Homemade Gumdrops image

It's super easy to make your own sweet and chewy gumdrops. Experiment with flavors to create tastes that are uniquely yours.

3 envelopes unflavored gelatin
1/2 cup cold water
3/4 cup water
2 cups sugar
Food color
Flavored extract
Additional sugar

Steps:

  • Lightly spray candy molds or miniature muffin cups with cooking spray.
  • In large bowl, sprinkle gelatin on 1/2 cup cold water; set aside.
  • In small saucepan, heat 3/4 cup water and 2 cups sugar to boiling over high heat. Reduce heat; simmer uncovered 5 minutes until sugar is dissolved and mixture thickens slightly. Remove from heat; carefully add to gelatin mixture, stirring until gelatin is dissolved.
  • Divide mixture into 4 small bowls (or more, depending on how many colors/flavors you want). Tint each bowl with 4 to 5 drops food color, then stir in 1/2 teaspoon extract. Carefully spoon mixture into molds. Refrigerate 8 hours or overnight until set.
  • Carefully remove gumdrops from molds, using a butter knife as needed to coax gumdrops from molds. Roll gumdrops in sugar; place on waxed paper. Let stand at room temperature 24 hours to crystallize slightly. Store tightly covered at room temperature.

Two 1/4-ounce envelopes unflavored gelatin
3/4 cup granulated sugar, plus more for coating
One 3-ounce package cherry-flavored gelatin
Granulated red sugar, for coating
Coarse white sugar, for coating

Steps:

  • Sprinkle the unflavored gelatin over 1/2 cup water to soften; set aside.
  • Put the granulated sugar and 1/2 cup water in a saucepan and bring to a boil, stirring to dissolve the sugar. Simmer for 5 minutes. Add the cherry-flavored gelatin to the pan, followed by the softened unflavored gelatin. Stir and remove from the heat. Continue stirring until the gelatins are dissolved, 1 to 2 minutes. Strain into a measuring cup and let cool for 5 minutes; it will be warm but not yet set. Pour the liquid into the molds. Refrigerate for at least 4 hours or overnight.
  • Remove the gumdrops from the molds and place onto wax paper. Coat some in granulated red sugar, some in granulated white sugar and some in coarse white sugar; return to the wax paper. Store in a cool dry place until ready to eat.

TURTLE CUPCAKES

6 small green gumdrops (for the tails)
12 vanilla cupcakes
2 1/4 cups vanilla buttercream
3/4 cup green sanding sugar
12 green jelly beans (for the heads)
Black or brown food coloring gel
12 green gumdrop fruit slices, halved horizontally and vertically (for the flippers)
84 green candy-coated chocolates, such as M&M's (for the shell)
84 brown candy-coated chocolates, such as M&M's (for the shell)

Steps:

  • For the tails: Place the small green gumdrops on the work surface standing upright. Cut each gumdrop in half by cutting straight down with a sharp knife.
  • To assemble: Frost each cupcake with about 2 tablespoons buttercream. Place the green sanding sugar in a small bowl. Invert each cupcake into the sugar and press gently to adhere.
  • Stick a green jelly bean straight into the frosting for the head. Using a #2 round piping tip, pipe on 2 buttercream eyes. Then dip a toothpick into the black or brown food coloring gel and create the pupils for the eyes. Push the flippers into the edges of the cupcake frosting. Attach a half gumdrop tail between the back legs. Pipe a little frosting onto 7 green and 7 brown candies before gently pressing them into the frosting on the "back" of each turtle to make the shell. Repeat steps for all cupcakes.

1 cup butter
2 cups white sugar
3 eggs
1 cup warm water (110 degrees F/45 degrees C)
3 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 ½ teaspoons salt
1 teaspoon lemon extract
1 teaspoon vanilla extract
1 cup gumdrops, chopped
1 cup raisins
¼ cup all-purpose flour for coating

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Grease and flour 10 inch tube pan. Set aside.
  • In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  • In a separate bowl, sift dry ingredients together and fold into creamed mixture alternately with water. Coat raisins and gumdrops with flour. Stir flavorings, gumdrops and raisins into creamed mixture.
  • Mix well and pour into prepared pan. Bake for 1 1/2 hours.

Steps:

  • Fill a pastry bag fitted with a star tip with buttercream. Pipe 6 starbursts around perimeter of cupcake, then pipe a starburst in the center. Place a gumdrop in the center of each starburst. Repeat with remaining cupcakes, buttercream, and gumdrops.

Number Of Ingredients 11

1 cup butter, softened
1 2/3 cups granulated sugar
3 eggs, room temperature
1¼ tsp vanilla
1 tsp almond flavouring
1 tsp lemon flavouring
3 cups flour (reserve 1/4 cup for dredging cut gumdrops)
2½ tsp baking powder
½ tsp salt
1 cup milk, room temperature
1 lb gumdrops, cut into 3-5 pieces each

Steps:

  • Place oven rack in center of oven and preheat oven to 300°F. Grease large funnel pan and line bottom with parchment paper.
  • In medium-sized bowl, dredge the cut gumdrops with 1/4 cup of the flour, making sure that the cut edges of each gumdrop are well floured. Set aside. In separate bowl, sift together the remaining flour, baking powder and salt. Set aside.
  • In bowl of stand mixer, cream the butter. Gradually add the sugar, beating until well incorporated. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla along with the almond and lemon flavourings. Add the dry and wet ingredients in three parts (3 parts dry and 2 parts wet) starting and ending with the dry ingredients. After all ingredients have been added, beat batter on medium speed for 1 minute.
  • Remove bowl from stand mixer and, by hand, gently fold in the floured gumdrops just until incorporated and no dry flour remains visible. Do not overmix.
  • Transfer batter to prepared pan and, with knife, smooth batter out even. Bake for approximately 2¼ hours or until cake tester inserted near funnel center of pan comes out clean. Remove cake from oven and let cool in pan for 20-30 minutes then turn cake out onto wire rack to cool completely. Cake will slice better a day or two after baking.

1/2 cup vegetable oil (or you may substitute canola oil)

1 teaspoon vanilla
3/4 cup milk
2/3 cup chopped gumdrop (omit black if you like)
1 (450 g) container vanilla frosting, for frosting (or your own homemade)

Steps:

  • Preheat oven to 350 degrees F and line a muffin pan with paper muffin liners.
  • Mix together flour, baking powder and salt.
  • In large bowl, whisk sugar, oil, eggs and vanilla together to blend; stir in gumdrops.
  • Scoop batter into the prepared muffin pan.
  • Bake on center rack in preheated oven for 20 to 25 minutes or until golden and top springs back when lightly touched.
  • Cool in pan 10 minutes then move to a rack to let cool completely.
  • Spread icing over cooled cupcakes then decorate with your favourite candies.

1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, oil and eggs called for on cake mix box
1 container Betty Crocker™ Rich & Creamy vanilla frosting
45 sugar-coated gum drops in assorted colors
1 miniature marshmallow

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of 2 (8-inch) round cake pans with shortening or cooking spray.
  • Make and bake cake mix as directed on box for 8-inch rounds. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour. For easier handling, refrigerate or freeze cakes 30 minutes to 1 hour or until firm.
  • On serving plate, place 1 cake layer, rounded side down. Spread with 1/2 cup of the frosting. Top with second cake layer, rounded side up. Frost top and sides of cake with remaining frosting.
  • On sugared surface, use rolling pin to roll gumdrops into oval shapes.
  • Place 23 gumdrop ovals around the edge of the top of the cake, overlapping slightly. Create a second circle inside the first circle using 15 gumdrops. Repeat once more in the center of the cake with the remaining 7 gumdrops. Place a miniature marshmallow in the center of the cake to form the center of the flower.
