SWEET AND SPICY GROUND TURKEY STIR-FRY



Sweet and Spicy Ground Turkey Stir-Fry image

I put this together for a light meal when I noticed that we had too big a collection of half-bags of frozen vegetables and little containers of leftover cooked veggies. The kind and quantity of the vegetables can vary according to what you have -- you just need to end up with between 2 and 3 lbs. Some people prefer a more generous amount of thickened sauce on their stir-fry dishes. With a diabetic in the house, I skip that part but I've included the directions if you want it.

1 lb ground turkey
2 -3 garlic cloves
1 onion, cut into thin wedges
1 pinch coriander seed, crushed
1/3 cup soy sauce, divided (or to taste)
1 -2 tablespoon dark brown sugar
1 tablespoon sherry wine (optional)
1 pinch red pepper flakes (to taste)
oil
1/2 lb snap peas or 1/2 lb snow peas
1/2 lb broccoli floret
1/2 lb green beans
1 -2 cup spinach
1 -2 cup bok choy, chopped
1 -2 cup napa cabbage or 1 -2 cup Chinese cabbage, chopped
1 carrot, sliced
1 -2 zucchini or 1 -2 yellow squash, sliced
1/2 cup chicken stock (must be cold) (optional)
1 tablespoon cornstarch (optional)

Steps:

  • Brown ground turkey in a little oil over medium-high heat. Drain any excess grease leaving just enough to accomplish the stir-frying process.
  • Add garlic, onion, coriander, and a tbs of the soy sauce. Stir well.
  • Begin adding the vegetables starting with long-cooking veggies like carrots and broccoli (especially if broccoli is still frozen), and working towards the quick-cooking greens but not adding those just yet.
  • Just before adding the greens -- right after adding the beans or snap peas -- add the remaining soy sauce, the sugar, the sherry, and the red pepper flakes. Stir well so that sugar dissolves and pepper flakes are well distributed.
  • Add the greens and complete the cooking.
  • Make the optional sauce if desired by whisking the cornstarch into the chicken stock. Pour into pan just before the greens are done and cook, stirring constantly, until the sauce has simmered for about one minute.
  • Serve over rice, ramen noodle, or other preferred, Asian starch.

6 cups (425g) thinly sliced green cabbage ((~1/2 large head) or shredded cole slaw mix)
3/4 cup (90g) shredded zucchini, ((~1 small zucchini))
1 bunch of green onions, (separated)
1 tablespoon (9g) fresh grated ginger
1 teaspoon minced garlic
1 tablespoon (12g) canola or vegetable oil
1 pound (16 oz.) lean ground turkey (93/7%)
4 tablespoons (62g) regular (not lite) soy sauce
2 tablespoons (25g) toasted sesame oil
2 teaspoons (12g) sriracha
1 tablespoon (12g) light brown sugar
1 cup (85g) shredded/matchstick carrots
Fine sea salt & pepper, (to taste)
1/3 cup (67g) good quality mayo
1 tablespoon (16g) sriracha
1 tablespoon (16g) lime juice

Steps:

  • PREP THE VEGGIES: Cut the cabbage in half, remove the core, and then thinly slice to get 6 cups. Alternatively, use a package of cole slaw mix and save the slicing! Using a box grater, grate the zucchini on the large holes to get 3/4 cup. Thinly slice 3-4 green onions to get a heaping 1/2 cup (37g). Peel the ginger and then finely shred using the small side of your grater or a microplane grater. Mince the garlic.
  • COOK GROUND TURKEY: Heat a large skillet over medium-high heat. Once hot, add the vegetable oil, ground turkey, garlic, ginger, and a pinch of fine sea salt and pepper. (I add 1/4 teaspoon of each.) Cook until the ground turkey is cooked through, about 5-7 minutes breaking it up as you cook. If there is an excessive amount of liquid, drain that off here.
  • SAUCE: While the ground turkey is cooking, prepare the sauce by stirring together the soy sauce, sesame oil, sriracha, and brown sugar. Set aside.
  • COOK VEGGIES: Add the cabbage and carrots to the skillet with the ground turkey and continue to stir and cook until the cabbage is wilted, about 2-4 minutes. Add in the zucchini, green onions, and the sauce. Stir for another 1-2 minutes and then remove from heat. Garnish dish with additional sliced green onions as desired. Taste and add a pinch more of salt if needed.
  • SRIRACHA MAYO (OPTIONAL): If desired, serve with sriracha mayo. To make sriracha mayo: whisk together the mayo, sriracha, lime juice, and a tiny pinch of salt and pepper until smooth. See Note 1.

Steps:

  • In a small bowl, whisk together rice vinegar, hoisin sauce, soy sauce, and brown sugar until well combined; set aside.
  • Spray a large frying pan with nonstick cooking spray and place on the stove top over medium-high heat.
  • Add ground turkey and minced garlic to the pan.
  • Sprinkle the garlic salt, pepper, and onion salt over the meat.
  • Add half of the liquid mixture to the pan so the juices cook in with the meat.
  • Cook the meat, breaking it up, for about 15 minutes or until fully cooked through.
  • Set the meat aside, and place the green beans and mushrooms into the pan and drizzle the olive oil over it.
  • Cook until the mushrooms are a shiny brown and the green beans soften and reach desired tenderness.
  • Add the meat back into the pan and pour the rest of the liquid mixture over the meat, mushrooms and beans.
  • Cook until the juice is well incorporated.
  • Serve over cooked rice.

4 tsp. coconut oil (or vegetable oil)
1 tbsp. sesame oil
2 garlic cloves, minced
2 tbsp. ginger, minced
1.33 lbs. 99% lean ground turkey
4 tbsp. low sodium soy sauce (GF if needed or coconut aminos for Whole30)
2 tbsp. rice vinegar
2 tsp. Asian chili garlic paste (like sambal olek)

Steps:

  • Preheat the oven to broil. Toss the green beans with half of the coconut oil. Lay flat on a baking sheet covered in foil. Broil for 6-8 minutes until tender and beginning to char. Shake the pan once during cooking.
  • Meanwhile, heat the remaining coconut and sesame oil over medium high heat. Add the ground turkey, garlic, and ginger. Brown until turkey is fully cooked.
  • Add the green beans to the pan and stir. Then add the soy sauce, rice vinegar, and sambal olek. Cook for 1 minute. Taste and season with additional soy sauce if needed.

2 tablespoons fresh lime juice
1 tablespoon fish sauce (I love Red Boat Fish Sauce and it's gluten-free and Paleo)
1 tablespoon sriracha sauce
1 tablespoon soy sauce (I used Tamari Gluten Free Soy Sauce)
1 tablespoon agave nectar (or honey, cane sugar, or something like Stevia-in-the-Raw Granulated Sweetener if you prefer)
1 onion, cut in slivers
1 red bell pepper, cut in thin strips
tsp. high smoke point oil (such as avocado oil, peanut oil, or grapeseed oil)
2 -3 large garlic cloves, cut in slices (for seasoning the oil)
1 -2 cup chopped basil leaves (more or less to taste and depending on whether you have to buy basil) or 1 -2 cup Thai basil (more or less to taste and depending on whether you have to buy basil)
1 1/2 lbs lean ground turkey

Steps:

  • Whisk together the lime juice, fish sauce, Sriracha sauce, soy sauce, and Agave nectar to make the stir-fry sauce. Cut the onion into thin slivers and cut the red bell pepper into strips. Peel and slice the garlic.
  • Heat the wok or large heavy frying pan over high heat for about 1 minute before you add the oil. Then add the 1 tablespoon of oil, heat about 45 seconds (or until it looks shimmery), add the garlic cloves, and cook the garlic just until it's fragrant. When you smell garlic (less than one minute) remove the garlic and discard.
  • Add the onion slivers and bell pepper strips to the woke and stir-fry for 1-2 minutes (just until they're starting to soften), then remove to a bowl. Add the other teaspoon of oil if it seem like you need it, then add the ground turkey and stir-fry 5 minutes, breaking apart with a turner as it cooks. Cook the turkey until any liquid evaporates completely and the turkey is starting to get lightly browned.
  • Add the vegetables back into the wok, stirring to combine with the meat, and cook about 1 minute. Add the chopped basil and cook about 1 minute more, just until the basil starts to wilt.
  • Then add the stir-fry sauce and stir to distribute it in the meat/veggie mixture. Cook about 2 minutes more, or until the sauce is mostly absorbed into the meat and the whole dish is hot. Serve right away.

3 T brown sugar
1 c water, divided
2 T honey
3 garlic cloves, minced
1 tsp ginger
2 T corn starch
1 lb Turkey
2 tsp sesame oil

1 leek, green removed and chopped
1 T orange zest (optional)
salt and pepper to taste

Steps:

  • Combine 3/4 cup water, soy sauce, garlic, ginger, honey, and brown sugar in a small sauce pan over medium heat. Stir to combine.
  • Bring to a low boil. Whisk 1/4 c water and corn starch together well until corn starch is completely dissolved. Slowly stir in the corn starch mixture (slurry) and allow to thicken. Remove from heat immediately and set aside until ready to add to stir fry.
  • Add the sesame oil to a wok or skillet over medium high heat. Add the leeks or onion to skillet and heat for several minutes to soften. Add in the turkey and heat until fully cooked (165°F should be internal temperature.), about 7-10 minutes.
  • Add in the broccoli and cook until heated through and tender. Change the heat to low and stir in the Teriyaki sauce. Simmer for several minutes until ready to serve. Add the orange zest if desired.
  • Serve over rice or as desired!

  • Heat oil in a large skillet over medium-high heat. Add onions and peppers to pan. Cook, stirring occasionally, for about 3-4 minutes. Add turkey and cook until turkey is cooked through, about 5-7 minutes.
  • Pour sauce into skillet along with green onions (saving some of green tips for garnish) and simmer, stirring constantly, until sauce is thickened and glossy, about 1-2 minutes.
