BROILED GROUPER WITH CREAMY CRAB AND SHRIMP SAUCE
I modeled this after dishes I've had in restaurants at the beach. You can use any white fish. I served the fish and sauce over rice. It's fast, easy, and delicious!

Steps:
- Preheat the oven broiler. Cover a medium baking dish with foil.
- Melt butter with cream in a saucepan over medium heat, and blend in Creole mustard. Cook and stir until thickened. Mix in crab and shrimp. Season with Cajun seasoning, salt, and pepper. Cook until heated through.
- Place grouper in the prepared baking dish, and rub with olive oil, lemon juice, and parsley. Season with salt and pepper.
- Broil grouper about 4 minutes on each side, until easily flaked with a fork. Spoon the crab and shrimp mixture over fish to serve.

PAN SEARED GROUPER WITH LEMON BUTTER
Moist and flaky, this pan fried grouper with lemon butter is delicious with some veggies on the side or as is. Butter sauce is rich and accompanies the fish so well.

Steps:
- Season grouper fillet with salt and pepper on both sides. Heat butter over medium heat in the skillet and saute minced garlic in it for 1 minutes.
- Add grouper and cook for about 3 minutes on each side. Take the fish out and set aside.
- Add lemon juice and parsley to garlic butter. Saute for a minute or two.
- Top grouper fillet with lemon buter parsley mixture and serve.
GROUPER WITH LEMON WHITE SAUCE
Steps:
- Mix flour, salt, pepper, and lemon pepper in bowl until well blended. Reserve 4 1/2 tablespoons of seasoned flour in a small bowl, and set aside. Rinse grouper fillets, and pat dry. Dredge grouper in the seasoned flour.
- Melt the clarified butter in a skillet over medium-high heat. Place the grouper in the skillet and cook until lightly browned and the fish is easily flaked with a fork, 2 to 4 minutes on each side. Remove from skillet, and set aside. Drain any remaining clarified butter in the skillet, and wipe clean. Add the chilled butter and lemon juice to the skillet. Cook and stir until the butter is melted. Gradually whisk in the reserved seasoned flour; cook and stir for 5 minutes. Stir in the hot milk, whisking constantly until the sauce has thickened, about 5 minutes more. Serve sauce over the grouper.

- Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
- Broil about 10 to 15 minutes until fish flakes easily with fork.
- Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
- To serve, place broiled grouper on individual plates. Top with cream sauce.

- Dry fish fillets with paper towel.
- Heat olive oil in pan.
- Cook fish fillets over medium heat until fish has turned opaque and flakes, approximately 2-3 minutes on each side. Transfer fish to a warm serving platter.
- Add chives, capers, lemon juice, brandy (or cognac), mustard, and butter to the pan. Cook for 30 seconds, whisking constantly.
- Whisk in chicken broth. Stir until sauce is smooth and has reduced slightly, approximately 2-3 minutes.

- To a large skillet, add the butter and heat over medium-high heat to melt butter.
- Dredge fish through flour, coating both sides.
- Add fish to skillet, season with salt and pepper, and cook for about 3 to 4 minutes on first side, or until nicely seared and lightly golden browned.
- Flip fish, season with salt and pepper, squeeze the lemon over the fish (use caution because the lemon juice will bubble up when it hits the hot skillet) and cook for about 2 to 3 minutes on second side, or until fish is lightly golden browned on both sides and cooked through.
