Jalapeño Pepper Jelly is a delicious sweet and spicy spread. This is a great way to preserve all those summer jalapenos and peppers. Enjoy on cheese and crackers, toast, sandwiches, or grilled meats.

10 jalapeno peppers (half seeded)
1 red bell pepper (chopped)
1 green bell pepper (or orange) (chopped)
5 1/2 cups granulated sugar
1 1/2 cup white vinegar
1/2 teaspoon salt
1 3 ounce pouch liquid pectin

Steps:

  • Place all peppers in a food processor and pulse until peppers are finely chopped. Empty into a mesh strainer and drain off excess liquid.
  • Place the chopped vegetables in a large stock pot and add in the sugar, vinegar, and salt. Bring to a boil over medium-high heat and boil for 10 minutes. Add the pectin and boil 1 more minute. Remove from heat
  • Ladle jam into hot sterile jars using a wide mouth funnel. Leave 1/4 inch headspace. Top the jars with the lids, screwing them on with just your thumb and index finger (this is to ensure that it is on but not too tight that the air can't escape).
  • Place jars back on the rack and lower into the water. Bring to a boil and boil for 10 minutes. (Add 1 more minute for each 1000 ft elevation above 1000 ft.)
  • Remove and place on a towel about 1 inch apart. After a few minutes you should start to hear the cans seal with a pop. Leave the jars untouched on the counter for 12 hours.
  • To check for a proper seal, remove the the ring of the lid and lift the can up off the counter 1-2 inches while holding the edges of the lid. If the lid stays attached the jelly is sealed properly and can be stored on the shelf (screw bands removed).
  • If a seal did not form or if you opened the lid and broke the seal, jelly can be stored in the fridge.
  • Let jelly rest 1 day before opening to allow it to fully set up and be thick.

1/2 pound habanero peppers (chopped)
4 cups granulated sugar
1 1/4 cups cider vinegar
1/4 cup lemon juice
1 teaspoon salt
3 ounces liquid fruit pectin
4 drops food coloring (if preferred)

Steps:

  • Add the habanero peppers to a food processor and pulse them until they are very finely chopped. Do not overdo it or you'll wind up with a puree.
  • Scoop out the peppers and add to a large pan.
  • Add sugar, vinegar, lemon juice, and salt.
  • Bring to a boil then reduce heat to low and simmer for about 10 minutes.
  • Return heat to high and bring mixture to a rolling boil. Stir in pectin and boil for 1 minute, stirring constantly. Remove from heat.
  • If using food coloring, add it now and stir.
  • Ladle jam into sterilized jars and cover.
  • Process jars in a boiling hot water bath for 10 minutes.
  • Remove and let cool overnight.

Number Of Ingredients 7

2 red peppers, seeded, finely chopped (about 1-1/2 cups)
2 green peppers, seeded, finely chopped (about 1-1/2 cups)
10 large jalapeño peppers, seeded, finely chopped (about 1 cup)
1 cup HEINZ Apple Cider Vinegar
1 pkg. SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
5 cups sugar, measured into separate bowl (See tip.)

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Place peppers in 6- or 8-qt. saucepot. Add vinegar. Stir in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. I do recommend wearing gloves. This is sweet & spicy so beware. This is great served over cream cheese.Try adding it to your favorite barbecue sauce for a little extra kick. Spread it on your sandwiches. I've added it to salsas. You can also make this with jalapenos and green bell pepper to get a milder jelly.As in the picture. Some recipes using the jelly!

1/2 lb yellow habanero peppers or 1/2 lb orange habanero pepper, washed, drained, stems and seeds removed unless you want extra spicy
1/4 lb bell pepper, color your choice washed, drained, stems and seeds removed
2 cups cider vinegar, divided
6 cups sugar
6 ounces liquid pectin, 2 packets (I`ve made this Oct 2010 with 1 packette and jelled beautifully)
orange food coloring (optional) or red food coloring (optional)

Steps:

  • Puree peppers and 1 cup vinegar in blender (be careful of your eyes HOT FUMES).
  • Combine puree 1 cup vinegar and sugar in a large saucepan.
  • Bring to a boil and boil for 10 minutes stirring constantly.
  • Stir in pectin stirring while boiling hard for 1 minute.
  • Remove from stove and skim foam.
  • Stir in food coloring till eye appealing.
  • Or skip if you like as is.
  • Ladle hot jelly into clean hot jars,leaving 1/4 inch head space.
  • Adjust caps Process 10 minutes in boiling water canner.

3 orange peppers (, cored and seeded)
5-6 habanero peppers (, cored and seeded)
3 tbsp pectin crystals
2/3 cup white or cider vinegar
1/2 tsp butter or margarine
3 1/3 cups sugar

Steps:

  • Place all the peppers in a food processor and pulse until chopped finely.
  • Transfer the chopped peppers to a large pot with the remaining ingredients.
  • Heat to boiling and continue to boil for about 15-18 minutes, stirring constantly.
  • Skim any foam which accumulates at the top and remove from stove element.
  • While the jelly is still hot, ladle it into hot jars, leaving a 1/4 inch headspace.
  • Screw on lids and process in a boiling water bath for 10 minutes.

12 whole fresh jalapeno peppers (stemmed and seeded)
2 medium-sized green bell peppers
1 cup Bragg's apple cider vinegar
5 cups white sugar
2 pouches Certo liquid pectin

Steps:

  • Finely chop peppers in a food processor.
  • Combine the chopped peppers, vinegar and sugar in a 6 quart or larger pot and bring it to a slow boil. Bring it down to a simmer and cook for 10 minutes.
  • Remove from the heat and stir in the pectin. Return to the heat and boil rapidly for 1 minute.
  • Remove from the heat and skim off any foam with a clean metal spoon.
  • Quickly ladle into hot, clean jars (boil jars in water for 10 minutes to sterilize prior). I used half pint jars. Leave 1/4" headspace at the tops of the jars.
  • Wipe the rims and threads of the jars. Place canning lids on all the jars and tighten well. Process them in boiling water for 5 minutes. To do this, bring a very large pot of water to a boil that will fit the jars in a single layer. You can do them in batches if you have a smaller pot. Remove jars from the water and allow to cool. The lids will make an audible "pop" if processed correctly.

1 large green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
1 pinch salt
4 ¼ cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
  • Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

5 jalapeno peppers, stems removed
5 cups seeded cubed zucchini
1 1/2 cups vinegar
7 cups sugar
6 fluid ounces certo liquid pectin

Steps:

  • Place habaneros, jalapenos, zucchini and vinegar in food processor and process until smooth.
  • Combine pepper and zucchini mixture in heavy bottom pot with sugar. Bring to a boil and simmer for 25 minutes.
  • Add pectin and bring to a full rolling boil for 1 minute.
  • Remove from heat and ladle into sterile jars and process in a boiling water bath for 10 minutes.

Juice from three small limes
1 tsp Salt
1 package Powdered Pectin

Steps:

  • Fill water bath canner and place wire rack on the bottom.
  • Add jars to begin sterilizing process. Bring water to simmer and add lids.
  • Meanwhile, cut off tips and ends of jalapeno peppers.
  • Cut peppers lengthwise and remove seeds and fiber from inside of peppers.
  • Place jalapeno peppers in food processor. Pulse until you have a puree.
  • Pour puree into medium sized pot and add sugar, vinegar, lime juice, and salt.
  • Mix until dissolved.
  • Add in pectin and bring mixture to a boil.
  • Cook at a rolling boil for 4 minutes.
  • Remove jars from water bath taking care not to touch the rim or inside of jars.
  • Ladle hot jelly into sterilized canning jars using your canning funnel. Wipe rim of jar clean if any jam is spilled.
  • Place lids on jars of jelly, taking care not to touch the lid with your hands.
  • Return to water bath and process for 5 minutes.
  • Remove jars from water bath and let cool completely.
  • Jelly Setting may take 24-48 hours to gel.Serve on crackers or bread, use as a glaze for meats, or a dip for cooked meats.

8 half pint canning jars with lids and rings
1 ½ cups cider vinegar
6 ½ cups white sugar
1 cup shredded carrot
½ cup minced red bell pepper
15 habanero peppers, seeded and minced
2 (3 ounce) pouches liquid pectin

Steps:

  • Stir the vinegar and sugar in a saucepan over medium-high heat until the sugar has dissolved, then stir in the carrot and red bell pepper. Bring to a boil, reduce heat to medium, and simmer 5 minutes. Add the habanero peppers and simmer 5 minutes longer. Pour in the pectin, and boil for 1 minute, stirring constantly. Skim and discard any foam from the jelly.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pour the jelly into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).
