BEAN & HALLOUMI STEW
Use a can of mixed beans to make this tomato-based veggie stew with halloumi. Make it in just 25 minutes for a quick and easy midweek supper

Steps:
- Heat 2 tbsp of oil in a frying pan over a medium heat. Add the onion and pepper, along with a pinch of salt and fry for 10 mins or until softened. Add the garlic, pesto and ground coriander, and cook for 1 min. Tip in the beans and tomatoes along with ½ can of water, then bring to a simmer and cook uncovered for 10 mins.
- Add the remaining oil to a separate frying pan over a medium heat. Fry the halloumi for 2 mins on each side or until golden brown.
- Taste the beans for seasoning, then spoon into deep bowls. Top with the halloumi and scatter over the chopped coriander. Serve with garlic bread, if you like.

- In a frying pan over a medium heat add 2 tbsp of oil. Add the onion and pepper, along with a pinch of salt and fry for around 10 mins or until softened. Add the garlic, pesto and ground coriander, cayenne, and cook for another 1 min. Tip in the mixed beans and tomatoes along with ½ can of water, then bring to a simmer and cook uncovered for 10 mins.
- Add the remaining oil to a separate griddle pan over a medium heat. Fry the halloumi for 2 mins on each side or until golden brown.
- Taste the beans for seasoning, then spoon into deep bowls. Top with the halloumi and scatter over the chopped coriander. Serve with garlic bread, if you like.
GRILLED HALLOUMI AND BEAN STEW
This grilled halloumi and bean stew is a vegetarian budget friendly recipe you just have to try!

- Heat some vegetable oil in a frying pan, once hot, add your diced onions and fry on a medium heat for 5-10 minutes or until softened.
- Once softened, drain and rinse your beans, add them into the pan along with your pesto, garlic and plum tomatoes. Use the back of a spoon to smush the plum tomatoes into the mix.
- Fill your empty can of tomatoes up with water and pour that in the pan along with your mixed herbs. Bring the mix to a boil then simmer for 20 minutes.
- Whilst your stew is simmering away, make a start on your garlic bread if using per packet instructions and slice your halloumi into 2 thin patties.
- Grill or fry your halloumi. I highly recommend using the Ninja Foodi Max to grill your halloumi, it's a great piece of kitchen kit and is how I got the grill lines on my Halloumi after just 5 minutes of grilling. - Once your stew has simmered for 20 minutes, taste and season with salt and pepper, plus whatever seasonings you favour - I like a nice heaped teaspoon of paprika in mine along with a handful of black olives.
- Dish your stew into bowls and finish with your grilled halloumi and a side of garlic bread
