BRAISED PEPPERS AND ONIONS

Braised Peppers and Onions image

This base of slowly stewed peppers and onions can serve as the foundation for a wide variety of dishes: Add seared flank steak or pork butt, capers, olives, raisins and canned tomatoes, and simmer it into deliciously shreddable Cuban ropa vieja, to enjoy with black beans, rice and braised greens. Slice Italian sausage, sear it along with chicken legs, then add 1/2 cup each of brown sugar and apple cider vinegar, plus a couple of cups of these peppers and onions, and cook until the sauce reduces to a sweet-tart glaze as the meat slowly braises. (Try that on top of boiled yellow potatoes.) Bloom freshly ground ancho, pasilla or other dried chile in oil, then add this sauté, a few cups of cooked black beans and chickpeas, plenty of Mexican oregano and some canned tomatoes to simmer into a rich vegan chili, garnished with roasted sweet potato. But for the simplest use, just slather these peppers on top of a hot dog in a buttered, toasted bun.

CHICKEN AND CHICKPEA CHILI

Chicken and Chickpea Chili image

Become the MVP at your house tonight by making this soul-warming chicken chili. The chili is rich, flavorful and satisfying, and the mix of bacon crumbles and fresh toppings means everybody at the table will be a fan.

Provided by Tony Rosenfeld

Categories     Main Course

Yield 6 to 8

Number Of Ingredients 16

4-1/2 Tbs. vegetable oil
2 lb. boneless skinless chicken thighs, trimmed of excess fat, and cut into 3/4-inch dice
Kosher salt and freshly ground black pepper
2 cups chopped yellow onion
2 to 4 medium cloves garlic, chopped
1 cup chopped fresh red bell pepper
1 fresh habanero chile, chopped
2 Tbs. chili powder
1 Tbs. ground cumin
2 tsp. chopped fresh thyme
1 tsp. ground coriander
2-1/2 to 3 cups chicken broth (homemade or lower-salt store-bought)
3-1/2 cups cooked navy beans (home-cooked or canned from two 15-oz. cans, rinsed and drained)
3-1/2 cups cooked chickpeas (home-cooked or canned from two 15-oz. cans, rinsed and drained)
1 Tbs. fresh lime juice
Garnishes: sour cream, cooked crumbled bacon, diced tomato, sliced scallions

Steps:

  • Heat 2 Tbs. of the oil in a heavy-duty 6-quart pot over medium-high heat until shimmering hot. Pat the chicken dry, and season with 1-1/2 tsp. salt and 3/4 tsp. pepper. Cook half of the chicken, undisturbed, until browned, 2 to 3 minutes. Flip and cook, turning occasionally, until well browned, 2 to 3 minutes. Transfer to a large plate. Add another 1 Tbs. oil to the pot, and brown the remaining chicken; transfer to the plate along with any liquid from the pot.
  • Add the remaining 1-1/2 Tbs. of oil, the onion, and garlic to the pot. Sprinkle with 1/2 tsp. salt and cook over medium heat, stirring occasionally, until softened and lightly browned, about 5 minutes. Stir in the bell pepper, habanero, chili powder, cumin, thyme, and coriander, and cook, stirring, until fragrant, 1 to 2 minutes.
  • Pour in 3/4 cup water, turn the heat up to high, and cook, scraping the bottom of the pot to loosen any browned bits, until most of the liquid is evaporated, about 2 minutes.
  • Add the chicken broth and bring to a simmer.
  • Turn the heat down to medium low. Purée 1-1/2 cups of the beans in a blender or food processor, adding a little stewing liquid as needed, and then stir the puréed beans into the stewing liquid in the pot. Return the chicken, along with any accumulated juice, to the pot. Add the remaining whole beans. Cover and simmer, stirring occasionally, until the chicken is tender, about 1 hour. If the chili gets too thick, thin it with a little water.
  • Stir in the lime juice, and season with salt and pepper to taste.
  • Serve with the garnishes.

JAMAICAN CURRY CHICKEN RECIPE

Jamaican Curry Chicken Recipe image

This Jamaican curry chicken recipe is the ultimate Caribbean comfort food of chicken seasoned with Jamaican curry powder and simmered in creamy curry sauce.

Provided by Mike Hultquist

Categories     Main Course

Number Of Ingredients 20

3 pounds chicken (washed with vinegar and cut into bite-sized pieces (I used leg and thigh quarters today))
2 tablespoons Jamaican curry powder
1 tablespoon adobo seasoning
1 teaspoon allspice
1 teaspoon dried thyme
1 teaspoon turmeric
Salt and black pepper to taste
2 tablespoons olive oil
1 medium onion (chopped)
1 large bell pepper (chopped )
1 Scotch Bonnet pepper (chopped (optional, for a spicy version))
1/4 cup chopped green onion
4 cloves garlic (chopped)
2 tablespoons chopped ginger
2 tablespoons Jamaican curry powder
1 cup coconut milk ((optional - use only chicken broth as an alternative, or water))
1 pound yellow potatoes (diced (peel if desired))
1 large carrot (peeled and chopped)
Salt and pepper to taste
Hot sauce to taste

Steps:

  • Cut up the chicken and add it to a mixing bowl. Rub the chicken pieces with curry powder, adobo seasonings, allspice, dried thyme, and salt and pepper to taste.
  • Heat the oil in a large pot or Dutch oven over medium-high heat. Add the onion and peppers to the pot and stir. Cook for 5 minutes to soften.
  • Add the green onion, garlic, ginger and 2 tablespoons Jamaican curry powder. Cook 2-3 minutes, to let the curry powder bloom. This is called "burning the curry", which is not actually burning it.
  • Add the chicken and cook for 10 minutes to brown all sides, flipping half way through.
  • Stir in the coconut milk or chicken broth, potatoes and carrots. Taste and adjust with salt, pepper and hot sauce to your personal tastes. Add a few sprigs of fresh thyme here if you'd like.
  • Bring to a boil, then cover and reduce the heat. Simmer for 20-30 minutes, or until the vegetables are softened and the chicken is fall-off-the-bone tender and cooked through. It should measure 165 degrees F internal when measured with a meat thermometer.
  • Serve! I like to garnish mine with fresh chopped parsley and red pepper flakes.

THE 5 BEST SUBSTITUTES FOR CHILI FLAKES | EATDELIGHTS

From eatdelights.com
  • Dried Peppers. We are positive that dried peppers are one of the best alternatives for chili flakes. Dried peppers are grounded to the point that you will be left with a mixture of flakes, ground pepper, and seeds.
  • Chile de Arbol Powder. Now, this condiment isn’t something that you will commonly find in households. But if you do have some lying around inside your pantry, then why not give it a try as a substitute?
  • Ground Cayenne Pepper. Ground Cayenne Pepper also stems from crushing red pepper flakes, making it an excellent substitute. By adding cayenne pepper, you are able to obtain the exact level of heat as the chili flakes.
  • Ground Habanero Pepper. You will easily find this substitute in your pantry. Remember that habanero pepper is one of the spiciest peppers in the world.
  • Paprika. It is also possible to substitute your chili flakes with your bottle of paprika. Yes, it does possess a different texture in comparison to chili flakes, but its color and flavor are what catch our attention as a substitute.
