Yield 4 Groundhog Cookies

Number Of Ingredients 8

Ingredients

4 crunchy chocolate cookies (I used Enjoy Life)
8 mini cookies (I used Enjoy Life minis)
8 homemade googly eyes
4 pink-colored jelly beans (I used Surf Sweets)
8 sunflower seeds
8 dairy free chocolate chips
2 Tbsp. chocolate sprinkles
1/4 c. melted chocolate, for the "glue"

Steps:

Add a thin layer of melted chocolate on the top of the crunchy chocolate cookie for the hair. Immediately cover with sprinkles.
"Glue" the mini cookies in the middle of the large cookie for the cheeks.
Add the pink jelly bean for the nose, the googly eyes, and the sunflower seeds for the teeth.
"Glue" the 2 chocolate chips for the ears. Allow the chocolate to firm up (approx. 5-10 minutes).

2 cups sifted flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1 1/2 teaspoons cinnamon
1/2 cup soft butter
1 cup sugar
1/2 cup molasses
1 egg yolk
1 egg, slightly beaten
currants or raisins

Steps:

Sift together first 7 ingredients. Set aside. Cream butter and sugar until fluffy. Blend in molasses and yok. Sir in four mixture and mix well. Form into a ball. Wrap in plastic wrap. Chill overnight or freeze. Place small amounts of dough on a sheet of plastic wrap, and cover with plastic wrap. Roll 1/8 inch thick. Cut cokkies with lightly floured cutter. Place cookies on greased baking sheet. Brush with slightly beaten egg. Decorfate with currants or raisin eyes. Repeat until all dough is used.
