DOM'S SALSA AND GUACAMOLE

Steps:
- Combine the tomatoes, scallions, cilantro, red wine vinegar, garlic, lime zest and juice (to taste) and chile pepper (to taste) in a medium serving bowl. Add the salt and pepper. Stir to combine. Let sit at room temperature for 10 minutes, then stir again.
- Divide the salsa into 2 bowls. Serve one as traditional salsa. To the other bowl, add the avocado and mix to combine.
GUACAMAYA
This is a great recipe for a Super Bowl party. It's a real man pleaser when served with plenty of ice cold beer. Note: Bolillo rolls are mexican. You can make your own or buy them at a mexican grocery. Chicharron are thin sheets of fried pork skin and are also found in the mexican grocery. Use a hot, chunky type of salsa( homemade or purchased).

Steps:
- Split bolillo roll butterfly style. Scoop out part of bread on both sides. Take each square of chicharron and break in half. Crush each half into smallish pieces. Put 1 half of crushed chicharron in each bolillo. Top with 3-4 Tablespoons of hot salsa on each sandwich. Fold bread together and eat. Serve with plenty of cold beer. Enjoy!

THE BEST GUACAMOLE
Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

Steps:
- Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
- Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
- Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.
