TRADITIONAL GYRO MEAT

This Greek/Lebanese style meatloaf is sliced and served with pita bread, tzatziki, and tomatoes for a delicious gyro that is the closest I've come to emulating my favorite Mediterranean restaurant. The preparation time seems long, but most of it is resting time, so you can be doing other stuff! You can substitute pork or chicken for the ground lamb and beef if you prefer.

½ onion, cut into chunks
1 pound ground lamb
1 pound ground beef
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon dried marjoram
1 teaspoon ground dried rosemary
1 teaspoon ground dried thyme
1 teaspoon ground black pepper
¼ teaspoon sea salt

Steps:

  • Place the onion in a food processor, and process until finely chopped. Scoop the onions onto the center of a towel, gather up the ends of the towel, and squeeze out the liquid from the onions. Place the onions into a mixing bowl along with the lamb and beef. Season with the garlic, oregano, cumin, marjoram, rosemary, thyme, black pepper, and salt. Mix well with your hands until well combined. Cover, and refrigerate 1 to 2 hours to allow the flavors to blend.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place the meat mixture into the food processor, and pulse for about a minute until finely chopped and the mixture feels tacky. Pack the meat mixture into a 7x4 inch loaf pan, making sure there are no air pockets. Line a roasting pan with a damp kitchen towel. Place the loaf pan on the towel, inside the roasting pan, and place into the preheated oven. Fill the roasting pan with boiling water to reach halfway up the sides of the loaf pan.
  • Bake until the gyro meat is no longer pink in the center, and the internal temperature registers 165 degrees F (75 degrees C) on a meat thermometer, 45 minutes to 1 hour. Pour off any accumulated fat, and allow to cool slightly before slicing thinly and serving.

1 pound ground lamb
1 pound ground beef
1 tablespoon minced garlic

12 tablespoons hummus
12 pita bread rounds
1 small head lettuce, shredded

6 ounces crumbled feta cheese
24 tablespoons tzatziki sauce

Steps:

  • Place onion in a food processor and blend until finely chopped. Transfer onion to a piece of cheese cloth and squeeze out the liquid. Place onion in a large bowl.
  • Mix lamb, beef, garlic, oregano, cumin, marjoram, thyme, rosemary, black pepper, and salt with the onion using your hands until well mixed. Cover bowl with plastic wrap and refrigerate until flavors blend, about 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place meat mixture in a food processor and pulse until finely chopped and tacky, about 1 minute. Pack meat mixture into a 7x4-inch loaf pan, ensuring there are no air pockets. Place loaf pan into a roasting pan and pour enough boiling water around the loaf pan to reach halfway up the sides.
  • Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Pour off any accumulated fat and cool slightly.
  • Thinly slice the gyro meat mixture.
  • Spread 1 tablespoon hummus onto each pita bread; top each with gyro meat mixture, lettuce, tomato, red onion, feta cheese, and tzatziki sauce.

1 pound Lean Ground Beef
1 pound ground pork (or ground lamb)
1 Red Onion. chopped (rough chopped)
6 cloves Garlic
2 teaspoons Ground Marjoram
2 teaspoons dried rosemary
2 teaspoons Dried Oregano
2 teaspoons Kosher Salt
2 teaspoons Ground Black Pepper

Steps:

  • Place onions, garlic into a large food processor and process until finely chopped but not liquefied.
  • Add meat and all the seasonings and grind for another 3-5 minutes. Do not skip this step. If you do, it will be like ground beef with some weird seasonings in it. Grind it until it's a big, huge, sticky mess that you wonder how you will ever clean up.
  • Since writing this recipe I've discovered a faster way to do this, which is to use your stand mixer with the paddle. Paddle the living daylights out of the meat with the spices until it's a sticky mess. This is a lot easier to clean up than a blender, and the end result is the same. So use whatever you have that works for you.
  • Put into a foil pan, and smooth out the top, and bake at 350 for 60 mins, or until it reaches an internal temperature of 175-180
  • Take it out of the oven and drain all the fat.
  • Cover it with foil and then place something heavy on it to compress it. I put a cast iron skillet on top and then carefully placed 3 cans of beans on top of the skillet to compress it.
  • Let it rest for 30 mins and then slice into thin slices.
  • Gyros!

HOMEMADE GYRO MEAT AND GYROS



Homemade Gyro Meat and Gyros image

2 pounds ground beef (between 80/20 and 90/10)
2 pounds ground lamb
1 large onion (peeled and cut into 1-inch chunks)
2 tablespoons minced garlic
1 tablespoon dried oregano
1 tablespoon dried thyme
2 1/2 teaspoons ground cumin
2 teaspoons kosher salt
2 teaspoons ground black pepper
1 teaspoon dried rosemary
Gyro meat (fully cooled)
ghee or extra virgin olive oil
flatbread pitas
mixed salad greens
cucumber yogurt sauce
halved cherry tomatoes or chopped large tomatoes
thinly sliced sweet onions
crumbled Feta cheese
Optional but tasty: Greek dressing and chopped or smashed Greek olives

Steps:

  • Place the onion chunks in the food processor and blitz them until they are super finely chopped. Scrape into the center of a clean tea or flour sack towel, twist and squeeze it over the sink to remove any extra moisture. Use your hands to combine them with the remaining gyro meat ingredients. Cover with plastic wrap and let the mixture rest for at least 1 hour but up to overnight in the refrigerator.
  • Preheat the oven to 325°F and bring a pot of water to a boil.
  • Working in batches, pulse the meat mixture for a minute, or until it is a tacky, thick paste. Press it a little at a time into the loaf pans, taking care to eliminate any air pockets. You should have enough meat to fill 2 standard bread loaf pans. Press down firmly on the surface of the meat to even it out. Place a wet kitchen towel on the bottom of a large roasting pan and position the loaf pans on top of it. Pour the boiling water into the roasting pan. It should be 2/3 of the way up the outsides of the loaf pans. Carefully transfer the roasting pan into the oven and bake for 50-70 minutes, or until the meat measures 165°F on an instant read thermometer inserted into the center of the loaf.
  • Carefully remove the loaf pans from the roasting pan and pour off any fat that accumulated. Put the loaf pan on a heat-proof surface (a cooling rack or a pan on top of the oven) and place a foil wrapped brick directly on the surface of the meat. Let the meat rest like this for 20 minutes. After 20 minutes, remove the brick, run a knife around the edge of the loaves, then gently turn the loaves out. Wrap them tightly with plastic wrap and chill for several hours or overnight to allow them to chill and firm for easier slicing.
  • Unwrap the gyro loaf and use a sharp knife to cut long strips no thicker than 1/4-inch. Melt at least 2 teaspoons of ghee or olive oil over medium heat in a heavy-bottomed frying pan. Lay the strips down into the ghee or olive oil and fry for at least 1 1/2 minutes on each side, using tongs or a small flexible spatula to flip them, or until they are crisped and browned to your liking. Gently transfer them to a plate to cool briefly, then assemble in your preferred order with the remaining gyro ingredients on a gently warmed flat-bread pita. Fold, wrap in foil to help hold it together, and dig in!

1 medium onion, finely chopped or shredded
2 pounds ground lamb
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Steps:

  • Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  • Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
  • To cook in the oven as a meatloaf, proceed as follows:
  • Preheat the oven to 325 degrees F.
  • Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.
  • To cook on a rotisserie, proceed as follows:
  • Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
  • Preheat the grill to high.
  • Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings. Cook on high for 15 minutes. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.
  • Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.
  • Yield: 1 1/2 cups

KEFI LAMB GYRO

Very few people make their own gyro-it's about as intimidating as making your own prosciutto or sausage. Chef Michael Psilakis' recipe for lamb gyro from his restaurant, Kefi, is made in the oven, so it's exponentially less daunting.

2 1/4 inch thick slices Spanish or sweet onion
Extra-virgin olive oil
Kosher salt and coarsely cracked black pepper
1 pound well-marbled, finely ground lamb (from the shoulder)
8 ounces finely ground pork
1 teaspoon Dijon mustard
2 teaspoons minced garlic
1 teaspoon ground coriander
1 teaspoon espelette pepper or best-quality chile powder
2 tablespoons minced fresh herbs, such as dill, parsley, and/or chives
1 whole scallion, minced
2 large eggs, beaten
Greek Salad, for serving
Tzatziki, for serving
6 pitas, for serving

Steps:

  • Brush the onion slices with a little olive oil and season with kosher salt and pepper. On a hot griddle pan or in a cast-iron skillet, grill the onion until tender. Separate into rings and chop very fine.
  • Lightly brush a 7 1/2 X 11-inch baking dish with olive oil and preheat the oven to 375°F.
  • In a large mixing bowl, combine the chopped grilled onion, lamb, pork, mustard, garlic, coriander, espelette, fresh herbs, scallion, and eggs. Season liberally with kosher salt and pepper and thoroughly combine the mixture with clean hands. Transfer to the baking dish and spread out evenly to the edges, smoothing the top flat. Place the dish inside a larger roasting pan and add boiling water to about halfway up the sides of the baking dish.
  • Bake for 45 minutes, or until the gyro shrinks away from the sides and is quite hot in the middle when pierced with a metal skewer (around 150°F). Remove the pan from the water bath and cool to room temperature. Cover and refrigerate for at least 3 hours or, ideally, 24 hours, to develop the flavors.
  • Place a large, flat platter upside down over the baking dish. Turn both over, and carefully remove the gyro. With a hot, sharp knife, slice the gyro about 3/8 inch thick. In a very large skillet, warm 1/3 cup oil over medium-high heat. When the oil is very hot, add the gyro slices and sauté for about 2 minutes, shaking the pan around to thoroughly coat the slices with the oil.
  • Paint the pita with extra-virgin olive oil, season with kosher salt and pepper, and grill until firm and char-marked on all sides. Smear some Tzatziki in the center of each pita round. Divide the gyro meat among the pitas, on top of the tzatziki. Add some Greek Salad. Pull the sides of the pita up to meet in the center, like a taco. Serve like a taco, or wrap and secure with a wide strip of parchment. Messy and great!

2 pounds boneless skinless chicken thighs
1 pound bacon ends and pieces
2 tablespoons kosher salt
1 tablespoon plus 1 teaspoon freshly ground black pepper
1 tablespoon dried basil leaves
1 tablespoon ground oregano
1 tablespoon dried oregano leaves
1 tablespoon dried thyme leaves
2/3 cup powdered milk
1/3 cup Kolsch beer
1/3 cup feta
3 tablespoons kalamata olive brine
2 ounces chopped baby spinach
Serving suggestions: Greek pita bread, shredded lettuce, red onion, chopped tomatoes, feta crumbles and Tzatziki Sauce, recipe follows
One 16-ounce container whole milk Greek yogurt
Zest of 1/2 lemon plus 2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon chopped fresh mint
2 teaspoons dry dill
2 cloves garlic, crushed
1/2 grated English cucumber
Salt and freshly ground black pepper

Steps:

  • Coarsely grind chicken and bacon through a meat grinder, then add salt, black pepper, basil, ground oregano, dried oregano and thyme to meat mixture. Put the meat mixture through the grinder a second time.
  • Fold in powdered milk, beer, feta, olive brine and baby spinach by hand. Stuff into synthetic casings to make 10 sausages.
  • Preheat the oven to 300 degrees F.
  • Roast sausages until internal temperature reaches 165 degrees F, about 12 minutes.
  • Serve on Greek pita bread with shredded lettuce, red onion, chopped tomatoes, feta crumbles and Tzatziki Sauce.
  • Stir together yogurt, lemon zest and juice, oil, mint, dill, garlic, cucumber and some salt and pepper in a medium bowl, then place in refrigerator for 8 hours or up to overnight.
