Steps:
- Mix apples, nuts, sugar and cinnamon together in a bowl. Add wine and mix in to thoroughly blend. Keep in refrigerator until ready to put out on the table for Passover Seder.

EGYPTIAN CHAROSET
Charoset is used at the Passover seder. This recipe originally is found in the "Passover Cookery" cookbook. Cooking time is an estimate.

Steps:
- Over low heat, simmer dates, raisins, wine and enough water to cover.
- Stir occasionally until dates are mushy and thicken into a paste.
- Spoon into a bowl.
- Sprinkle with almonds.

Steps:
- In a large bowl combine all of the ingredients. Serve.
CLASSIC EUROPEAN HAROSET /CHAROSET FOR PASSOVER
This is how I make my charoset but I usually use Passover Heavy Malaga wine or Concord grape wine instead of the grape juice. I personally don't add any honey. It makes about 2 cups. We love this stuff!

- Chop the apples by hand into little pieces.
- Mix all ingredients.
- Store in refrigerator in a covered container for up to 3 days.
- Enjoy on matzoh.
CHAROSET
A simple recipe for this traditional Passover staple. I always make a great deal extra to munch on for days! Mixture will turn the appropriate shade of brown to look like the mortar which it represents. You can substitute sugar for the honey, if desired.

- Quarter, peel and core apples.
- Grind or chop together apples, raisins, dates and nuts. (Aunt Phyllis usually chops everything in the food processor and then further chops it in a wooden bowl).
- Add ginger, cinnamon and enough wine to make a spreadable, but not too liquid, mass.
- Let "ripen" in refrigerator serveral hours before serving.

- Place in food processor and chop coarsely.
- Add cherries, ground almonds and cinnamon. Process to coarsely chop cherries.

Got this years ago from my son's preschool. Haroset is a spread that you smear on matzoh that is usually sweet. In this recipe the haroset is rolled into small balls. I guessed the amount of servings since I haven't made this yet.
