ROASTED HALVED CHICKEN WITH GARLIC-HERB PASTE



Roasted Halved Chicken with Garlic-Herb Paste image

4 teaspoons chopped fresh rosemary leaves
1 lemon, zested
3 cloves garlic, minced
1/4 cup extra-virgin olive oil, plus extra for pans
1/2 teaspoon cayenne pepper
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1 (3 to 4-pound) chicken, skin-on, backbone removed and halved
Special equipment: 2 large cast iron skillets

Steps:

  • Preheat the oven to 375 degrees F.
  • Garlic-Herb Paste: Combine the rosemary, lemon zest, garlic, olive oil, cayenne, Dijon mustard, and salt and pepper to taste, in a small bowl. Stir to incorporate.
  • Rub chicken with Garlic-Herb Paste. Let marinate at room temperature for 1 hour.
  • Coat a large cast iron skillet lightly with olive oil and heat over medium-high heat. Oil the bottom of a second cast iron skillet, of equal or smaller size.
  • Put the chicken, skin side down, in first pan, and top it with the second pan, oiled-side down on top of the chicken. If you don't have a second cast iron skillet, use a regular pan and weigh it down with 2 heavy cans. Sear chicken until lightly browned, about 5 minutes. Remove top skillet, flip the chicken and transfer to the oven. Cook until chicken is cooked through, about 35 minutes. Transfer to a serving platter and serve.

An excellent taste for chicken - quick and easy to make! Boneless chicken breasts may also be used. My sister gave me this suggestion, and when I tasted the cream sauce she made for the chicken - WOW - I couldn't wait for the whole meal! If there are any ingredients that you don't like, such as mushrooms, or artichoke, simply omit them. It is the sauce that is the stunning aspect - and not the traditional 'canned soup' sauce!! ENJOY!!

2 tablespoons unsalted butter
1 (8 ounce) package button mushrooms, chopped
2 cups chicken broth
4 bone-in chicken breast halves, skinless
1 (10 ounce) can artichoke hearts, drained and sliced
½ cup unsalted butter
½ cup all-purpose flour
1 ½ cups half-and-half cream
1 cup grated Parmesan cheese
1 teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Melt 2 tablespoons of butter in a large skillet over medium heat. Saute mushrooms in butter until tender. Remove from the skillet, and set aside.
  • Place the chicken into the skillet, and pour the broth over it. Cover, and simmer over medium heat for 20 minutes, or until the chicken is cooked through. Reserve 1/2 cup of broth from the pan, and discard or save remaining broth for other uses. Remove the chicken to a 9x13 inch baking dish, and top with artichokes.
  • Melt the remaining 1/2 cup of butter in a skillet over medium heat, and whisk in flour until smooth. Gradually stir in the 1/2 cup of reserved broth, and half and half cream. Cook, stirring constantly, until thickened, about 5 minutes. Turn off the heat, and stir in the Parmesan cheese, rosemary, salt and pepper. Pour sauce over the chicken in the baking dish. Place sauteed mushrooms on the top.
  • Bake uncovered for 30 minutes in the preheated oven. Let stand for a few minutes before serving to let the sauce thicken.

4 boneless skinless chicken breasts
1 large onion
3 cups louisiana hot sauce
2 tablespoons margarine or 2 tablespoons cooking oil
4 tablespoons red pepper flakes
salt and pepper

Steps:

  • Note: Regular chicken can be substituted for more flavor impact!
  • Preheat large saucepan on top of stove.
  • Chop onions into one inch bite size pieces.
  • Add 2 tablespoons margarine or cooking oil.
  • Add the pepper flakes to release the heat into the margarine or oil.
  • After about two minutes, making sure the pepper flakes do not burn, add onions and saute until the onions are either translucent or lightly browned.
  • Add chicken breasts and cook with lid on saucepan for 20 minutes.
  • Note: Remember to keep on medium heat and check periodically to make sure the hot sauce doesn't evaporate or burn.
  • If you need to add more hot sauce that is fine. Or if you would rather substitute water instead of more hot sauce that is fine also.
