1 cucumber, peeled and coarsely shredded
1/2 teaspoon salt
1/2 cup sour cream
3/4 cup plain yogurt
2 tablespoons white vinegar
1 garlic clove, minced
1/2 teaspoon dill weed
1/4 teaspoon cracked black pepper
SALAD:
1/2 pound ground lamb or ground beef
1 small onion, chopped
1 teaspoon Greek seasoning or oregano leaves
1 package (10 ounces) hearts of romaine salad mix
2 tomatoes, chopped
1 package (4 ounces) crumbled feta cheese
1/2 cup pitted Greek olives, drained
Toasted pita bread wedges

Steps:

  • In a large bowl, sprinkle cucumber with salt; mix well. Let stand 5 minutes. Drain. Stir in remaining dressing ingredients. Cover and refrigerate., In a large skillet over medium-high heat, cook lamb, onion and Greek seasoning until meat is no longer pink; drain., Arrange salad mix on a large serving platter; top with tomatoes, cheese, olives and lamb. Spoon dressing over salad. Serve immediately with toasted pita wedges.

1 pound flank steak
⅓ cup olive oil
3 teaspoons minced garlic
2 teaspoons dried oregano (or 1 tablespoon finely chopped fresh oregano)
1 teaspoon salt
¼ teaspoon black pepper
juice of ½ lemon (plus additional wedges for squeezing)
4 white or wheat pitas
½ red onion (thinly sliced)
1 tomato (thinly sliced)
romaine lettuce
1 medium cucumber + ½ teaspoon salt (peeled and sliced )
2 cups cold plain Greek yogurt
4 teaspoons minced garlic
⅓ cup chopped dill (fresh or frozen, (may sub 2 tablespoons dried dill))
1 ½ tablespoons freshly squeezed lemon juice
½ teaspoon salt (or to taste)
⅛ teaspoon black pepper (or to taste)

Steps:

  • Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
  • Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
  • Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
  • Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
  • Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.
  • Assemble gyros with lettuce, sliced onions and cucumbers, and steak. Drizzle with tzatziki sauce, top with black pepper and fresh squeezed lemon and serve immediately.

I whipped this up the other night after a fierce craving for a gyro struck me and I was finding a lot of recipes that weren't quite what I was looking for. I wanted a creamier version of tzatziki. I put it on a tortilla with shredded chicken, cheddar, green leaf lettuce and lots of tomatoes and feta. It was sooo good I was eating it by the spoonful! You can play around with adding a little more mayo or sour cream, as my measurements may not have been exact.

Now I just need to figure out gyros so that I can have it on that. Cooking time is for the chilling it is not necessary but I like mine served cold.

1/2 medium cucumber, peeled, seeded, and diced
1 garlic clove
2 tablespoons olive oil
1 cup plain yogurt (preferably goat's or sheep's milk)
1/2 teaspoon salt, divided

Steps:

  • Toss cucumber with 1/4 teaspoon each of salt and pepper in a colander and drain 15 minutes.

This homemade tzatziki I perfect for serving as an appetizer, dip, side, and sauce (the perfect gyro sauce!) and is a healthy, gluten-free, low-carb option. I've also included a vegan tzatziki sauce method too!

1 English cucumber (or other small-seed/seedless varieties)
3 cups Greek yogurt (or plain yogurt, drained (check FAQs), or labneh.)
1 cup dill (chopped)
4 garlic cloves
2 Tbsp olive oil
1 Tbsp white vinegar (or apple cider vinegar or lemon juice (not authentic))
1 tsp salt
dried mint

Steps:

  • Grate the cucumber and optionally sprinkle with salt (this will help extract the excess liquid). Set aside for 10 minutes.I say that the salt is optional because the cucumber juice that you squeeze from the cucumber is delightful as a drink - but maybe not so much if it's salty!
  • Place the rested cucumber into a nut milk back or several layers of cheesecloth and squeeze out as much excess water as possible.Alternatively, you can salt the cucumbers and leave them in a colander to naturally drain with the help of gravity (this will provide the best texture of the cucumber). However, this will take a far longer resting time (like overnight!), so I usually avoid it.
  • Finely chop the dill and grate or mince the garlic. If you need help peeling garlic, I've tried and tested several methods previously.
  • Combine all the ingredients in a large bowl and mix well.
  • For the best flavor, allow the Greek sauce to marinate in the fridge for at least 2 hours but even better overnight. This will give the flavors a chance to properly meld together and tastes better than directly after making it.
  • Before serving, give it one last taste and adjust any of the ingredients if needed (more salt, acidity, etc. Then drizzle with a bit of additional olive oil, and enjoy!
  • Store: If you've carefully drained the cucumber, then leftover tzatziki sauce will last, covered, in the refrigerator for between 3-4 days.

This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. 3 cups Greek yogurt (also called Yogurt Cheese, see below for alternative)
3 tablespoons lemon juice (or juice of one lemon)
1 garlic clove, minced
1 large English cucumber, diced (the long, skinny ones)
1 tablespoon salt (for salting cucumbers)
1 tablespoon fresh dill (or both, depending on preference) or 1 tablespoon of fresh mint, chopped (or both, depending on preference)
salt & freshly ground black pepper

Steps:

  • Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
  • In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
  • This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
  • ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
  • You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

1 medium onion, finely chopped or shredded
2 pounds ground lamb
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Steps:

  • Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  • Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
  • To cook in the oven as a meatloaf, proceed as follows:
  • Preheat the oven to 325 degrees F.
  • Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.
  • To cook on a rotisserie, proceed as follows:
  • Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
  • Preheat the grill to high.
  • Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings. Cook on high for 15 minutes. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.
  • Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.

1/3 cup chopped flat-leaf parsley
1/4 cup chopped mint

Steps:

  • Preheat broiler.
  • Peel and grate 1 cucumber, then squeeze it with your hands to remove excess water. Stir together with yogurt, 1/2 teaspoon lemon juice, one third of garlic, and 1/4 teaspoon each of salt and pepper to make tsatsiki.
  • Cut remaining cucumber into 1/4-inch pieces and stir together with tomatoes, onion, parsley, mint, remaining 1/2 teaspoon lemon juice, and 1/4 teaspoon each of salt and pepper to make salsa.

Tzatziki is a creamy and refreshing Greek cucumber yogurt sauce, made with a few ingredients and a super delicious condiment for just about anything. Here's how you can whip up this easy Greek sauce right at home!

1 English cucumber, (about 1 lb)
1 cup Greek yogurt, (10 oz/285 grams)
2 tbsp extra virgin olive oil, (plus more to drizzle while serving)
2 tbsp chopped fresh dill
1 garlic clove, (grated)
1 tbsp white wine vinegar, (substitute with lemon juice)
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper

Steps:

  • Peel the cucumber and chop it roughly into two parts. If you use a regular cucumber, cut it lengthwise into half and scoop out the seeds. I left the seeds since I used an English cucumber. Grate each part using a box grater. Place the shredded cucumber in a fine-mesh sieve lined with cheesecloth, sprinkle 1/4 tsp salt and leave it aside for 10-15 minutes.
  • Meanwhile, add the Greek yogurt in a mixing bowl, also add olive oil, minced garlic, vinegar or lemon juice, salt, and pepper. Give everything a good mix using a whisk or spoon. Refrigerate if required while the cucumber shreds are draining.
  • After 15 minutes, bring the edges of the cheesecloth together and squeeze out as much of the water as possible out of the cucumber. Will yield about 7.5 oz approx or 1 cup packed shredded, drained cucumber.
  • Transfer the drained, shredded cucumber to the yogurt mixture. Also, add the chopped dill, and mix everything well once again. Taste and adjust with more salt if required.
  • Serve immediately or cover the bowl with a cling wrap, and refrigerate for 1 hour for flavors to mingle. Transfer the tzatziki to a serving bowl, drizzle some more extra virgin olive oil, garnish with dill leaves. Serve with pita bread or pita chips or carrot sticks, sliced bell peppers. You may refrigerate tzatziki for up to 2 days. If it is stored longer, it might turn watery and lose the thick texture. Remember to cover the bowl while storing in the refrigerator.
