SPICED LENTIL AND CHICKPEA SALAD WITH HALLOUMI



Spiced lentil and chickpea salad with halloumi image

2 tbsp olive oil
1 red onion, halved and sliced
200g cherry vine tomatoes
2 tsp harissa
250g pouch cooked beluga lentils
½ lemon, juiced
1 block halloumi, cut into ½cm slices
400g tin chickpeas, drained and rinsed
a small bunch mint, roughly torn
a small bunch flat-leaf parsley, roughly torn
1 tbsp tahini
3 tbsp natural yogurt
2-3 tsp harissa
1 tsp runny honey
½ lemon, juiced
½ a clove garlic, crushed

Steps:

  • Heat the olive oil in a pan and cook the onion until soft. Stir in the tomatoes and cook until they are just starting to break down and burst open. Stir in the harissa, lentils and lemon juice, cook for a minute then season well and cool.
  • Whisk together all the dressing ingredients with enough water to make a drizzle-able consistency.
  • Fry the halloumi slices in batches in a dry non-stick pan until golden on both sides.
  • Toss the chickpeas and 1 /2 the herbs into the lentil mixture.
  • Put on a platter or divide between plates and top with the dressing, the halloumi and the remaining herbs.

1 lime , zested and juiced
1 tsp rapeseed oil
1 tsp fresh thyme leaves
¼ tsp turmeric
¼ tsp cumin seeds
1 tbsp finely chopped coriander
1 garlic clove , finely grated
100g halloumi , thinly sliced
1 lime , zested and juiced
3 tbsp bio yogurt
3 tbsp finely chopped coriander
1 red chilli , deseeded and chopped
160g corn , cut from 2 fresh cobs
1 red pepper , deseeded and chopped
100g fine green beans , blanched, trimmed and halved
200g cherry tomatoes , halved
1 red onion , halved and finely sliced
320g white cabbage , finely sliced

Steps:

  • Mix the lime zest and juice with the oil, thyme, turmeric, cumin, coriander and garlic together in a bowl. Add the halloumi and carefully turn it until coated - take care as it breaks easily.
  • To make the slaw, mix the lime juice and zest, yogurt, coriander and chilli together, then stir in the corn, red pepper, beans, tomatoes, onion and cabbage.
  • Heat a large non-stick frying pan or griddle pan and fry the cheese in batches for 1 min each side. Serve the slaw on plates with the halloumi slices on top. If you're cooking for two people, serve half of the halloumi and slaw and chill the rest for lunch another day.

700 g tender leeks, trimmed to give 450g
225 g halloumi cheese
2 tablespoons olive oil
1/2 teaspoon cumin seed
1 lime, juice of
salt & freshly ground black pepper

Steps:

  • Slice leeks fairly finely. Cut the cheese into slice about 8mm thick then cut each slice in half to make squarish pieces.
  • Heat the oil in a frying pan, put in the cheese and fry for 1-2 minutes until golden brown on one side, then flip the pieces over and fry the other side.
  • Drain the cheese on kitchen paper and leave on one side.
  • Put the leeks in the frying pan and stir-fry for about 5 minutes or until they are just tender. Then add the cumin seeds and stir for a moment or two longer. Add the lime juice and season with salt and pepper.
  • Put the cheese back into the pan with the leeks and heat through for a few minutes.
  • Serve on warm plates.

1 Large Sweet Potato
1 Large Red Skinned Potato
1 Red Onion
1 Yellow Bell Pepper
1 Red Bell Pepper
6 Garlic Cloves
4 tbsp Olive Oil
Black Pepper
125 g Halloumi Cheese

Steps:

  • Preheat oven to 400 F.
  • Cut the sweet potato into 4 cm cubes. Cut the red-skinned potatoes slightly smaller. Halve the red onion, then cut each half into 4-6 segments, discarding tough outer skin.
  • De-seed the peppers and cut into 2 cm squares. Remove skins from the garlic cloves.
  • Put everything into a oven-proof roasting dish and toss in olive oil. Season with pepper.
  • Roast for 45 minutes until vegetables have browned. Remove dish from the oven and using a rubber spatula flip the vegetables. Top with sliced halloumi cheese.
  • Turn the ovens broiler on low and broil until cheese has melted and turned brown, approximately 5-10 minutes.
