4 6- to 7-ounce halibut fillets
All purpose flour
4 tablespoons olive oil, divided
2 large shallots, chopped
1/4 teaspoon dried crushed red pepper
4 plum tomatoes, seeded, chopped
1/2 cup chopped pitted Kalamata olives
1/2 cup chopped fresh basil, divided
1 tablespoon drained capers
1/3 cup bottled clam juice
1/4 cup dry white wine

Steps:

  • Sprinkle fish with salt and pepper. Dredge in flour. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add fish and sauté until lightly browned and just opaque in center, about 4 minutes per side. Transfer fish to platter. Heat remaining 2 tablespoons oil in same skillet. Add shallots and crushed red pepper; sauté 1 minute. Mix in tomatoes, olives, 1/4 cup basil, and capers. Add clam juice and wine. Boil until sauce thickens slightly, about 4 minutes. Mix in 1/4 cup basil. Season sauce with salt and pepper. Spoon sauce over fish.

2 garlic cloves, smashed
2 tablespoons olive oil
1 1/2 lbs tomatoes, quartered
3 tablespoons katamata olives, pitted
1 tablespoon marjoram, chopped
4 halibut or 4 your favorite firm fish fillets
1/4 cup breadcrumbs

Steps:

  • Preheat broilder.
  • In a broiler-safe pan cook garlic in the oil over medium heat for one minute. Stir in tomatoes, olives and marjoram. Simmer for 5 minutes or until tomatoes have wilted a bit.
  • Add fish to pan, skin side down and cook for 5 minutes.
  • Top fish with crumbs and broil until crumbs are golden and fish is done (2 minutes).
  • Serve fish with sauce and drizzle with 1 tablespoon oil if desired.

2 tsp olive oil
a scant 1 cup of diced yellow onion ((this was one onion for me))
1/4 cup diced shallots ((this was 2 medium shallots for me))
1/8 tsp red pepper flakes
1 cup chicken stock
3 Tbs lemon juice
one (28 oz can) San Marzano tomatoes ((with juices))
¼ tsp salt
¼ tsp ground black pepper
1 tsp basil
1 tsp herbs de provence (, divided)
1 lb halibut (, cut into 1 1/2-inch pieces)
1/2 cup of pitted kalamata olives that have been quartered lengthwise
1 tsp dried marjoram

Steps:

  • Add 2 tsp of olive oil to a large sauté pan. Add the diced onion, diced shallots, and red pepper flakes to the pan and sauté over medium-high heat, while mixing often, until tender, about 6 minutes. Add the chicken stock and lemon juice and boil about 5 minutes. Add the Marzano tomatoes with their juices, and top with 1 tsp dried basil, ½ tsp herbs de provence, and salt and pepper to taste. Reduce the stovetop heat to medium and simmer for 10 minutes. Make sure to push down on the tomatoes until they break up.
  • Season the fish with ¼ tsp salt, ¼ tsp black pepper, and ½ tsp herbs de provence. Add the fish to the pan and cover each piece in the sauce. Cover the pan and simmer until the fish is almost cooked through, about 4 minutes. Flip each fish piece over, add the olives and marjoram to the pan, mix, and let everything simmer until the fish is cooked all the way through, about 2 minutes.
  • Remove the fish from the sauce, remove the skin (it should be easy to remove once the fish is cooked through), and then put the fish back into sauce prior to serving.

4 skinless 6-ounce halibut fillets
Kosher salt
Freshly ground black pepper
1 yellow squash
1 pint cherry tomatoes
1/4 cup pitted oil-cured black olives
2 whole sprigs fresh thyme
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 375 degrees. Lightly season the halibut fillets on both sides with salt and pepper. Cut 4 pieces of parchment paper (12 by 16 inches each) and lay them on a clean work surface. Fold each in half crosswise, making a crease in the middle, then open and lay flat.
  • Cut yellow squash into julienned strips and divide among parchment rectangles, mounding on one side of the fold. Season with salt and pepper. Lay a piece of halibut on top of each pile of squash. Divide the cherry tomatoes (sliced in half, if large) and olives between the four piles and top each pile with thyme. Drizzle each with oil.
  • Starting in one corner, fold each packet into a half-moon and seal well. Transfer packets to a rimmed baking sheet, and cook in the oven until parchment puffs up, about 12 to 14 minutes. To serve, place each packet on a plate and cut open with kitchen shears at the table, being careful not to burn yourself when the steam escapes.

1 tablespoon fresh thyme leaves
1 tablespoon capers, drained and rinsed
3 tablespoons extra-virgin olive oil

4 cocktail tomatoes, thinly sliced
Buttered cooked rice, for serving

Steps:

  • Preheat oven to 400°F. Place squashes, thyme, and capers in a 9-by-13-inch baking dish; drizzle with 2 tablespoons oil and season with salt and pepper. Toss to combine.

24 ounces halibut fillets
4 tablespoons olive oil, divided
2 large shallots, chopped
1/2 cup flour
1/2 teaspoon crushed red pepper flakes
5 plum tomatoes (seeded and chopped)
1/2 cup kalamata olive (pitted and chopped)
1/2 cup fresh basil, divided
1 tablespoon capers (I use more)
1 (6 ounce) can clams (with juice!, can use clam juice only if you prefer)
1/4 cup dry white wine

Steps:

  • Season fish with salt and pepper and dredge in flour.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add fish and saute' until lightly browned and opaque in the center (4 minutes per side) and then transfer to platter.
  • Heat the remaining olive oil in the same skillet and add shallots and crused red pepper. Saute' for 1 minute.
  • Mix in the tomatoes, olives, 1/4 cup basil and capers. Add the clams and wine.
  • Boil until sauce thickens slightly, about 5 minutes).

Steps:

  • Preheat the oven to 375°F. Brush a shallow, ovenproof casserole with olive oil.
  • To make the sauce, heat the 3 tablespoons oil in a large skillet over medium-high heat. Add the onion and cook until soft and translucent, 2 to 3 minutes. Add the garlic and chopped thyme and cook until fragrant, 45 to 60 seconds. Add the zucchini and tomatoes and sauté until soft, 5 to 7 minutes. Remove from the heat. Add the olives and vinegar. Taste and adjust for seasoning with salt and pepper.
  • To cook the fish, place the halibut in the prepared casserole and turn in the oil to lightly coat; season with salt and pepper. Spoon the vegetable mixture over the fillets. Bake until just opaque in the center, about 10 minutes. Garnish with additional sprigs of thyme.

Heat oven to 425F. Use paper towel to dry halibut. Then, use hands to rub olive oil all over the fish. Season with salt and pepper. Massage garlic on top and add dash red pepper flakes. Put parchment on a baking tray. Layer the fresh spinach, then fish on top in the center of the parchment paper. Top fish with olives and tomatoes.
