spoon will stick straight up in the dough.
  • Place a third of the thick batter onto a cutting board. Using a knife, scrape about 15 small bits of dough into boiling water.
  • When they all float to the top, remove with a slotted spoon and place in a large colander to drain. Repeat process with all remaining batter on board, and remaining two thirds in food processor.
  • Once all dumplings are cooked, add into large skillet with bacon and combine well. Serve immediately and garnish with chives, if using.
