1 1/2 lb ground free-range beef
1/2 cup sweet onion, diced
1/2 cup baby carrots, diced
1-2 tsp garlic, minced/pressed
1/4 cup Guinness draught stout
1/4 cup cabernet wine
7 ounces beef broth
1 tsp Worcestershire sauce
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried sage
1/4 tsp dried marjoram
1 cup fresh peas
2 tbsp butter
2 tbsp flour
1/2 tsp salt
1/4 tsp pepper
Ulster Champ Topping

Steps:

  • Brown beef in a dutch oven or other large heavy saucepot over low to moderate heat. Allow to simmer until cooked throughout, about 5-10 minutes. Drain excess fat when cooked and add onion, carrots, garlic, stout, wine, broth, Worcestershire sauce, basil, oregano, sage and marjoram.l Stir and bring to a simmer over low heat. Cook 15 minutes or until carrots are fork tender. add peas. Meanwhile, in a small saucepan, melt butter and stir in flour to make a roux. Slowly incorporate roux into simmering beef mixture until desired thickness is achieved. (if mixture was simmered too long or cooked too high, less roux is needed.) Continue to cook for 5-10 minutes to allow roux and flavors to meld. Season with salt and pepper. Remove to a 9 1/2in. round casserole dish or deep pie dish. While meat is simmering, preheat over to 350 degrees and prepare Ulster Champ Topping. Spoon Ulster Champ topping evenly over meat mixture, making irregular peaks with the back of a spoon. Alternatively, use a pastry bag and star tip to pipe potatoes over meat mixture. Bake for 20-30 mins or until topping is golden brown and crusty on edges and mixture is heated throughout. If desired, place casserole under broiler for 1-2 mins to crisp topping, remove from oven, allow to cool slightly to set, and serve immediately from casserole dish. Serve with HP sauce, steak sauce or pan gravy, if desired. NOTE: Pie can be cooked and served in individual baking dishes. Adjust final baking time as needed.

3 tablespoons olive oil, divided
1 pound cubed beef stew meat
2 slices bacon, chopped
1 white onion, chopped
1 carrot, sliced
⅓ pound crimini mushrooms, sliced
1 clove garlic, crushed
1 teaspoon white sugar
1 ½ tablespoons all-purpose flour
1 cup Irish stout beer (such as Guinness®)
1 ¼ cups beef stock
½ teaspoon ground thyme
2 bay leaves
½ teaspoon cornstarch, or as needed
1 teaspoon water
1 sheet frozen puff pastry, thawed
1 egg, beaten

Steps:

  • Heat 2 tablespoons of olive oil in a large pot over medium heat, and brown the beef stew meat on all sides, about 10 minutes; set aside. Heat the remaining 1 tablespoon of olive oil, and cook the bacon just until it begins to brown; stir in the onion, carrot, mushrooms, garlic, and sugar. Cook the vegetables until soft and browned, 10 to 15 more minutes.
  • Stir in the flour until smoothly incorporated, and gradually mix in the Irish stout beer and beef stock. Mix in the thyme, bay leaves, and the reserved cooked beef. Cover, and bring the mixture to a boil; reduce heat to a simmer until the meat is tender, about 1 hour and 15 minutes; stir occasionally. Remove the cover, turn the heat up to medium, and let the stew boil until slightly thickened, about 15 more minutes. Mix cornstarch with water, and stir into the stew; let simmer for 30 more minutes to blend flavors. Remove from heat; discard bay leaves.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the filling into a 9-inch pie dish; trim the puff pastry into a 10-inch circle, and place on top of the filling. Pinch and crimp the edges of the pastry with a fork, sealing it to the dish; cut 2 steam vents into the pastry with a sharp knife. Brush the top of the pie with beaten egg.
  • Bake in the preheated oven until the crust is browned, 30 to 40 minutes.

Beef in dark, silky gravy composed of fat and reduced stout, flecked with tender vegetables, covered in pastry: This is a dish that delivers good cheer and contentment in equal measure. We built it out of advice and instruction from the British chefs Jamie Oliver (the stew) and Fergus Henderson (the pastry). Eating it - salty and rich, buttoned with sweetness - will occasion thoughts of a coming walk or a nap on the couch with the dog. You'll want some red wine to drink. It's awesome.

4 tablespoons butter
2 large red onions, chopped
4 cloves garlic, minced
2 carrots, peeled and chopped
2 ribs celery, chopped
10 mushrooms, trimmed and sliced
3 pounds brisket (preferably second-cut) or stew meat, chopped into bite-size pieces
Kosher salt
Freshly ground black pepper
2 tablespoons flour
1 sprig rosemary
About 4 cups (2 cans) Guinness or other stout
1 cup trotter gear (recipe here) or 8 ounces freshly grated Cheddar
1 1/2 cups all-purpose flour
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1/2 cup (1 stick) very cold unsalted butter, diced
1 egg yolk, lightly beaten

Steps:

  • Preheat the oven to 375 degrees.
  • In a large, ovenproof pan fitted with a lid, heat 2 tablespoons of the butter over medium-low heat. Add the onions and garlic and cook, stirring frequently, until soft, about 10 minutes.
  • Add the carrots, celery, mushrooms and remaining 2 tablespoons butter and cook over medium heat, stirring frequently, until the mushrooms are dark in color and the moisture released by them has evaporated, about 15 minutes.
  • Season the beef pieces all over with salt and pepper. Add the beef, flour and rosemary to the pan and cook over high heat, stirring often, for about 5 minutes.
  • Add enough Guinness to just cover the beef. Cover the pan and put it in the oven for 1 1/2 hours. Remove from the oven and stir. If using trotter gear, stir it in now. Return to the oven and cook for 1 hour more. If it remains thin, set the pan over medium-low heat, remove the lid and reduce the liquid. Season to taste with salt and pepper. If using Cheddar, fold in about half.
  • While the stew is cooking, prepare the pastry: sift together the flour, baking powder and salt into a bowl. Using a pastry cutter or your hands, quickly work the butter into the dough until it is the texture of coarse meal. Add ice water, a splash at a time, until a firm dough forms. Wrap the dough in plastic and refrigerate for at least 2 hours.
  • Place the dough between two sheets of plastic wrap and, using a rolling pin, roll to the thickness of a computer mouse pad. Pour the stew into an 8-inch-square, 2-inch-high Pyrex dish or a deep 9-inch pie pan. If using Cheddar, scatter the remaining cheese across the top. Place the dough on top of the pie and pinch it closed around the edges using the tines of a fork, then slash the center lightly with a knife. Brush with the egg yolk, place on a baking sheet and bake for 45 minutes, or until the pastry is puffy and golden.

1 recipe for my french dip roast beef-approx 2.5 lbs.
3/4 cup frozen peas, thawed
1/2 cup frozen corn
3/4 cup frozen carrots
1 cup prepared gravy
1 pound mashed potatoes
1/2 cup frozen chopped onions

ingredients needed for roast beef:
2.5 pound roast beef, one bottle guinness beer, one can french onion soup and one can beef broth.

ingredients needed for mashed potatoes:
enough mashed potatoes to feed 6 people, 1/2 cup green onions, 1/2 cup cheddar cheese, 1/2 cup sour cream, 1/4 cup butter, salt and pepper.

Steps:

  • 1. Cook's note: You can make the roast beef and the mashed potatoes ahead and refrigerate. Be sure to warm up the meat and potatoes before making the recipe as it will affect the cooking time.
  • 2. MAKE AHEAD: Use this recipe for roast beef. (It is my posted recipe for French Dip Sandwiches, and it is perfectly seasoned for this recipe) Place in a crockpot the following 4 ingredients. One 2.5 pound chuck roast, fat trimmed. One can Campbell's French Onion Soup. One can of beef broth, and one bottle of Guinness beer. Cook in slow cooker until tender but not falling apart. Let it cool, then cut meat into a 1/2 inch dice.
  • 3. BOIL POTATOES: Make mashed potatoes, season with 1/2 cup sliced green onions, 1/2 cup cheddar cheese, 1/4 cup butter, 1/2 cup sour cream and season with salt and pepper. Add a splash of milk if it needs more liquid when you are mashing them. I use an electric mixer to mash the potatoes.
  • 4. PRECOOK VEGETABLES: Precook the frozen carrots, corn and onions until partially done and drain well. In a large mixing bowl, add the diced meat, all the vegetables, one cup of gravy and mix gently. Pour meat mixture into a 9X13 dish, or if you are making a smaller amount use a 10 inch pie plate. Top with the seasoned mashed potatoes. Using the tines of a large fork, make the design on top like my photo. Place the baking dish on a cookie sheet with a lip, and bake in the oven at 375 degrees for 45 to 50 minutes. Remove from oven and let set at least 5 minutes before serving. Enjoy!

1/4 cup all-purpose flour
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
4 tablespoons vegetable oil, plus more, as needed
1 cup beef stock
1 large onion, peeled and chopped
3 garlic cloves, peeled and minced
4 ounces button mushrooms, stems removed and halved
1 cup carrots, chopped
2 tablespoons tomato paste
1 (12-ounce) bottle Guinness, no foam
2 tablespoons Worcestershire sauce
3 fresh thyme sprigs, tied with string
1 recipe mashed potatoes
1 cup shredded aged cheddar, plus more for the top
1/4 teaspoon garlic powder
1 cup frozen peas, thawed
1 tablespoon cornstarch mixed with 2 tablespoons cold water

Steps:

  • Position the oven rack in the middle and preheat the oven to 350°F. Pat the beef dry. In a large bowl, whisk together the flour, salt and pepper. Add the beef and toss well to lightly coat all the pieces. In a Dutch oven or large, ovenproof heavy pot, heat the oil over medium-high. You want it hot, but not smoking. Working in three batches (so the meat will brown, not steam), sear the meat, stirring occasionally until well-browned, about 5 minutes per batch; add the extra tablespoon of oil between batches, as needed (I used two extra tablespoons total). Transfer the browned meat to a bowl with a slotted spoon. To the pot add ½ of the beef stock, onions, garlic, mushrooms and carrots. Season with a little more salt and pepper and stir, scraping up any browned bits on the bottom of the pan. Cook for about 5 minutes; add the tomato paste, remaining stock, Guinness, Worcestershire and thyme. Add the beef, along with any juices in the bowl. Bring to a rapid simmer, cover and transfer to the oven. Braise until the beef is very tender and the sauce has reduced, about 1 1/2 hours. Meanwhile, make the mashed potatoes, if using. Stir in the cheese and garlic powder to the potatoes. Remove the pot from the oven. Fish out the thyme and discard; add in the peas. Place the pot of stew on the stove over medium heat. Add the cornstarch slurry, bring to a boil and cook until nicely thickened, about 5 minutes. Taste for seasoning and let cool slightly if using the potato topping. Turn the oven up to 400°F. Spread the stew into a casserole dish. Top with the mashed potatoes, starting around the edges to create a seal and to prevent the filling from bubbling up (some will but that's okay). Smooth with a rubber spatula and make decorative peaks, if desired. Sprinkle a little cheese on top. Place the dish on a large rimmed baking sheet and bake until the potatoes just begin to brown and the cheese melts, about 20 minutes. Let cool for 15 minutes before serving.
