GROUND TURKEY BURRITOS
Got this recipe for ground turkey burritos while tinkering around in the kitchen. Thawed some meat that I didn't want to freeze again. It was simply great.

Steps:
- Brown turkey in a skillet over medium heat until no longer pink, 5 to 7 minutes. Season with salt and pepper; drain and discard any excess grease. Add black beans and diced tomatoes; cook until warm, about 5 minutes. Reduce heat to low.
- Preheat the oven to 300 degrees F (150 degrees C).
- Warm cooking oil in a skillet over low heat. Heat tortillas 1 at a time, about 1 minute each. Fill with turkey mixture, and top with cheese. Place burritos on a baking sheet.
- Bake in the preheated oven until cheese melts, about 5 minutes.

This amount should feed four twice I think. You may add more beans if you prefer, but you will then probably need to double the spices. This is an SBD style salad.

Steps:
- Saute all the veggies and spices together.
- Add the turkey and cook until it browns and gives up the fat.
- Drain it thoroughly!
- Return to pan or pot, add the salsa and the black beans.
- Cook until really hot.
- Add salt and pepper, and hot sauce if desired.
- Serve over mixed salad greens (suggested one cup of turkey bean mixture) with a tablespoon of low-fat sour cream and/or shredded low-fat cheddar cheese.

TURKEY BLACK BEAN SOFT TACOS

- Preheat oven to 350°F. Loosely wrap tortillas in foil, making 2 packets of 6 tortillas each. Place packets on a baking sheet and bake for 10 to 15 minutes, or until hot. Coat a skillet with cooking spray and heat on medium-high. Add turkey and cook until lightly browned and cooked through, about 6 to 8 minutes, breaking up meat as you go. Season with salt and pepper, to taste. Remove from heat and set aside. Unwrap foil packets and place 2 tortillas on each of 6 plates. For each plate, distribute 1/2 cup turkey, 1/4 cup beans, 3 tbsp salsa and 1/3 cup lettuce evenly between both tortillas. Serve immediately.

- Cook pasta al dente as per package instructions, undercooking by 4 minutes. Drain, reserving 1 cup of pasta water, and set aside. Preheat oven to 350 degrees F and spray 9 x 13 baking dish with cooking spray.
- In the meanwhile, preheat large skillet on medium heat and add olive oil. Add onion and garlic, sauté for 2 - 3 minutes, stirring occasionally. Add oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper. Cook for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally.
- Add tomato sauce, honey, balsamic vinegar and pasta water. Stir, bring to a boil and simmer for 2 minutes. Add kale and stir to combine.
- Now add cooked pasta and stir to combine more.
- Transfer half of the mixture in previously prepared baking dish and sprinkle with 1 cup cheese. Add remaining pasta meat mixture and sprinkle with remaining 1 cup cheese. Cover with foil and bake for 20 minutes.
- Remove from the oven, let stand for 10 minutes, garnish with parsley and serve hot. With a glass of red wine. OMG, so good!
