HALLOUMI FRIES
Crisp and slightly salty shallow-fried halloumi fries make perfect party food. Great with a sprinkling of za'atar and a spicy yogurt for dipping

Steps:
- Mix the yogurt with the lemon zest and some seasoning, then swirl through the harissa so that you have pockets of hot and cool in the dip.
- On a plate, stir the za'atar into the flour, then roll the halloumi in the mixture so that it's evenly coated. Heat the oil in a shallow, heavy-bottomed pan or casserole dish until 180C on a cooking thermometer, or a piece of bread browns in 20 secs. Working in batches, carefully lower the halloumi into the oil and cook for 2 mins until crisp and golden, then drain on kitchen paper.
- Sprinkle over the mint and za'atar, and serve with the lemon wedges and the spicy yogurt for dipping.

- Gather the ingredients. Heat a nonstick frying pan over high heat.
- Dry the halloumi cheese slices by blotting them with a paper towel. Place the slices on a plate and brush both sides lightly with the olive oil to coat each thoroughly.
- Sear the cheese in the hot pan until each slice develops a deep brown crust, about 1 minute on the first side and 1 to 2 minutes on the other.
- Place the fried cheese on a plate and garnish with the pepper, oregano or mint leaves, tomatoes, and vinaigrette.

- 1. Slice the halloumi block into sticks (1-2cm thick) and add to a bowl with the cornflour and black pepper. 2. Add the oil to a deep, heavy-based pan, so that it fills to a depth of about 2cm, and heat until sizzling. You can tell if it's hot enough by carefully dipping a piece of halloumi in. 3. Fry a few sticks (5/6) at a time for 1-2 mins or until golden and crispy all over. Transfer to a piece of kitchen paper and repeat with the remaining halloumi. 4. Add the lemon juice, black pepper and half the chopped mint to the yoghurt. Once all halloumi is crispy, drizzle the yoghurt over the top, sprinkle the pomegranate seeds and mint.

- Cut your block of halloumi into even sized fries - mine were about 1.5cm / 1/2 inch thick and I got 10 fingers.
- Mix flour, paprika and cumin together on a plate, then roll the fries in the mixture until evenly coated. Shake off any excess.

- In a large mixing bowl combine buttermilk, paprika, onion powder, garlic powder, cayenne pepper, salt and white pepper. Mix in halloumi wedges and leave to marinate as you prep the next step. I like to leave mine for 30mins+ to soak in the flavour, so do that if you have time.
- In a large shallow dish whisk together flour, paprika, baking powder, oregano, onion powder, garlic powder, salt and black pepper. Scoop out 2 tbsp of the marinade and stir into the flour until lots of little lumps form. This will give you those flaky/crunchy parts.
- One by one dunk the halloumi wedges into the flour and use your hands to fully coat them. Try to press the flour into the halloumi and use the excess buttermilk to form those flaky bits. That's what will give you the crunch. Place on a wire rack to one side and repeat with remaining halloumi wedges.
- Heat up enough oil to comfortably cover a batch of fries to around 180C/350F. In batches of 2-3 deep fry the halloumi until deep golden and visibly crispy. Remove with a slotted spoon and place on a wire rack with paper towels or a tray underneath to catch excess oil. The heat will drop slightly but just maintain it as best you can, bringing it back up to 180C/350F before each batch.
