1/4 cup Guinness stout
2 teaspoons dry mustard
1/2 teaspoon ground ginger
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons unsalted butter
1/4 cup minced scallion
4 hamburger buns with sesame seeds

Steps:

  • In a bowl, gently mix the beef, beer, mustard, ginger, garlic, salt, and pepper together.
  • Form mixture into 4 patties, each ¾ inch thick.
  • Melt the butter in a large skillet over med-high heat; cook the burgers 3-5 minutes per side for medium or until desired doneness.
  • Remove patties from skillet; add in the scallions; cook 1-2 minutes, stirring, until just wilted.
  • Serve patties on toasted sesame seed buns with some pan sauce on top.

1 1/4 lbs ground beef
1 dash pepper
1/2 teaspoon Tabasco sauce
1 clove garlic, crushed
1/4 cup chili sauce
1/2 ounce package Knorr french onion soup mix
1/2 cup Guinness stout (or other stout)
4 hamburger buns

Steps:

  • Preheat oven to 400F degrees.
  • Combine meat, pepper, Tabasco sauce, garlic, chili sauce, dry onion soup mix, and 1½ ozs Guinness.
  • Shape into 4 patties.
  • Bake at 400F until brown, about 10 minutes.
  • Baste with the remaining Guinness.
  • Continue baking for an additional 10-15 minutes, until well done.
  • Add your favourite burger garnishes and trimmings.

6 heaping tablespoons creamy peanut butter
2 pounds ground beef sirloin
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
6 soft hamburger buns, split
Lettuce, sliced tomato and mayonnaise, for topping

Steps:

  • Warm the peanut butter in a saucepan over medium-low heat, stirring, until loose, about 2 minutes. Reduce the heat to low; keep warm.
  • Divide the meat into 6 loose balls, then gently flatten into thin patties. Heat a large cast-iron skillet over high heat. Add the patties to the hot skillet, smash them flat with a spatula and season with salt and pepper. Cook, flipping once, until the burgers are well done, 4 to 5 minutes per side.
  • Meanwhile, melt the butter in another skillet over high heat. Place the buns cut-side down in the hot skillet, press them down slightly with another skillet and toast until golden, about 2 minutes. Put the burgers on the bottom buns and spread each with 1 heaping tablespoon warm peanut butter. Top with lettuce and tomato. Spread mayonnaise on the cut side of each top bun, then put on top of the burgers.

1kg minced beef
300g breadcrumbs
140g extra-mature or mature cheddar , grated
4 tbsp Worcestershire sauce
1 small bunch parsley , finely chopped
2 eggs , beaten
split burger buns
sliced tomatoes
red onion slices
lettuce , tomato sauce, coleslaw, wedges or fries

Steps:

  • Crumble the mince in a large bowl, then tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and 1-2 tsp salt. Mix with your hands to combine everything thoroughly.
  • Shape the mix into 12 burgers. Chill until ready to cook for up to 24 hrs. Or freeze for up to 3 months. Just stack between squares of baking parchment to stop the burgers sticking together, then wrap well. Defrost overnight in the fridge before cooking.
  • To cook the burgers, heat grill to high. Grill burgers for 6-8 mins on each side until cooked through. Meanwhile, warm as many buns as you need in a foil-covered tray below the grilling burgers. Let everyone assemble their own, served with their favourite accompaniments.

1 teaspoon canola oil
1 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
4 hamburger buns, split
Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard

Steps:

  • Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute.
