HALLOWEEN FONDANT GHOST CUPCAKES
I made these little fondant ghosts last year for Halloween as my creepy dessert and they were so easy and quick to decorate that I will make them every year from now on.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
- Sift 1 cup plus 2 tablespoons flour, cocoa powder, baking soda, and salt together in a bowl.
- Combine sugar and butter in a large bowl; beat with an electric mixer until light and fluffy. Beat in egg and vanilla extract. Mix in flour mixture alternately with milk. Beat until batter is just blended.
- Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted into the center comes out clean, 16 to 20 minutes. Remove from oven and cool on a wire rack for 15 minutes. Remove cupcakes from tin and cool completely, about 2 hours.
- Frost each cupcake with a thin layer of white vanilla frosting. Place 1 marshmallow half, cut-side up, in the center of each cupcake.
- Dust a work surface with confectioners' sugar. Pinch off walnut-sized pieces of white fondant; roll into thin circles that are slightly bigger than the cupcakes. Drape over the marshmallows so they look like ghosts. Poke 2 holes near the top for the eyes. Stuff 1 raisin half into each hole.

Steps:
- Divide vanilla frosting between 2 bowls. Add orange food coloring to 1 bowl and black food coloring to the other bowl; stir well until evenly incorporated.
- Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes.
- Dip pretzel rods in melted chocolate and press a marshmallow onto each one.
- Frost half of the marshmallows with orange frosting. Frost half of the marshmallows with black frosting.
- Pipe vines and leaves on the orange marshmallows with green icing to make them look like pumpkins. Pipe eyes and mouths on the black marshmallow with white icing to make them look like ghosts.

- In microwavable safe bowl or coffee mug, microwave one color of candy melts and 1 Tablespoon shortening uncovered on Medium (50%) for 1 minute, stir. Continue microwaving for 15-second intervals, until melted; stirring in between until smooth. If candy is too thick, add a little more shortening.
- Dip the tip of 1 lollipop stick about 1/2 inch into any color of the melted candy and insert stick into 1 marshmallow about halfway, this will act like glue holding the marshmallow onto the lollipop stick. Repeat for each pop. Allow candy to harden, you can speed this up by placing them in the refrigerator about 3-5 minutes.
- Once the marshmallow is secured to the stick, dip the marshmallow into the melted candy, covering the marshmallow completely, tap off excess.
