Cauliflower Parmigiana with Gruyere Sauce image

I took a favorite recipe from Allrecipes (cauliflower alla parmigiana) and tweaked it to create this recipe.

Provided by thedailygourmet

Categories     Side Dish     Vegetables     Cauliflower

Time 45m

Yield 2

Number Of Ingredients 9

½ pound cauliflower florets
⅛ cup diced red bell pepper
3 tablespoons unsalted butter
1 cup shredded Gruyère cheese, divided
1 tablespoon salted butter
1 tablespoon all-purpose flour
½ cup half-and-half
1 pinch truffle salt
3 tablespoons panko bread crumbs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease an 8x10-inch oval casserole dish.
  • Bring a large pot of salted water to a boil. Add cauliflower florets and boil for 3 minutes. Drain.
  • Cut the florets into slices and arrange in the baking dish. Scatter red bell pepper pieces on top.
  • Melt butter in a large saucepan. Add flour and whisk to create a paste. Pour in half-and-half, stirring to incorporate. Add 3/4 cup Gruyère cheese and truffle salt. Pour cheese sauce over the cauliflower. Sprinkle remaining cheese and panko on top.
  • Bake in the preheated oven until top is lightly browned, about 25 minutes.

CLASSIC MORNAY SAUCE

Classic Mornay Sauce image

Mornay sauce is a classic béchamel sauce enriched with a blend of Gruyère and Parmesan cheeses. It can be used for vegetables, eggs, and pasta.

Provided by Danilo Alfaro

Categories     Dinner     Sauce

Time 35m

Number Of Ingredients 8

4 tablespoons butter (not margarine or a blend, divided )
1/3 cup all-purpose flour
3 cups whole milk (warm but not hot), divided
2 to 3 whole cloves
1/4 onion (peeled)
1 bay leaf
2 ounces grated Gruyère cheese
2 ounces grated Parmesan cheese

Steps:

  • Gather your ingredients.
  • In a heavy-bottomed saucepan, melt 3 tablespoons of the butter over medium-low heat.
  • Stir in the flour to form a roux . Cook for 2 to 3 minutes, stirring frequently, until most of the water has cooked out (it will bubble less), which also allows the raw flour taste to cook off.
  • Slowly add 2 1/2 cups of the warm milk while whisking or stirring constantly so that the liquid is incorporated into the roux without forming lumps.
  • Stick the cloves into the onion and add to the sauce along with the bay leaf. Simmer for about 10 minutes, or until it's reduced by about 20 percent.
  • Remove the bay leaf and the onion and strain the sauce through a fine-mesh strainer or a colander lined with cheesecloth. Make sure you retrieve all of the cloves.
  • Return the sauce to the pan. Add the Gruyère and Parmesan cheeses and stir until the cheese has melted.
  • Remove from heat, stir in the remaining 1 tablespoon butter, and adjust the consistency with some or all of the remaining 1/2 cup milk if necessary. Serve right away with pasta, chicken, or fish. Enjoy!

  • Bring a pot of water to a boil. While you wait for it to boil, combine the breadcrumbs, Parmesan, olive oil, and a few pinches of black pepper in a small bowl. You will use this topping once the pasta and sauce are done. Once the water is boiling cook the spaghetti for about 2 minutes less than what’s listed on the package. It will finish cooking in the sauce.
  • While the pasta boils, make the sauce. First, melt the butter in an oven-safe pan over medium heat. Once frothy, add the flour and stir with a spatula to combine. Cook the paste for a minute or so adjusting the heat, if needed, so the butter doesn’t brown too quickly). Switch to a whisk and slowly add the milk to the pan whisking continuously. Be sure to monitor the heat – you don’t want the milk to boil otherwise it will cause the sauce to break. Add the herbs and salt and cook for a couple of minutes. Add the cheese and stir until it’s melted. Add the spinach and stir until it wilts into the sauce.
  • Add the cooked spaghetti to the pan and stir to coat it in the sauce. Sprinkle the parmesan breadcrumbs over the top of the pasta. Turn on the broiler and pop the pan under it for a couple of minutes, or until the breadcrumbs are crispy.

WHAT IS GRUYèRE CHEESE? - THE SPRUCE EATS
2020-06-15 Gruyère is a great table cheese, a term that refers to any cheese that can be eaten in slices, like on a sandwich or as part of a cheese platter.
