Broiled Grouper with Creamy Crab and Shrimp Sauce image

I modeled this after dishes I've had in restaurants at the beach. You can use any white fish. I served the fish and sauce over rice. It's fast, easy, and delicious!

¼ cup butter
1 ½ cups heavy cream
1 teaspoon Creole mustard
2 (6 ounce) cans crabmeat, drained and flaked
1 (4 ounce) can small shrimp, drained
1 teaspoon Cajun seasoning
salt and pepper to taste
2 pounds grouper fillets
1 tablespoon olive oil
1 lemon, juiced
1 teaspoon chopped fresh parsley
salt and pepper to taste

Steps:

  • Preheat the oven broiler. Cover a medium baking dish with foil.
  • Melt butter with cream in a saucepan over medium heat, and blend in Creole mustard. Cook and stir until thickened. Mix in crab and shrimp. Season with Cajun seasoning, salt, and pepper. Cook until heated through.
  • Place grouper in the prepared baking dish, and rub with olive oil, lemon juice, and parsley. Season with salt and pepper.
  • Broil grouper about 4 minutes on each side, until easily flaked with a fork. Spoon the crab and shrimp mixture over fish to serve.

grouper fillet 8 oz portion
1 tablespoon butter
juice of 1/2 lemon
1 garlic clove, minced
1/4 cup chopped parsley

Steps:

  • Season grouper fillet with salt and pepper on both sides. Heat butter over medium heat in the skillet and saute minced garlic in it for 1 minutes.
  • Add grouper and cook for about 3 minutes on each side. Take the fish out and set aside.
  • Add lemon juice and parsley to garlic butter. Saute for a minute or two.
  • Top grouper fillet with lemon buter parsley mixture and serve.

1 cup all-purpose flour
1 tablespoon sea salt
1 tablespoon ground black pepper
1 teaspoon lemon pepper
4 (6 ounce) grouper fillets
3 tablespoons clarified butter
3 ½ tablespoons chilled butter
2 tablespoons lemon juice
1 ½ cups hot milk

Steps:

  • Mix flour, salt, pepper, and lemon pepper in bowl until well blended. Reserve 4 1/2 tablespoons of seasoned flour in a small bowl, and set aside. Rinse grouper fillets, and pat dry. Dredge grouper in the seasoned flour.
  • Melt the clarified butter in a skillet over medium-high heat. Place the grouper in the skillet and cook until lightly browned and the fish is easily flaked with a fork, 2 to 4 minutes on each side. Remove from skillet, and set aside. Drain any remaining clarified butter in the skillet, and wipe clean. Add the chilled butter and lemon juice to the skillet. Cook and stir until the butter is melted. Gradually whisk in the reserved seasoned flour; cook and stir for 5 minutes. Stir in the hot milk, whisking constantly until the sauce has thickened, about 5 minutes more. Serve sauce over the grouper.

4 grouper fillets (or other firm white fish)
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 cloves garlic, grated
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine
3 tablespoons freshly squeezed lemon juice
1/4 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
  • Broil about 10 to 15 minutes until fish flakes easily with fork.
  • Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
  • To serve, place broiled grouper on individual plates. Top with cream sauce.

2 cups chicken broth
2 tbsp butter
4 tbsp capers
2 tbsp brandy or cognac
1 tbsp dijon mustard
juice from 1 lemon
2 tbsp olive oil
1 tbsp chive (optional)

Steps:

  • Dry fish fillets with paper towel.
  • Heat olive oil in pan.
  • Cook fish fillets over medium heat until fish has turned opaque and flakes, approximately 2-3 minutes on each side. Transfer fish to a warm serving platter.
  • Add chives, capers, lemon juice, brandy (or cognac), mustard, and butter to the pan. Cook for 30 seconds, whisking constantly.
  • Whisk in chicken broth. Stir until sauce is smooth and has reduced slightly, approximately 2-3 minutes.
  • Return fish to pan and coat fish with sauce.
  • Plate fish and pour additional sauce from pan over the fish.

If you've never tried grouper it's a firm, extra lean, flaky, white fish that's mild in flavor. It's a non-fishy-tasting fish, perfect for kids or those who are picky about fish. It's a one-skillet recipe that's ready in 10 minutes and there are planned leftovers. I served the grouper with rice and a simple salad the first night. The second night I sliced it for fish tacos complete with lettuce, tomatoes, cheese, and a whisk-together honey mustard-lemon sauce.

3 tablespoons butter
flour, for lightly dredging and coating fish
2 large grouper filets (about 1 1/2 pounds)
juice of 1 lemon, about 3 to 4 tablespoons
salt and pepper, to taste
taco or fajita shells
1 cup romaine or iceburg lettuce, chopped
1 tomato, diced
1 cup shredded cheese (cheddar, Monterrey Jack, etc.)
1/4 cup grainy dijon mustard
2 tablespoons honey, or to taste
1 tablespoon lemon juice, or to taste
salt and pepper, to taste

Steps:

  • To a large skillet, add the butter and heat over medium-high heat to melt butter.
  • Dredge fish through flour, coating both sides.
  • Add fish to skillet, season with salt and pepper, and cook for about 3 to 4 minutes on first side, or until nicely seared and lightly golden browned.
  • Flip fish, season with salt and pepper, squeeze the lemon over the fish (use caution because the lemon juice will bubble up when it hits the hot skillet) and cook for about 2 to 3 minutes on second side, or until fish is lightly golden browned on both sides and cooked through. Serve immediately if desired.
  • To make the fish tacos, lightly warm each taco shell momentarily on a dry skillet over medium-high heat before adding lettuce, sliced fish, sprinkling with tomatoes, and cheese; set aside while you make the sauce.
  • To a small bowl, add the mustard, honey, lemon juice, salt, pepper, and whisk to combine. Taste, check for flavor balance, and make any desired tweaks. Drizzle sauce over tacos and serve immediately. Fish will keep airtight in the fridge for up to 3 days and sauce will keep airtight in the fridge for up to 1 week.

1 t freshly cracked black pepper
1/4 c Land O Lakes butter with Olive Oil & Sea Salt
2 cloves garlic, grated

1/2 c dry white wine
3 T freshly squeezed lemon juice
1/4 c heavy cream
3 T chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on. Poking sheet. Sprinkle both sides of fillets evenly with salt & 1 t of pepper. Broil about 10 minutes until fish flakes easily with a fork. Meanwhile in lg skillet melt butter over low heat. Add garlic & remaining 1/2 t pepper. Cook & stir until garlic is fragrant. Add wine; heat to boiling over med low heat. Boil until sauce is reduced by half. Stir in whipping cream & basil. Simmer until thickened. To serve, place broiled grouperon individual plates. Top with cream sauce. Tips: Cut lg fillets into serving size pieces before broiling. Broiling time will vary depending on size & thickness of fillets. Measure fish at thickest point & Cook 10 min. Per inch of thickness.
