RASPBERRY RIBS
This is a great and different way to cook country-style pork ribs. I'm sure it'd work with regular ol' pork ribs, pork chops, or even chicken. (NOTE: Prep time does not include marinating.)

Steps:
- Mix the first four ingredients together and use the mixture to marinate the ribs for at least four hours (overnight is much better, though).
- Cook the ribs on a hot grill for 8-10 minutes, turning them and allowing them to cook for another 6-8 minutes on the other side.

Sweet, tangy, and spicy...Great addition to ribs, chicken, or pulled pork (ESPECIALLY pulled pork sandwiches.)

Steps:
- Bring vinegar to a boil in a saucepan; add habanero peppers, onion, garlic, red pepper flakes, cayenne pepper, mustard, white pepper, and seasoned salt. Allow mixture to return to a boil, then stir in brown sugar and ketchup.
- Boil sauce for 15 minutes, stirring constantly. Reduce heat to medium-low and simmer, stirring occasionally, until thickened, 30 to 45 minutes. Cool and serve.

SPICY PRESSURE COOKER SHORT RIBS
Cooking ribs in the pressure cooker is an easy and fast way to put food on your plate. The heat from this dish is countered very nicely with the sweetness. If you like spicy food, then you will love this recipe! If you aren't too tolerant of spicy foods, I included a slight variation in the notes. Enjoy!

Steps:
- Combine habanero pepper, black pepper, MSG, paprika, and cumin in a bowl. Rub mixture evenly over ribs; refrigerate for at least 30 minutes.
- Combine cola, apple cider, jam, Worcestershire sauce, and brown sugar together in another bowl; stir well.
- Heat oil in a pressure cooker over medium-high heat. Add ribs in batches; cook until browned all all sides, about 8 minutes. Remove from pot and set aside. Add onions and garlic to the pot. Cook and stir until onions are translucent, about 5 minutes. Return ribs to the pot; pour in cola mixture.
- Close pot securely and place pressure regulator over vent according to manufacturer's instructions. Bring to high pressure, with rapid steam escaping the cooker, about 5 minutes. Reduce heat to medium and cook for 30 minutes. Let pressure release naturally according to manufacturer's instructions, about 15 minutes.
- Combine water and cornstarch together in a small bowl; mix until cornstarch is dissolved.
- Open pot carefully; transfer ribs to a plate. Skim any extra fat off the top of the liquid; drain to remove any solid bits. Return liquid to the pot. Mix in the cornstarch slurry. Cook, stirring constantly, over medium-high heat, until boiling. Remove from heat. Add ribs back in and coat in the liquid.

RASPBERRY HABANERO MARINADE
This marinade is sneaky, in that people are initially fooled by the sweet raspberry flavor, then the heat of the Habaneros hits your taste buds like a runaway train. Recommended cuts: Shrimp (2 to 3 hours); poultry breasts (4 to 6 hours) From: Marinades by Jim Tarantino.

Steps:
- Combine the chiles, orange zest, and vinegar in a heavy non-reactive pot and bring to a boil.
- Reduce the vinegar to 1/3 cup, strain, and discard the solids.
- Return the vinegar to the saucepan.
- Puree the raspberries in a food processor fitted with a plastic dough blade. (A metal blade will crush the seeds, which will impart a bitter taste to the food.) Then strain.
- Add the raspberry puree to the vinegar and simmer over low heat for 20 minutes.
- Cool to room temperature and add the orange juice.
- This marinade will keep for 1 to 2 weeks, in an airtight jar, in the refrigerator.
