This recipe for grilled halloumi cheese with preserved lemons and olives is courtesy of Jeremy Meltzer.

3/4 cup extra-virgin olive oil, preferably Yellingbo
2 preserved lemons, cut into 1/2-inch pieces
1/2 pound mixed olives, pitted
1 clove garlic, minced
3 sprigs fresh rosemary, finely minced, plus more sprigs for garnish
1 pound halloumi cheese
Salt flakes
Freshly ground black pepper
Crusty bread, for serving

Steps:

  • In a medium bowl, mix together olive oil, lemons, olives, garlic, and rosemary. Place cheese in a small dish and cover with olive oil mixture, turning cheese to coat. Let marinate 1 hour.
  • Preheat a grill pan over medium-high heat. Grill cheese, lemons, and olives until cheese is lightly browned, about 2 minutes. Transfer items to a serving platter, garnish with rosemary, and serve immediately with bread.

½ the juice of a lemon
1 teaspoon Dijon mustard
1 teaspoon dried oregano
¼ cup olive oil
salt and pepper to taste
1 Tablespoon drained capers
8 ounces halloumi cheese cut into ¼-inch pieces and patted dry
2 Tablespoons olive oil
6 ounces mixed greens for a base

Steps:

  • In a small bowl, whisk the Dijon mustard, dried oregano, lemon juice, salt and pepper.
  • Slowly whisk in the olive oil until incorporated.
  • Add the capers and set aside.
  • Heat 2 Tablespoons olive oil on medium-high heat in a frying pan.
  • Add the halloumi cheese slices to the pan and cook for a couple of minutes per side until golden.
  • Plate the fried cheese right away atop the mixed greens.
  • Spoon the citrus and caper vinaigrette on top.

Fried Halloumi Cheese image

This is a fabulous appetizer or can be served as part of a selection of Middle Eastern appetizers, such as Baba Ganoush, Labneh, and Hummus. Once fried, the cubes of halloumi could also be added to a salad, mixed into a bowl of grains and roasted vegetables, or paired with a plate of juicy tomatoes and some fresh basil. You can easily increase the recipe; just make sure your skillet is large enough to they're all frying in a single layer. Or prepare them in batches. I do recommend dousing the fried cubes in good-quality olive oil, which makes a difference. In addition to the ground black pepper and red pepper flakes, variations include adding a squirt of lemon juice, a bit of chili oil or paste, mixing in sprigs of fresh thyme or oregano, or dusting the just-fried cubes with sumac, paprika, or za'atar.

8 ounces (225 - 250g) halloumi
1 1/2 tablespoons olive oil for frying (plus 1-2 tablespoons of olive oil for dressing the fried cheese)
a few generous grinds of black pepper
big pinch of red pepper flakes

Steps:

  • Drain the halloumi and cut it into cubes; slice the slab in half horizontally, then cut the cheese into batons and slice them into cubes. Pat the cubes very dry with paper towels.
  • Heat 1 1/2 tablespoons olive oil in a heavy skillet over medium heat. When hot, add the cubes of halloumi and cook for a few minutes without stirring, until the bottoms are well-browned.
  • Turn the halloumi cubes with a spatula, and brown them on the other sides. They don't need to be perfectly browned on all sides, but they should be a nice golden brown color for best flavor.
  • Transfer the fried halloumi cubes to a bowl along with any oil in the pan. Grind black pepper over the cheese, add the red pepper flakes and the remaining 1-2 tablespoons olive oil. Stir well, and serve warm or at room temperature.

2 lemons
1/2 pound Haloumi cheese
1 large garlic clove
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 cup plus 2 tablespoons olive oil
4 (3/4-inch-thick) slices peasant or country-style bread
2 tablespoons finely chopped fresh dill

Steps:

  • Prepare a gas grill for direct-heat cooking over moderately high heat.
  • Cut 8 thin slices from lemons, then squeeze enough juice from remainder to measure 2 tablespoons and put in a bowl.
  • Halve cheese diagonally, then cut each triangle, cut side down, into 1/3-inch-thick slices.
  • Mince garlic and mash to a paste with a pinch of salt using side of a large heavy knife, then add to lemon juice. Whisk in salt and sugar until dissolved, then add 1/4 cup oil, whisking until combined.
  • Separately toss lemon slices and cheese each with 1/2 tablespoon dressing.
  • Brush both sides of bread with remaining 2 tablespoons oil.
  • Grill bread, cheese, and lemon slices on grill rack, covered, turning over once (use a metal spatula to scrape under cheese to loosen before turning), until bread is toasted (2 to 3 minutes total), grill marks appear on cheese (3 to 4 minutes total), and lemons begin to wilt (4 to 6 minutes total).
  • Whisk dill into remaining dressing. Divide bread among 4 small plates and top with cheese and lemon slices. Drizzle with dressing and serve immediately.
