RUSTIC GRAIN CEREAL
A hot morning breakfast loaded with whole grains and fruit, with the added crunch of toasted nuts. I like to make mine on Sundays and warm some in the microwave on weekday mornings for a quick hot nutritious breakfast.

Steps:
- Combine 1/2 cup water and wheat berries in a small saucepan; bring to a boil. Cover saucepan, remove from heat, and set aside for wheat berries to soak, about 10 minutes.
- Melt butter in a 2-quart saucepan over low heat; cook and stir oats, pecans, and almonds in melted butter until golden and fragrant, about 5 minutes. Carefully pour boiling water into nut mixture; add wheat berries and dried apples. Cover saucepan and cook over low heat, without stirring, until wheat berries are tender, about 20 minutes; stir in sugar, cinnamon, and salt.

An interesting sounding whole foods breakfast. Particularly if you grind your own wheat, it could be nice to try. I have amended the salt amounts based on reviews.

Steps:
- Bring 3 cups of water to a boil.
- Mix together the extra 1 cup of water, ground wheat and salt.
- Add them to the boiling water, stirring constantly while it thickens to avoid lumps.
- Reduce the heat and cook it for 15-20 minutes.
- Serve with milk or soy milk or honey or molasses.
CREAMY WHEAT BERRY HOT CEREAL
This warming whole-grain hot cereal recipe pairs cooked wheat berries with rolled oats, fruit and nuts for a filling fiber-rich breakfast. Using a microwave makes preparation speedy, especially if you've thawed frozen cooked wheat berries overnight in the refrigerator.

- To prepare the wheat berries: Sort through wheat berries carefully, discarding any stones. Rinse well under cool running water. Place in a large heavy saucepan. Add water and salt Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 1 hour, stirring occasionally. Drain and rinse. (Makes about 4 1/2 cups.)
- To prepare the hot cereal: Place oats, raisins, milk (or soymilk) and salt in a large, microwave-safe bowl. (No microwave? See Stovetop Variation.) Stir to combine. Microwave on High, uncovered, for 3 minutes. Stir in 1 1/4 cups cooked wheat berries and microwave again until hot, 1 to 2 minutes more. Let stand for 1 minute. Stir in brown sugar and cinnamon. Sprinkle with toasted almonds and serve. (Refrigerate or freeze leftover wheat berries.)
