Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Stir in the coconut, rolled oats, pecans and gumdrops. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheets. Gently flatten cookies using a fork dipped in flour.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

OATMEAL GUMDROP COOKIES
Steps:
- Combine sugar, butter and brown sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Add flour, oats, baking soda and salt; beat at low speed until well mixed.
- Stir in gumdrops. Shape dough into 9x1 1/2-inch roll. Wrap in waxed paper; refrigerate at least 2 hours or until firm.
- Heat oven to 350°F.
- Cut roll, using serrated knife, into 3/8-inch slices. Place 1 inch apart onto lightly greased cookie sheets. Bake 10-12 minutes or until lightly browned and set. Immediately remove from cookie sheets. Cool completely.

- Using a hand-held mixer, beat the butter until light and fluffy.
- Add the condensed milk and beat into the butter until well combined.
- Add the flour and baking powder. Mix into the butter mixture until well incorporated.
- Cover bowl with plastic wrap and refrigerate for 30 minutes.
- In the meantime, preheat oven to 325 degrees. Prepare a baking sheet by lining it with parchment paper. Set aside. Lastly, pour the sanding sugar into a shallow bowl for rolling the cookie dough into.
- Remove the cookie dough from the fridge and using a small cookie scoop, portion out 1 teaspoon of the cookie dough. Roll it into a smooth ball and then roll it into the sanding sugar.
- Place the cookie balls on the baking sheet, leaving 2 inches of space between each one. Push a gumdrop into the top of each ball - at least half way down.
- Bake for 12 minutes. Remove from oven and allow to cool for 2-3 minutes before transferring to a wire cooling rack to finish cooling.

- Preheat oven to 350° F. Very, very lightly spray two baking sheets with non-stick spray and set aside.
- In a small bowl, toss 1/2 cup of the flour with 1 cup of the chopped gumdrops to evenly coat. Break apart any pieces that want to stick together to coat fully with flour. Set aside.
- In the bowl of a stand mixer, cream butter on medium high speed for 2 minutes. Add brown sugar and sugar, and beat to combine.
- In a medium bowl, sift together remaining 1-1/2 cups of flour, baking soda, baking powder, and salt. With mixer on low, alternate adding flour mixture and beaten eggs in two separate additions each. Beat just until incorporated each time. Add coconut, oats, and vanilla, and mix until incorporated. With a spatula, fold in the gumdrop pieces that have been coated with flour.
- With a medium scoop (mine is 1-5/8″ in diameter), packed tightly with cookie dough, drop dough onto a prepared pan leaving 2" between each one. Or portion out about 2 tablespoons of dough and roll slightly to form a ball. Press in 2 to 4 more of the reserved gumdrop pieces into each dough ball, using more if desired. Bake for 11 to 12 minutes, or until edges are set and lightly golden brown. Do not over bake.
- Remove from oven and let cookies rest on pan for 2 minutes before transferring them to a wire rack to cool completely. These cookies freeze very well.

- Preheat oven to 350°F. Line two large cookie sheets with parchment paper. Set aside. In small bowl, toss the gumdrops with 2 tablespoons of the powdered sugar, ensuring all cut sides of the gumdrops have been coated.
- In bowl of stand mixer fitted with paddle attachment, cream butter until light and fluffy. Gradually blend in the granulated and powdered sugars. Beat in the eggs, one at a time, followed by the vanilla and almond flavoring.
