9 to 12-ounces all-purpose potatoes, per person
Approximately 1/3 cup warm milk or cream
Approximately 1/4 cup unsalted butter
Salt and freshly ground pepper, preferably white
Freshly grated nutmeg

Steps:

  • Boil the halved or chunked (but unpeeled) potatoes in a large pan of lightly salted water. When they are soft enough to mash, drain them thoroughly then push the potato pieces through a ricer.
  • With a wooden spoon, beat in the warm milk or cream and butter and season with salt, pepper and some freshly grated nutmeg, to taste. Eat alone and straight from the bowl for quintessential comfort food.

SOFRITO MASHED POTATOES

2 tablespoons salt
2 pounds potatoes (recommended: Yukon gold)
3 tablespoons canola oil
1/4 cup chopped red onions
1 red bell pepper, chopped
1/2 green pepper, chopped
3 tablespoons chopped garlic
2 tablespoons tomato paste
1/4 cup white wine
3 ounces tomato sauce
3 tablespoons unsalted butter
1/2 cup heavy cream
3 tablespoons salt
Salt and pepper
2 tablespoons chopped cilantro leaves

Steps:

  • Fill a large pot with water, salt and potatoes and bring to boil. Cook until fork tender.
  • Meanwhile, heat oil in a medium sauce pot over medium heat. When oil is hot add onions and peppers and saute for 3 minutes. Add the garlic and cook until it begins to brown. Lower the heat and add tomato paste and stir for 3 to 5 minutes. Deglaze with white wine and reduce by half.
  • Add tomato sauce and bring to simmer for 5 minutes. Then stir in butter and cream and set aside, covered to keep warm.
  • When potatoes are fork tender, drain water and mash slowly adding the sofrito mixture. Season with salt and pepper and garnish with cilantro.

ADAMS' APPLE MASHED POTATOES

3 1/2 pounds baby Yukon gold potatoes, halved
Kosher salt
8 to 10 garlic cloves
Freshly cracked black pepper
1 tablespoon olive oil
1 1/2 cups half-and-half
3 tablespoons butter
2 Granny Smith apples, cored and diced

Steps:

  • Preheat oven to 350 degrees F.
  • Put the potatoes in a large pot and cover by 1-inch with cold water. Bring the water to a boil over high heat, add salt, to taste, and cook until the potatoes are tender, about 20 minutes.
  • Meanwhile, create a boat shape out of aluminum foil and add the garlic cloves. Season with salt and pepper, to taste, and drizzle with oil. Seal the foil and roast until the garlic is nicely caramelized, about 30 minutes. Heat the half-and-half in a small saucepan over low heat until hot.
  • Drain the potatoes and put them back into the pot. The heat from the pot will continue to dry out the potatoes. Add the half-and-half, butter and roasted garlic and mash. Fold in the apples and season, to taste, with salt and pepper. Transfer to a serving bowl and serve.

1 pound bacon strips, chopped
1 large onion, chopped
1/2 cup chopped sweet red pepper
2 pounds potatoes (about 3 large), peeled and cut into 1-inch cubes
1 tube (13.8 ounces) refrigerated pizza crust
1/4 cup 2% milk
1/4 teaspoon salt
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded part-skim mozzarella cheese
Optional: Minced fresh chives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Add onion and pepper; cook and stir until bacon is crisp. Drain well., Place potatoes and water to cover in a large saucepan; bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Meanwhile, unroll and press pizza crust onto an ungreased 14-in. pizza pan; prick several times with a fork. Bake until lightly browned, about 15 minutes. Increase oven setting to 375°., Drain potatoes; return to pan. Mash potatoes, gradually adding milk and salt. Spread over crust. Top with bacon mixture and cheeses. , Bake until cheese is melted, 15-20 minutes. If desired, sprinkle with chives and serve with sour cream.

Guy-Pleasing Mashed Potatoes image

Titled this because my boyfriend ADORES mashed potatoes, especially these. This should actually be called 'Christopher's Potatoes'. Anyways, the recipe here is the simple plain way with added herb flavoring, if you like you can make different variations such as cheese by adding 2 tbsp grated Parmesan and 1 cup grated cheddar to the end result instead of herbs. Mix and match to your, or your fella's, own tastes :)

2 lbs russet potatoes, peeled (about 6 cups)
1/4 cup fat-free margarine, cut into pats
1 -1 1/2 teaspoon salt, divided
1/4 teaspoon pepper
1/2 cup skim milk, hot
3 tablespoons parsley, chopped
2 tablespoons scallions, chopped
1 tablespoon thyme, chopped

Steps:

  • Cut potatoes into uniform pieces and place in a large pot filled with enough water to cover. Bring to a boil and reduce heat and simmer about 10 minutes.
  • Drain and return to pot.
  • Add butter, 1 tsp salt and pepper to pot. Mash the mix with a potato masher. Add more salt and pepper as desired.
  • Add milk, a little at a time while mashing potatoes until smooth.
  • In another bowl combine the parsley, scallions, and thyme.
  • Mix into potatoes and serve immediately.
