EASY HOT CHOCOLATE BALLS



Easy Hot Chocolate Balls image

These homemade chocolate bombs are a fun way to make hot chocolate.

2 1/4 cups semisweet chocolate chips (divided)
2 tablespoons multi colored mini chocolate chips (or regular mini chocolate chips)
6 tablespoons hot cocoa mix
1 cup mini marshmallows (or other mix-ins)

Steps:

  • In a small, microwave safe bowl, melt 2 cups semisweet chocolate chips in 30 second increments, stirring in between. This should take 60 to 90 seconds. Alternatively, you can melt the chocolate in a double boiler on the stove.
  • Once melted, spoon about 2 tablespoons into each half sphere and using a pastry brush or the back of a spoon, spread the chocolate around the whole sphere making sure the edges are well coated so that they are not fragile.
  • Let the chocolate set in the fridge or freezer until hardened, about 10 minutes. Once set, gently remove from the molds.
  • Lay 6 half spheres on a plate, with the edges face down. In a small, microwave safe bowl, melt ¼ c semi sweet chocolate chips in 30 second increments, stirring in between. This should take 30 to 60 seconds.
  • Once melted, spoon into a baggie or piping bag. Snip a small corner in the bag. Drizzle one half sphere with melted chocolate. Place several mini, multicolored chocolate chips on top of the drizzle before it hardens. Repeat with 5 more half spheres.
  • Let set in the fridge or freezer for 3 to 5 minutes until hardened.
  • Lay the 6 remaining, plain half spheres face up on a plate. Spoon 1 tablespoon of the hot cocoa mix into each half sphere. Top with several mini marshmallows or other mix-ins.
  • Warm a small, microwave safe plate in the microwave for 45 to 60 seconds. Lay decorated, empty half sphere on the plate for a couple seconds until it begins to melt the edges. This creates an even edge and a sort of glue. Connect with the corresponding, filled half sphere so that the edges meet. Repeat with the remaining 5 spheres until they are all completed. Serve and enjoy!
  • To make hot cocoa - set hot cocoa ball in the bottom of a mug and pour 6 oz of hot milk or water over top until the shell has melted in, releasing the hot cocoa powder, cosmic brownie and mini marshmallows. Stir with a spoon until emulsified.

1 cup graham cracker crumbs
4 tablespoons unsalted butter, melted
1/4 teaspoon kosher salt
1/4 cup red sprinkles
Two 1/4-ounce packages unflavored powdered gelatin
12 ounces cream cheese, at room temperature
3/4 cup confectioners' sugar, sifted
1/2 cup sour cream
2 tablespoons lemon juice
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
1 ounce green candy melting wafers
1 1/2 teaspoons coconut oil
Green gel paste food coloring, as needed
2 3/4 cups flat lemon-lime soda, such as Sprite
Five 1/4-ounce packages unflavored powdered gelatin
2 tablespoons granulated sugar
1 teaspoon edible silver glitter
1/2 cup white nonpareils

Steps:

  • For the crust: Add the graham cracker crumbs, butter and salt to a large bowl and mix to combine. Mix in the red sprinkles.
  • Divide the crumb mixture equally among the cavities of a 5-cavity silicone muffin mold with 4.57-ounce cavities and press into the bottom. Put the mold on a baking sheet and freeze while you make the cheesecake mixture.
  • For the cheesecake: Combine the gelatin with 1/4 cup water in a small microwave-safe bowl and set aside to soften, about 5 minutes.
  • Beat the cream cheese in a large bowl with an electric mixer on medium-high speed until completely smooth, about 1 minute. Scrape down the sides of the bowl. Add the confectioners' sugar, sour cream, lemon juice, vanilla and salt and beat on medium-high speed until incorporated and smooth, about 1 minute.
  • Microwave the gelatin mixture, stirring as needed, until melted, about 30 seconds. Add the gelatin to the cream cheese mixture and beat on medium-high speed to combine, about 30 seconds.
  • Divide the cheesecake batter among the cavities of the silicone mold on top of the crust and smooth out the tops. Tap the baking sheet a few times on a tabletop to release any air bubbles in the cheesecake. Cover with plastic wrap and refrigerate until set, at least 2 hours and up to overnight.
  • For the gelatin snow globes: Place the attached PDF of Christmas trees on a rimmed baking sheet and place a piece of parchment on top.
  • Add the green candy melting wafers and coconut oil to a small microwave-safe bowl. Microwave in 15-second intervals, stirring in between each, until melted and smooth, about 1 minute. Add about 3 drops of green food coloring and mix to combine. Transfer to a small piping bag.
  • Trace the outside border of the Christmas trees with the melted candy, then fill inside the borders, using a toothpick to move the melted candy around. Freeze to harden, about 5 minutes, and set aside at room temperature.
  • Pour 3/4 cup of the lemon-lime soda into a small saucepan, sprinkle over the gelatin and whisk to combine. Let stand until the liquid is absorbed, about 5 minutes.
  • Add the granulated sugar to the gelatin mixture and heat over medium-low heat, whisking occasionally, just until the gelatin and sugar dissolve, about 5 minutes.
  • Pour the gelatin mixture into a large liquid measuring cup and stir in the remaining 2 cups lemon-lime soda. Use a spoon to scoop away any bubbles at the surface. Let sit at room temperature until the gelatin just begins to thicken and is the consistency of thin fruit jelly, about 20 minutes. Add the silver glitter and stir with a spoon. Scoop away any bubbles or lumped up sprinkles at the surface.
  • Pour the mixture into the cavities of a 5-cavity silicone half-sphere mold with 4-ounce cavities and scoop away any bubbles at the surface. Refrigerate until the gelatin has thickened and is slightly set on top but still very wobbly, 6 to 8 minutes.
  • Push a tree straight down into the center of each cavity and hold for a few seconds to allow the gelatin to split and fill back up around the tree. Refrigerate until completely set, at least 6 hours and up to overnight.
  • To assemble: Fill a 9-by-13-inch glass dish with warm water. Set the half-sphere mold into the water and let sit until the gelatin spheres have loosened from the mold, about 5 minutes. Lift the mold from the water and invert onto a baking sheet. Set aside in the refrigerator.
  • Carefully unmold the cheesecakes from the mold. Put the white nonpareils in a small bowl. Carefully dip the top of each cheesecake into the white nonpareils and transfer to a serving platter. Add a gelatin snow globe on top of each cheesecake.

Nonstick cooking spray, for the baking dish
1/4 cup all-purpose flour
1/4 cup sugar
2 tablespoons cocoa powder, such as Baker's® 100% Pure Cocoa Powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Pinch of kosher salt
2 tablespoons milk
1 tablespoon vegetable oil
1/4 teaspoon pure vanilla extract
1 large egg
1 tablespoon extra-virgin unrefined coconut oil
9 ounces semisweet chocolate, such as Baker's® Semi-Sweet Chocolate Baking Bar, chopped
1 cup heavy cream
One 1/4-ounce package unflavored gelatin
2 tablespoons unsalted butter
1/4 cup caramel sauce
2 ounces semisweet chocolate, such as Baker's® Semi-Sweet Chocolate Baking Bar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray an 8-inch square glass baking dish with nonstick cooking spray.
  • Whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl. Whisk in the milk, vegetable oil, vanilla, egg and 1 teaspoon hot water until smooth and combined.
  • Pour into the prepared baking dish and bake until a knife inserted in the center comes out clean, about 20 minutes. Cool for 10 minutes on a wire rack, then flip out onto a cutting board to cool completely, about 20 minutes.
  • Use a 2 1/2-inch round biscuit cutter to cut out 6 circles from the cake (save the scraps for another use); set aside.
  • For the chocolate domes and mousse: Meanwhile, add the coconut oil and 3 ounces of the chocolate to a medium microwave-safe bowl. Microwave in 1-minute intervals, stirring in between each, until the chocolate and coconut oil are melted and the mixture is smooth, about 2 minutes. Pour the chocolate mixture into the cavities of a silicone half-sphere mold with six 3-ounce-capacity cavities and tilt the mold to swirl the chocolate around until each half-sphere is coated entirely (you can also use your finger to swirl the chocolate around). Some chocolate may spill over on top of the mold, which is fine; it will break off when you unmold the domes. Tap out any excess chocolate and freeze until the chocolate is hardened, about 5 minutes.
  • Put 1/4 cup of the cream in a small bowl and stir in the gelatin. Put the butter and remaining 6 ounces chocolate in a medium microwave-safe bowl and microwave in 1-minute intervals, stirring in between each, until the chocolate and butter are melted and the mixture is smooth, about 2 minutes. Stir the gelatin mixture into the chocolate mixture until the gelatin is dissolved. Cool to room temperature, about 10 minutes.
  • Whip the remaining 3/4 cup cream in a large bowl with an electric mixer on medium speed until stiff peaks form, 2 to 3 minutes. Add half of the chocolate-gelatin mixture and continue beating until well combined. Add the remaining chocolate-gelatin mixture and continue beating until no streaks remain.
  • For the filling and topping: Scoop 1/3 cup of the mousse into each chocolate cavity in the half-sphere mold. Using the back of a teaspoon, make a divot in the middle of each portion of chocolate mousse about halfway down. Pour a heaping teaspoon of caramel sauce into each divot. Top each half-sphere with a cake round, pressing down gently into the mousse (use a paper towel to wipe away any mousse that may seep out of the mold). Freeze until the mousse is set, about 1 hour.
  • Gently peel the mold away from each of the half-spheres and place them cake-side down on a serving platter.
  • Use a vegetable peeler to shave 1 tablespoon of chocolate curls from the chocolate. Put the remaining chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring in between each, until melted, about 1 minute. Drizzle the melted chocolate over each dome and sprinkle with the chocolate shavings. Serve immediately.
