Time 1h50m

Yield 12

Number Of Ingredients 10

4 pounds lean ground beef
3 cups Italian bread crumbs
4 eggs
1 large onion, chopped
¼ cup spaghetti sauce
¼ cup grated Parmesan cheese
1 pinch garlic salt, or to taste
¼ cup spaghetti sauce
1 tablespoon Italian seasoning
3 drops orange food coloring, or as needed

  • Bake in the preheated oven until inside is no longer pink, 1 1/2 to 2 hours.

GREAT PUMPKIN MEATLOAF

Great Pumpkin Meatloaf image

Trick or Treat supper baked in a pumpkin. It is amazing how much less candy is gobbled up en route home on Halloween night if the kids start out with tummies happily full of nutritious food. To capture goblins attention before they go on their appointed rounds, serve Great Pumpkin Meatloaf. This fascinating jack-o'-lantern with a meatloaf inside will intrigue goblins, both young and old. Cut the jack-o'-lanterns in wedges and serve as a meat and vegetable in one. To accentuate the bland flavor of the pumpkin, the inside is spread with honey mustard before filling. The meatloaf mixture, enhanced with the zesty flavor of Worcestershire sauce is baked right inside the pumpkin. Complete this nourishing supper with oven roasted potatoes, celery sticks, cucumber slices, whole wheat dinner rolls and milk, plus a crispy apple for desert. This is not an "adult" dinner, but a pleasurable and fun meal for all that are young at heart. Almost any meatloaf recipe can be cooked in a pumpkin, so feel free to experiment. It's all about the presentation! Cooking times may vary depending on the size of the pumpkin and the meatloaf recipe used. (WW 6 points)

Time 1h15m

1 (6 -7 inch) sugar baby pumpkin
salt and pepper
3 tablespoons honey mustard (or prepared yellow mustard and 2 tablespoons brown sugar)
1 egg
2 tablespoons Worcestershire sauce
1/2 teaspoon seasoning salt
1 1/2 lbs ground beef
1/2 cup dry Italian breadcrumbs

  • Remove seeds and stringy insides.

  • Combine egg, Worcestershire sauce, 1/2 teaspoon seasoned salt, ground beef and bread crumbs; mix well.

Categories     100+ Everyday Cooking Recipes

Time 1h

Yield 10

Number Of Ingredients 11

1 ½ pounds ground beef
1 onion, chopped
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon garlic powder
1 (15 ounce) can tomato sauce
1 cup shredded carrot
1 (6 ounce) can chopped black olives, drained
1 (12 ounce) can refrigerated biscuit dough
10 slices American cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 10 muffin cups.
  • Place ground beef and onion in a large skillet over medium heat; cook and stir until the meat is browned and crumbly, about 10 minutes. Drain excess grease. Stir in the chili powder, cumin, salt, garlic powder, tomato sauce, carrot, and olives, and bring the mixture to a simmer. Cover the skillet, and cook until thickened and the carrot is tender, about 20 minutes. Stir occasionally.
  • Working on a floured surface, separate each biscuit, and roll out into 4-inch circles. Press the circles of biscuit dough into prepared muffin cups; bake in the preheated oven until the cups are lightly browned, about 10 minutes. Remove the biscuit cups from the pan, and place onto a baking sheet.
  • Cut the 10 slices of American cheese into 3-inch circles, and cut jack-o'-lantern faces into the circles with a sharp paring knife. Chop remnants of cheese, and mix into the meat mixture. Fill the biscuit cups with meat mixture, and place a cheese face on top of each.
  • Return to the oven, and bake just until cheese begins to soften, 3 to 5 minutes.

Jack-o'-Lantern Stuffed Peppers image

Provided by Chef John

Categories     Stuffed Bell Peppers

Time 1h25m

Yield 4

Number Of Ingredients 14

1 teaspoon olive oil
4 large orange bell peppers
1 pound ground beef
2 teaspoons kosher salt
½ teaspoon ground black pepper
3 pinches cayenne pepper, or to taste
1 teaspoon Worcestershire Sauce
3 cloves garlic, minced
⅓ cup thinly sliced green onions
2 tablespoons salted butter, melted
2 tablespoons ketchup
1 cup grated sharp Cheddar cheese
1 cup cooked rice
2 cups seasoned tomato sauce, warmed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Oil a baking dish with olive oil.
  • Use a small knife to cut eyes, nose, and mouth into the flattest side of each pepper, just like a jack-o'-lantern. Cut around the seedpods and remove the tops, trimming and discarding any seeds from under the stems. Trim the white membrane from the inside of each pepper and shake out any seeds. Place in the prepared baking dish.
  • Mix together ground beef, salt, pepper, cayenne, Worcestershire sauce, garlic, green onions, melted butter, ketchup, Cheddar cheese, and rice in a bowl until well combined.
  • Stuff mixture evenly into peppers and cover with the pepper tops. Wrap the baking dish loosely with foil and place on a sheet pan.
  • Bake in the upper center of the preheated oven for 1 hour. Remove the foil and continue baking until peppers are tender and ground beef is cooked through, 10 to 15 more minutes.
  • Place stuffed peppers on a few tablespoons of warm tomato sauce. Serve immediately with more sauce on the side.

Time 2h

Number Of Ingredients 13

1 small pie pumpkin, cleaned, will fit inside a 12", deep, dutch oven
1 1/2 lb ground beef
vegetable oil
1/2 lb italian saausage
1 medium yellow onion, chopped
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper
1 Tbsp gaarlic and onion mrs. dash
2 1/2 c cherios or shredded wheat (unsweetened)
2 eggs
1 can(s) cream of celery soup
1/4 tsp granulated garlic
1 can(s) italian seasoned tomato sauce

Steps:

  • 1. Mix all ingredients in a bowl, except tomato sauce. Warm and oil a 12", deep, Dutch oven.
  • 2. Fill pumpkin with meat mixture and place filled pumpkin inside oven. Pour about 1 ½ c. water in oven and cover.
  • 3. Bake about 1 to 1 ½ hours at 350 degrees F. until done. You can smell the flavors when done.
  • 4. ***Judging temperature is an important skill that needs to be practiced when cooking with a Dutch oven. First off, use only name brands of charcoal. Once you find a brand that you like, stick with that brand. That way you become familiar with how it burns, how long the coals last, etc. When cooking in a Dutch oven, use the 2/3rds rule. The 2/3rds rule is not based on fractions of any number of coals. But, is short hand for figuring out how many coals to use for a 325o to 350o oven. Take the diameter of the oven for the bottom coals and subtract 2. So, if you have a 12" oven, take the diameter (12"), subtract 2 (10 coals). That's the 2 in the 2/3rds rule. For figuring the number of coals for the top heat, again take the diameter of the oven and add 3. So, if you have a 12" oven, take the diameter (12") and add 3 (15 coals). That's the 3 in the 2/3rds rule. This rule works for any sized oven from 8" to 16". To increase or decrease the temperature add or subtract 2 briquettes for a change of 25°. It is however, very important to know that coals should be placed around the circumference of the bottom and top of the Dutch oven so there are no hot spots and burning of food is kept to a minimum.

  • Preheat oven to 350 degrees F. In a large bowl, mix beef, onions, celery, salt, garlic powder, pepper (if using) and 2 TBSP pumpkin purée.
  • Firmly press equal portions of meat mixture into the six cups of a jack-o'-lantern silicone mold or silicone lined muffin tin. Place filled molds on a cookie sheet, and place in the oven to bake for 30 minutes.
  • While loaves are baking, put a big glob of pumpkin purée in a zip-top bag with a tiny corner cut out. (Make sure there is no air inside.)
  • When loaves have finished baking, turn them out onto a plate. (If they look sort of blah, you can return them upside-down into the molds and broil just long enough to brown them.) Pipe on jack-o'-lantern faces right away. If you really want to be cute, poke a hole near the base of the pumpkin stem with a toothpick and insert a little sprig of parsley.
