- For the cake: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9 by 5-inch loaf pan. Set aside.
- In a medium bowl, combine the flour, baking powder, salt, cocoa powder, cinnamon, ginger, nutmeg, and allspice.
- In a large bowl, beat the sugars, oil, applesauce, eggs, and vanilla extract to blend. Add the dry ingredients and stir until just blended. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool the cake for 10 minutes. Unmold the cake and place on a wire rack to cool completely. Dust with powdered sugar and cut into slices for serving.

- Preheat oven to 350°F. Spray a 9x13-inch baking pan with baking spray.
- In a medium bowl, thoroughly combine cake mix, canned pumpkin and water, and stir until smooth. Pour into prepared pan and spread evenly to the edges.
- Bake cake in center of oven 24 to 28 minutes, until toothpick inserted in center comes out clean. Let cool completely. Sprinkle with powdered sugar, if desired, before slicing and serving.

- 1. Preheat the oven to 350°F. Lightly oil a 13x9x2-inch baking pan.
- 2. Combine the molasses, butter, and coffee in a medium-size saucepan, and bring to a boil over medium-high heat, stirring occasionally. As soon as it boils, remove from the heat. Transfer the mixture to a large bowl, or the bowl of an electric mixer, and let cool to lukewarm.
- 3. Sift the flour, salt, spices, and baking soda together onto a large piece of waxed paper.
- 4. Core, peel, and halve the apples, then slice them into 1/4-inch thick slices. Line the prepared pan with the apples slices, slightly overlapping them. Sprinkle them with the brown sugar.
- 5. Whisk the eggs into the molasses mixture. Add the dry ingredients and mix quickly but thoroughly. Then add the sour cream, mixing just until it is incorporated. Fold in the chocolate chips, and then pour the cake batter over the apple slices.
- 6. Bake in the center of the oven until the cake is mounded in the center and your finger leaves a slight indentation when you touch it, 50-55 minutes. Remove the pan from the oven and transfer it to a wire rack to cool to lukewarm before serving. You may also serve it at room temperature, but it is best lukewarm.
- 7. To serve, cut the cake in pieces and turn them out of the pan upside down, so the apple slices are on top, or turn the entire cake out upside down onto a large serving platter and serve.

Steps:
- Preheat oven to 350°F. Grease and flour 3-6 inch round cake pans. Set aside.
- In a medium size bowl whisk the flour, baking powder, baking soda, salt, cinnamon, allspice, cloves, and nutmeg. Set aside.
- Add the butter, brown sugar, and granulated sugar to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed for 2 minutes. Add the eggs. Mix until well combined, about 1-2 minutes.
- Alternate adding the dry ingredients and the buttermilk, starting and ending with the dry ingredients.
- Once all of the dry ingredients have been added, mix on low speed until JUST combined!
- Divide the batter evenly amongst the 3 cake pans. Bake for 25-30 minutes. (Mine baked for 27 minutes).
- Remove from the oven and allow the cake to cool in the pans for 10 minutes.
- After 10 minutes, turn the cakes out onto a wire rack to cool until a bit warmer than room temperature. *
- Frost the cake. Enjoy!

- Make cake: Preheat oven to 350°F. Lightly grease 2 (8- or 9-inch) round cake pans; line with parchment, grease again and dust with flour.
