CUCUMBER-TOMATO SALAD WITH SEARED HALLOUMI AND OLIVE OIL CROUTONS



Cucumber-Tomato Salad With Seared Halloumi and Olive Oil Croutons image

This recipe, inspired by the Greek horiatiki salad, illustrates the power of good, fresh olive oil to make a dish taste bright and rich - and never oily. It's used here to toast the croutons, to infuse garlic into the dressing and to distribute the sweetness of ripe tomatoes throughout the salad. Finally, use it to pan-fry slices of halloumi and make this a vegetarian main course.

Yield 6 to 8 servings as an appetizer, 4 to 6 servings as an entree

Number Of Ingredients 12

1 pound slightly stale sourdough or country bread, thickly sliced
1/3 cup extra-virgin olive oil
Kosher salt
4 to 5 cups cucumber chunks, preferably thin-skinned, such as Kirby or Persian
Kosher salt and freshly ground black pepper
2 to 3 pounds cherry tomatoes, halved, or ripe tomatoes, cored and cut into chunks
8 to 12 ounces halloumi (see Tip)
2 garlic cloves
1/2 cup extra-virgin olive oil, plus more as needed
2 tablespoons thinly sliced red onion or scallions, plus more to taste
2 to 3 tablespoons coarsely chopped fresh mint or basil
2 tablespoons red wine vinegar, plus more as needed

Steps:

  • Make the croutons: Heat oven to 400 degrees. Cut each slice of bread into 1-inch-wide strips. Tear each strip into 1-inch pieces, removing the crust as you go if it is very thick. Transfer to a large baking sheet (or use 2 sheets, if necessary to prevent crowding). Drizzle with olive oil and toss until evenly coated.
  • Bake until golden brown and crunchy on the outside, 18 to 22 minutes, rotating the baking sheet and turning the croutons halfway through so they brown evenly, and checking them every few minutes. Taste and adjust the seasoning with a light sprinkling of salt, if needed. Let cool on the baking sheet.
  • Make the salad: In a colander in the sink, toss the cucumbers with about 1/2 teaspoon salt. Place a bag of ice cubes or an ice pack on top to chill and firm the cucumbers. Let drain while you prepare the other ingredients.
  • In a large bowl, combine the tomatoes with about 1/2 teaspoon salt. Toss and set aside while you prepare the other ingredients.
  • Slice the halloumi about 1/4-inch thick, then cut into bite-size strips. Smash and peel the garlic cloves and combine with 1/2 cup extra-virgin olive oil in a small bowl to steep.
  • Pour off excess liquid from the bowl holding the tomatoes. Add drained cucumbers, red onion or scallions, fresh herbs and 2 tablespoons vinegar to tomatoes and toss well. Remove and discard the garlic cloves from the extra-virgin olive oil, add the oil to tomatoes and mix well. (If desired, the salad can be made up until this point and refrigerated for 30 minutes to 1 hour. Drain off excess liquid in the bottom of the bowl before proceeding.)
  • When ready to serve, add about half the croutons to the salad and toss so they can absorb the liquid. Taste and adjust the seasonings with salt, pepper, extra-virgin olive oil and vinegar.
  • Cook the halloumi: Line a plate with paper towels and lightly coat a nonstick skillet with extra-virgin olive oil. Heat oil over medium-high until rippling. Working in batches, cook the halloumi strips on both sides until golden-brown and crusty, about 1 minute per side. Remove to the plate to drain.
  • Taste and add more croutons to salad as desired. (If there are too many, the salad will be starchy; too few, and it will be wet.) At the last minute, toss in the halloumi, add another good glug of extra-virgin olive oil, mix gently and serve immediately. (If desired, transfer to a clean bowl or platter for serving.)

250g couscous
250ml hot vegetable stock
400g can chickpeas , drained
140g cherry tomato , halved
3 tbsp olive oil
3 tbsp sherry vinegar or red wine vinegar
1 red chilli , ½ deseeded and finely chopped, ½ sliced
small bunch each mint and coriander leaves, chopped
250g pack halloumi cheese , thickly sliced

Steps:

  • Put the couscous in a bowl and pour over the hot stock. Cover with cling film, leave to stand and swell for 10 mins.
  • Make the salsa by mixing the chickpeas with the tomatoes, half the oil and vinegar, the finely chopped chillies and some of the chopped herbs. Season and arrange between 4 serving plates.
  • Heat a griddle pan or frying pan. Fry the halloumi for 2-3 mins each side, until golden and lightly charred. Fluff up the couscous with a fork and mix in the rest of the oil, vinegar and herbs with some seasoning. Pile onto the plates next to the salsa and top with the warm halloumi. Garnish with the sliced chillies.

8 oz Halloumi Cheese
8 oz Cherry or Grape Tomatoes
5 Leaves Basil
3 tbsp Extra Virgin Olive Oil
2 tbsp White Wine Vinegar
Pinch Salt, to taste
Pinch Pepper, to taste

Steps:

  • Slice the Halloumi Cheese lengthwise. You should get 8 slices out of the block giving you 2 slices per person.
  • Slice the cleaned tomatoes in half where the stem was. Pile the basil leaves and then cut into strips (this is called a chiffonade).
  • Make the Basil Vinaigrette with the Olive Oil, Vinegar, salt, pepper, and basil strips.
  • Preheat the grill on heat heat. Place the sliced Halloumi on a small grate grill or on aluminum foil with a little bit of Olive Oil so it doesn't stick. (Note: No seasoning is needed, this is very salty cheese.) These cook fast on high heat, so they only need 4-5 minutes on the first side and another 2-3 minutes on the second side. You want to see the char on these, so don't worry about, it tastes AMAZING!
  • Mix the tomatoes with the Basil Vinaigrette. Top on the slices of Halloumi and enjoy!

2 tbsp olive oil
1 red onion, halved and sliced
200g cherry vine tomatoes
2 tsp harissa
250g pouch cooked beluga lentils
½ lemon, juiced
1 block halloumi, cut into ½cm slices
400g tin chickpeas, drained and rinsed
a small bunch mint, roughly torn
a small bunch flat-leaf parsley, roughly torn
1 tbsp tahini
3 tbsp natural yogurt
2-3 tsp harissa
1 tsp runny honey
½ lemon, juiced
½ a clove garlic, crushed

Steps:

  • Heat the olive oil in a pan and cook the onion until soft. Stir in the tomatoes and cook until they are just starting to break down and burst open. Stir in the harissa, lentils and lemon juice, cook for a minute then season well and cool.
  • Whisk together all the dressing ingredients with enough water to make a drizzle-able consistency.
  • Fry the halloumi slices in batches in a dry non-stick pan until golden on both sides.
  • Toss the chickpeas and 1 /2 the herbs into the lentil mixture.
  • Put on a platter or divide between plates and top with the dressing, the halloumi and the remaining herbs.

2 large tomatoes, chopped
3 medium green onions, sliced
12 leaves fresh mint, chopped
1 medium lemon, juiced
2 tablespoons extra-virgin olive oil

7 ounces halloumi cheese, sliced

Steps:

  • Stir chickpeas, tomatoes, green onions, mint, lemon juice, and olive oil in a salad bowl. Season with salt and pepper; set aside.
  • Heat a dry nonstick skillet over medium-high heat. Add halloumi to the hot pan and cook, turning once, until deeply browned, 1 to 2 minutes per side. Remove to a cutting board and chop into 1/2-inch chunks.
