Steps:
- Using a spoon, scoop the flesh of the avocados into a low serving bowl, discarding any bruised, browned areas.
- Using a pastry cutter, potato masher, or fork, mash up the avocado until it reaches your desired texture (I like my guacamole to have some texture, so I stop mashing once there are just small chunks remaining).
- Promptly add the onion, cilantro, jalapeño, lime juice, coriander, and salt. Stir to combine.
- Taste and add additional salt (I often add up to 1/2 teaspoon more), until the flavors really sing. If it needs more zip, add a little more lime juice (or, if it tastes too limey already, don't worry-it will mellow out after a brief rest).

GUACAMOLE - REAL AUTHENTIC MEXICAN "GUAC"
I am surprised how difficult it is to find a genuine guacamole recipe. No need for mayo or sour cream or all the other additives. This is the original, handed down generations, yet the most simple basic way to make Guacamole. I even make it better than my Mother in Law, which is a hard act to follow. :) Make this recipe and you will never go back. Hope you enjoy this like all my friends and family do.

Steps:
- Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
- Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
- Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
- Add juice of second lime and then salt to taste. Stir just slightly, until incorporated.
- Add jalapeño to taste.
- Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.
- a side note: this is to make a chunky, yet creamy guacamole. Some people prefer to use a food processor with all the ingredients to make for a VERY creamy dip.

WHAT TO EAT WITH GUACAMOLE: 13 ... - INSANELY GOOD …
From insanelygoodrecipes.com

- Toast. Think avocado toast with a tangy twist. Spread that creamy guacamole generously onto your toast, top it with smoky bacon bits, and serve it with a side of over-easy eggs.
- Veggies. Guacamole is so rich and nutty, it gives anything you dip into it so much more flavor. If you want something healthier than the usual corn or tortilla chips, why not use vegetables as your guacamole vessel instead?
- Burger. Instead of the traditional burger dressings or boring old mayonnaise, go for a healthy and umami flavor by using guacamole. It is just as rich as mayo but has a nuttier flavor and fewer calories.
- French Fries. Say goodbye to ketchup for now, because French fries and guacamole make a wonderful partnership. Picture the crisp and tender spuds dunked in a rich and creamy dip and try telling us it’s not the perfect combination.
- Pita Bread. Pita bread is usually associated with dips like hummus or tzatziki. Change up this classic combo by trying it with guacamole instead! Whether as a condiment on your pita sandwich, or as a simple dip, guacamole is sure to spice up your snack time.
- Maki. Mexican meets Japanese in this fusion of flavors! I’m sure you’ve had a sushi roll with avocado, but you can take it to the next level with some guacamole.
- Pizza Topping. A touch of creamy and buttery guacamole could be just what your pizza needs! Whatever toppings you choose – sausage and pepperoni, ham and cheese, or chicken Alfredo – they will always be a little more exciting with some fresh guacamole.
- Grilled Cheese. True, grilled cheese is already perfect on its own, what with the perfectly toasted bread and ooey-gooey melted cheese. But there are always ways to improve things.
- Pineapples. Pineapples and avocados make such a wonderful flavor combination. The sweetness and tanginess of the tropical fruit just gets better when topped with rich and savory guacamole.
- Soup. Could this spread be any more versatile? Yes it can! Guacamole can even work as a tasty soup base. Puree it to make a delicious and refreshing avocado soup or use it to garnish other soups.
