Time 30m

Yield 6

Number Of Ingredients 9

2 fresh chile de arbol peppers, or to taste
3 medium avocados - peeled, pitted, and mashed (one pit reserved)
2 tablespoons finely chopped onion
¼ cup chopped roma tomatoes
1 (14.5 ounce) can whole peeled tomatoes
1 ½ cups chopped fresh cilantro
2 pinches garlic powder, or to taste
salt to taste
1 lime, juiced

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Arrange chile peppers on a baking sheet.
  • Toast chile peppers in the preheated until browned, about 7 minutes. Remove stems.
  • Mix avocados, onion, and roma tomatoes together in a bowl.
  • Blend canned tomatoes, cilantro, toasted chile peppers, garlic powder, and salt in a blender until smooth. Pour about half the blended tomato mixture into avocado mixture. Reserve remaining tomato mixture for another use or for dipping.
  • Squeeze lime juice into avocado mixture and gently stir until evenly combined. Transfer guacamole to a smaller serving bowl; place reserved avocado pit in the middle to prevent browning.

Time 10m

Yield 4 serving(s)

Number Of Ingredients 13

1 1/2 Hass avocadoes
3/4 cup lemon juice
1/2 onion, finely chopped
1 1/2 tomatoes, finely chopped
1 bunch cilantro, finely chopped
1/4 lb Cotija cheese
1 pinch salt
1 pinch pepper
chile serrano pepper (optional)
mango (optional)
pomegranate (optional)
chicatana ants (optional)
maguey worms for guacamole (optional)

Steps:

  • Cut the avocados in half lengthwise, separate both sides and extract the bone, remove the pulp and place it in a bowl, mortar, or molcajete.
  • Add the pinch of salt and the juice of the lemons. Start crushing the avocados, either with the help of a mortar handle, the owl of the molcajete or simply with a fork, until obtaining a puree.
  • Once ready, add the onion, tomato and cilantro, and continue mixing until all the ingredients are incorporated.
  • Adjust seasoning and incorporate the optional ingredients, personally suggest choosing only one of them, so as not to combine flavors.

ALMOST-FAMOUS GUACAMOLE

Almost-Famous Guacamole image

We think we've cracked the code to Chipotle's famous guacamole. The secret--using equal parts fresh lemon and lime juice - adds just enough brightness and tang. If you're feeling fancy, go all out and add a couple tablespoons of diced tomatoes.

Provided by Food Network Kitchen

Time 15m

Yield 6 servings (about 2 cups)

Number Of Ingredients 7

3 ripe avocados
2 teaspoons fresh lemon juice
2 teaspoons fresh lime juice
Kosher salt
2 tablespoons chopped fresh cilantro
2 tablespoons finely chopped red onion
1 to 2 teaspoons finely chopped seeded jalapeno (see Cook's Note)

Steps:

  • Mash together the avocado, lemon juice, lime juice and 1 1/2 teaspoons salt in a mixing bowl until creamy. Fold in the cilantro, red onion and jalapeno with a spoon or spatula. Adjust the salt if needed.
  • The guacamole can be made up to 2 hours in advance. Store in an airtight container and smooth a sheet of plastic wrap on the surface without any air pockets. Refrigerate until ready to serve.

AWARD WINNING GUACAMOLE

Award Winning Guacamole image

This recipe comes from The Best of Mexico cookbook. It won first place at my work site last year during our annual Cinco Day Mayo salsa and guacamole competition. Wear gloves when you chop the Serrano chilies. There is not a lot of lime juice in this recipe so prepare it as close to serving time as possible to avoid browning.

Categories     Mexican

Time 10m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 Hass avocadoes
1/2 cup white onion, diced

1 tablespoon fresh lime juice
1 1/2 teaspoons coarse salt (to taste)

Steps:

  • Cut avocados in half and remove pits.
  • Scoop the avocado into a bowl and coarsely mash.
  • Add the onions, tomatoes, Serrano chili, lime juice, and salt.
  • Stir to combine.
  • Press plastic wrap down tightly on top of the guacamole until ready to serve to prevent the avocado from turning brown.

THE BEST GUACAMOLE

The Best Guacamole image

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 9

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.
