HABANERO HOT SAUCE
Consider yourself warned! This is a massively fiery Habanero Hot Sauce! All you need is a drop or two to amp up your favorite dish, with a special nod to Fish Tacos. Yum! (Note: instructions not meant for canning or long term preserving.)

- Give the habaneros a good rinse and de-stem them. Out of habit, I usually scrape out the seeds and pith of habaneros but you can consider this optional. Use caution (or gloves) when handling habanero peppers.
- Saute a roughly chopped onion and 2 whole, peeled garlic cloves in a dollop of oil. It's best to use a non-reactive pan for this recipe with stainless steel being a good option.
- Once the onion has softened (5-8 minutes) add the six habanero peppers, 3/4 cup peach, 1/4 cup pineapple, 1" piece of peeled ginger, 3/4 cup white vinegar, 1/2 cup water, 1/2 teaspoon salt. Let the mixture simmer for 5-10 minutes or until everything is at a uniform temp.
- Add mixture to a blender or food processor and combine well.
- Take a taste. It will be plenty hot so consider yourself warned! You can add dashes of agave or honey to sweeten it up and temper the heat if you want.
- Serve immediately or store in hot sauce bottles in the fridge where it will keep for at least a month.

- Add all ingredients to a food processor and process until smooth.
- Add to a pot and simmer over low heat for 15 minutes.
- Cool and strain, if desired. If you want a chunkier hot sauce, skip the straining. Or, strain and add a bit of the pulp back in to your desired consistency.
- Pour into bottles and refrigerate until ready to use!

SB CANNING SPICY MANGO SALSA
I had made a simple mango salsa with the SB Canning group in January.

Steps:
- In a dutch oven put the olive oil and diced red onions and cook down the onions till they are translucent, about 5 minutes on high heat. Add the remainder of the ingredients and cook the recipe for 20 minutes till the mangos are heated through.
- With an emersion blender break up the mixture leaving some of the mango pieces in tact while creating a puree as the base of the salsa. Taste the recipe after the 20 minutes to make sure that the cayenne has left the perfect heat to your salsa. If you need to add more, add a pinch at a time and then retaste.
- Once you are happy with the recipe, sterilize four pint jars, lids and rings. Ladle your mango salsa into the jars leaving 1/2" headspace. Process in a waterbath for 15 minutes at full boil.
- This recipe is going to be great with tortillas or chicken and will be the perfect topping on my hubby's famous fish tacos. I wonder if he will make them for our Saturday night date? :)

Steps:
- 2 mangoes pitted and cut in 1/4" cubes or smaller.
- ½ a pineapple cut in 1/4" cubes or smaller.
- 1 cucumber seeded and cut in 1/4" cubes or smaller.
- 1 or 2 Habanero seeded and finely chopped(wear gloves)( if you use 2 watch out, Have a gallon of milk handy).
- ½ cup fresh chopped cilantro.
- 2 large tomatoes cut in 1/4" cubes.
- ½ large red onion finely chopped.
- ½ yellow pepper cut in 1/4 " strips and chopped.
- Can also add 1 jalapeno, seeds and all finely chopped for more spice.
- Combine all in ingredients in a large bowl, cover and refrigerate for several hours for flavors to combine. Serve with chips or on fish , chicken or pork. I like my Salsa chunky, but if prefer it not quite as chunky use smaller pieces.
PINEAPPLE MANGO HABANERO JAM
I've always been a big fan of tropical flavors married to the fruity heat of habanero chiles, so after some experimentation I came up with this recipe for a sweet and tasty jam with a gentle but pronounced finish heat. Store in a cool, dark area.

- Combine mangos, pineapple, and cider vinegar in a stockpot over medium-high heat. Bring to a a simmer; mash mangos and pineapple to a chunky consistency with a potato masher. Stir in sugar until dissolved.
- Stir liquid pectin and habanero chile halves into the stockpot. Bring to a rolling boil, stirring frequently. Cook, stirring frequently, until jam thickens, about 2 minutes more. Remove chile halves. Discard 6 chile halves; chop 2 halves and stir back into the stockpot.
- Sterilize 8 half-pint jars and lids in boiling water for at least 5 minutes.
- Ladle hot jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife around the insides of the jars to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder, spacing them 2 inches apart. Pour in more boiling water to cover jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 8 hours. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).

MANGO HABANERO SALSA

- In a large mixing bowl, combine all the ingredients and tossto mix well.
- Cover and refrigerate for at least 30 minutes or as long asovernight.
MANGO PINEAPPLE HABANERO SALSA
Steps:
- Peel mangos and chop fruit roughly into 1/2" pieces. Set aside. Remove pineapple's core, and chop fruit into roughly 1/2" pieces. Set aside. Chop red bell pepper into 1/8" to 1/4" pieces and set aside. Dice green onions and set aside. Take 1/2 of the chopped fruit and one whole habanero chili. Pulse in a food processor until you have a somewhat smooth texture. Do not over process. Take remaining fruit and dice with a cleaver or chef's knife until you have a desirable texture. Mix in a bowl with the fruit chili mixture. Take 1-3 habanero chilies and remove seeds and pith. Mince the flesh and add to the salsa mixture. Add bell pepper and green onion to taste. Stir, let sit covered in the refrigerator 1 hour to overnight. Serve with fish, chicken, pork or chips.
