Halloumi is a fabulous cheese from Cyprus and a favorite in Greek cooking. It's an ideal frying cheese because it doesn't melt.

- Gather the ingredients. Heat a nonstick frying pan over high heat.
- Dry the halloumi cheese slices by blotting them with a paper towel. Place the slices on a plate and brush both sides lightly with the olive oil to coat each thoroughly.
- Sear the cheese in the hot pan until each slice develops a deep brown crust, about 1 minute on the first side and 1 to 2 minutes on the other.
- Place the fried cheese on a plate and garnish with the pepper, oregano or mint leaves, tomatoes, and vinaigrette.

Steps:
- Mix the grated Halloumi with the mint and the beaten eggs and set aside.
- Mix the flour with salt, combine with the oil and water until it.
- becomes a soft dough.
- If needed add more water.
- Roll out the dough until it is sufficiently thin, then cut into circles approximately 75mm/3 in across.
- Brush each piece with beaten egg, and add a spoonful of filling.
- Fold over the dough so as to enclose the filling and press the edges until they are sealed.
- Finally, deep fry them in very hot oil until golden brown.

- Put the chickpeas in a blender or food processor and whizz with the lemon zest and juice, egg and olive oil. Tip into a mixing bowl and stir in the breadcrumbs, quinoa, garlic, ground coriander, 100g of the halloumi, half the chopped herbs and some salt and pepper.
- With wet hands, form the mixture into 12 even balls and set aside on a baking tray lined with non-stick baking paper. Chill for 30 minutes.
- Meanwhile, heat a little oil in a shallow flameproof casserole or large ovenproof frying pan and cook the onion for 10 minutes until softened. Add the vinegar and red wine and bubble for 2 minutes. Pour in the tomatoes and simmer for 20 minutes until thickened.
- Heat the oven to 220°C/200°C fan/gas 7. Heat a glug of oil in a frying pan and fry the balls for 5 minutes (in 2 batches if the pan isn’t large) until browned all over.

- Dice the halloumi into ~1-inch cubes, large enough to slide onto skewers without falling apart.
