My Aunt Linda was a missionary in Africa for more than 40 years and gave me the recipe for this cozy stew with a hint of peanut butter. -Heather Ewald, Bothell, Washington

6 ounces lamb stew meat, cut into 1/2-inch pieces
6 ounces pork stew meat, cut into 1/2-inch pieces
2 tablespoons peanut oil
1 large onion, cut into wedges
1 large green pepper, cut into wedges
1 cup chopped tomatoes
4 cups cubed eggplant
2 cups water
1/2 cup fresh or frozen sliced okra
1/2 cup creamy peanut butter
1 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice
Chopped green onions, optional

Steps:

  • In a large skillet, brown meat in oil; set aside. In a food processor, combine the onion, green pepper and tomatoes; cover and process until blended. , In a large saucepan, combine the eggplant, water, okra and onion mixture. Bring to a boil. Reduce heat; cook, uncovered, until vegetables are tender, 7-9 minutes., Stir in the peanut butter, salt, pepper and browned meat. Cook, uncovered, until heated through, about 10 minutes. Serve with rice. If desired, top with chopped green onions.Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

1/2 large cauliflower, cut into florets (3 cups)
4 tablespoons extra virgin olive oil
Salt
1 medium onion, cut into small dice
2 garlic cloves, minced
1 tablespoon minced peeled ginger root
1/4 teaspoon hot red pepper flakes
1/2 pound yucca, peeled, cut into 1-inch chunks (Minot used daikon and turnips)
2 large tomatoes, peeled, seeded and chopped into large chunks
2 carrots, peeled and cut into 1-inch pieces
1 celery stalk, cut on the diagonal into 2 1/2-inch pieces
2 tablespoons soy sauce
1 pound kabocha, delicata or butternut squash, peeled, seeded and cut into 2-inch chunks
1 small sweet potato, peeled and cut into 1-inch pieces
1/4 cup creamy peanut butter
2 tablespoons ginger juice
1 scallion, cut into 1-inch pieces
1/4 cup chopped cilantro, and additionalfor garnish
1 pinch cayenne pepper
1/2 cup chopped, roasted unsalted peanuts for garnish
1 handful mizuna or other tangy greens, like watercress or arugula, for garnish

Steps:

  • Preheat oven to 375 degrees. Combine cauliflower, 2 tablespoons oil and 1 teaspoon salt and toss. Spread on parchment-covered baking sheet and roast until the cauliflower begins to brown, about 25 minutes, turning pieces every 10 minutes. Set aside to cool.
  • Heat remaining oil in a 4-quart saucepan over medium heat and sauté the onion until translucent, about 5 minutes. Add the garlic, ginger and pepper flakes and sauté for 5 minutes. Add the yucca, tomatoes, carrots, celery and soy sauce, and cook, uncovered, until tomatoes are reduced, about 5 minutes, stirring occasionally. Stir in two cups of water, cover and bring to a boil over medium heat. Reduce heat and simmer partly covered for 10 minutes. Add the squash, sweet potato and 1 teaspoon salt and mix. Cover and cook for 15 minutes.
  • Add the roasted cauliflower and peanut butter to the stew and mix. Cook until heated through, about 5 minutes, stirring frequently. Stir in the ginger juice, scallion, cilantro and cayenne. Taste for seasoning. Stir in a little water if needed to make a nice coating sauce. Pour stew into a large bowl and sprinkle with peanuts and cilantro. Arrange bowl on a platter surrounded by greens and serve.

1 chicken, 4 pounds, cut into serving pieces
1 one-inch piece ginger
1/2 medium-size onion, peeled
2 cups water
2 tablespoons tomato paste
1 tablespoon peanut oil
1 cup finely chopped onions
1 cup chopped tomatoes
2/3 cup peanut butter
2 teaspoons salt
2 hot chilies, crushed or 1 teaspoon cayenne pepper
1 medium-size eggplant, peeled and cubed
2 cups fresh or 1 10-ounce package frozen okra

Steps:

  • Boil chicken with ginger and onion half in water. Meanwhile, in a separate large pot, heat tomato paste in the oil over low heat for about five minutes. Add the chopped onions and chopped tomatoes to the paste, stirring occasionally until the onions are translucent.
  • Scoop out the partly cooked chicken pieces and add along with about half the broth to the tomato mixture. Add the peanut butter, salt and chilies. Cook for five minutes before stirring in the eggplant and okra. Continue cooking until chicken and vegetables are tender. Add more broth as needed to maintain a thick, stewy consistency.

AFRICAN GROUND NUT STEW

Number Of Ingredients 8

1 onion, diced
2 to 3 pounds boneless chicken cut into chunks (I prefer thigh meat)
1/2 jar natural peanut butter (no sugar or stabilizers added)
1 can coconut milk (often in Asian grocery section)
2 quarts chicken stock, canned or homemade
1 large bunch collard or other greens, chopped fairly finely and after removing center ribs (frozen, drained greens can be used as a substitute)
Sambal oelek, to taste (hot chili paste from Asian grocery section)
Cooked rice, as an accompaniment

Steps:

  • Saute onions until translucent in a large saucepan. Add chicken pieces and saute until golden but not necessarily cooked through. Add coconut milk and stock and bring to a simmer. Once the liquid is simmering, add the peanut butter a spoonful at a time and keep stirring until it is well incorporated. The sauce should be fairly thick (stew like, not soup like), so you may need to add more peanut butter or loosen with water depending upon the ingredients you use. Add chopped collards/greens and cook until very wilted. Season, to taste, with chili paste/sambal oelek and salt.
  • Serve over rice or other starch.
  • Traditional African stiff porridge would be served on the side and used to dip into the sauce with one's hands. Pull off a piece the size of a meatball, use your thumb to make an impression in the porridge and use the divet to scoop up the stew and pop it into your mouth! Enjoy.

CHICKEN GROUNDNUT STEW

2 tablespoons oil
3 to 4 pound chicken, cut into pieces
Salt and freshly ground black pepper
1 tablespoon butter
2 onions, diced
5 medium carrots or 3 cups, sliced 1/4-inch thick on bias
4 cloves garlic, mashed
1-inch peeled ginger
1 1/2 cups chopped tomatoes
6 cups chicken stock or broth, divided
2 ounces fresh thyme leaves
1 habenero, pierced
1 cup smooth natural peanut butter
2 tablespoons tomato paste
1/2 cup roasted unsalted peanuts, chopped for garnish

Steps:

  • Heat 2 tablespoons oil in oven roasting pan. Season chicken pieces with salt and pepper and brown in hot pan, remove chicken from pan and set aside. Drain off excess fat. Add butter and saute onions for five minutes or until soft. Add carrots (and any additional vegetables*), garlic, ginger and tomatoes. Add 4 cups of hot chicken stock, thyme and habenero. In a separate bowl, whisk peanut butter and tomato paste into remaining 2 cups of stock and add to the pan. Add the chicken back to the pan. Bring to boil, then simmer for 2 to 2 1/2 hours or until chicken falls from bones. Season with salt and pepper. Can be served with rice, potatoes or noodles.
  • *Optional vegetables to add: eggplant, okra, sweet potatoes, cabbage, turnips, or bell peppers.

VEGETARIAN GROUNDNUT STEW

A hearty stew that's super-easy to make and great for peanut butter lovers. Can be made vegetarian or with chicken. In a pinch, feel free to use vegetable or corn oil for peanut oil, powdered ginger for fresh, water for stock, etc. Kale works well in place of collard greens.

Steps:

  • Heat the peanut oil in a large pot over medium-high heat; cook and stir the onion, garlic, and ginger in the hot oil until softened, about 5 minutes. Add the chicken; cook and stir until completely browned. Season with the crushed red pepper, salt, and black pepper. Pour the chicken stock over the mixture. Stir the sweet potatoes into the liquid and bring the mixture to a boil; reduce heat to low, cover the pot partially with a lid, and cook at a simmer for 15 minutes.
  • Stir the tomatoes, collard greens, and peanut butter into the soup. Partially cover the pot again and continue cooking, stirring occasionally, another 20 minutes.

3 lbs broiler-fryer chickens, cut up
3 tablespoons cooking oil
1 lb beef stew meat, cut into 1 inch pieces
2 medium onions, chopped
1 medium green pepper, chopped
1 (28 ounce) can tomatoes, cut up
1 teaspoon salt
1 -2 teaspoon ground red pepper
3/4 cup peanut butter
mashed sweet potatoes or hot cooked rice

Steps:

  • In a large saucepan or Dutch oven brown chicken pieces in hot oil abut 15 minutes; remove from pan. Set aside, reserving drippings.
  • Add beef, onion, and green pepper to drippings; cook till beef is brown and onion is tender. Drain off fat. Stir in undrianed tomatoes, salt, and red pepper. Bring to boiling; reduce heat. Cover; simmer 30 minutes.
  • Add chicken pieces: simmer 20 minutes more. In small sauce pan melt peanut butter over low heat. Stir into chicken mixture. Return mixture to boiling; reduce heat. Cover simmer 20 minutes more. Skim off fat.
  • Serve with mashed sweet potatoes or hot cooked rice.
