This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

1 pound bacon strips, cooked and crumbled

8 large eggs
2 cups whole milk
Paprika

Steps:

  • In a large bowl, combine the hash browns, bacon, 1/2 cup cheese and salt. Spoon into a greased 13x9-in. baking dish. In another large bowl, beat eggs and milk until blended; pour over hash brown mixture. Sprinkle with paprika. , Bake, uncovered, at 350° until a knife inserted in center comes out clean, 45-50 minutes. Sprinkle with remaining cheese.

2 lbs hash brown potatoes (in refrigerator section at grocery store)
2 (10 1/2 ounce) cans cream of mushroom soup
3 cups finely shredded sharp cheddar cheese
1/2 cup finely chopped sweet onion
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Spray a 9 x 13 dish with oil.
  • Set aside 1 cup of shredded cheese.
  • In a large bowl, mix all ingredients and put into baking dish.
  • Top with remaining cheese and bake 45 minutes to 1 hour, depending on how golden and bubbly you like your cheese.

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, mix potatoes, ham and 1 1/2 cups of the cheese. Spread in baking dish. In same bowl, mix sour cream, milk and seasoned salt with wire whisk until well blended. Spoon over potato mixture; stir to mix. Cover baking dish with foil.

2 cups ( 480 g) sour cream
½ cup onion, (chopped)
2 cups (230 g) cheddar cheese, (grated (see notes))
1 teaspoon salt
½ teaspoon pepper

Steps:

  • Preheat oven to 350º F (180º C). Spray casserole or baking dish (2-quart) with cooking spray.
  • In a large bowl, combine all ingredients and stir together until well combined. Pour into prepared pan or dish. Cover baking dish with aluminum foil.
  • Bake for 30 minutes. Then remove the foil and bake for 10-15 more minutes until the top is golden brown.
  • Serve with your favorite breakfast dishes, such as pancakes, waffles, or french toasts.

1 cup (250ml) sour cream
1 can condensed cream of mushroom soup
1/2 cup cream (10%)
1/3 cup melted butter
2 cups grated cheddar cheese
1 medium onion (, finely chopped)
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 cup crisp fried onions (, Frenchs or other brand)

Steps:

  • Preheat oven to 375F.
  • In a large bowl, mix together all ingredients except the crop fried onions. Spread in a 13x9 baking dish.
  • Bake in oven for 75 minutes.
  • With about 10 minutes left of cooking time, sprinkle the crisp fried onions all over the top of the hash brown casserole. Finish baking the casserole.
  • Remove from the oven and let rest for 5-10 minutes.
  • Serve

6 cups shredded raw red potatoes
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
1 (10 1/2 ounce) can campbell's cream of celery soup
1 pint fat free sour cream
4 ounces cream cheese
1 cup grated cheddar cheese
1/2 cup onion
1 garlic clove
1/2 teaspoon black pepper
2 teaspoons olive oil
3 tablespoons unsalted butter
24 Ritz crackers
nonstick butter-flavored cooking spray

Steps:

  • In a small skillet, warm your butter and olive oil add and saute onion (I usually dice very fine) and crush your garlic. Cook until soft.
  • In a large saucepan, add soups, cream cheese, sour cream.
  • Let everything simmer on very low heat, until everything is melted together.
  • Mix in your onion mixture.
  • Add black pepper.
  • Shred 6 red potatoes (or as a time saver use about 1 1/2 bags pre-shredded potatoes).
  • In a 9x13 pan, spray pan with nonstick butter spray.
  • Layer your potato, then your soup mixture, then grated cheese until finished.
  • Top with crushed Ritz crackers.
  • Cover with foil.
  • bake 1 hour, or until potatoes are soft. Sometimes with potatoes they need longer. So be sure to check and possibly if you can, allow up to 1 1/2 hrs total cook time.
