1 cup onion, finely chopped
1 green pepper, finely chopped
1/2 cup sliced celery
2 teaspoons, minced garlic
16-20 ounces ground turkey
1 1/2 teaspoon dried thyme
1 teaspoon hot pepper sauce
1 1/2 teaspoon salt
1 can (14 1/2 ounces) Cajun-style stewed tomatoes
1 can (16 ounces) red beans, drained and rinsed
1/4 cup tomato paste
4 cups hot, cooked brown rice
1/4 cup fresh parsley, chopped

Steps:

  • In large deep skillet, over medium-high heat, heat oil. Add onion, green pepper, and celery. Cook 5 minutes or until slightly softened, stirring occasionally. Add garlic. Crumble turkey into skillet and sprinkle with thyme, hot pepper sauce and salt. Cook 5 minutes, stirring occasionally. Add tomatoes, beans, and tomato paste. Cook uncovered, 10 minutes or until hot and flavors are blended, stirring occasionally. Serve over hot, cooked rice; sprinkle with parsley and serve with additional hot sauce if desired.

3 cups water
1 cup chopped zucchini
½ cup frozen corn
3 carrots, sliced
3 red potatoes, cubed
2 stalks celery, diced
½ cup frozen peas
½ cup frozen green beans
¼ cup olive oil
1 pound ground turkey
½ large yellow onion, diced
1 tablespoon minced garlic
1 tablespoon kosher salt
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground turmeric
1 teaspoon tomato paste
2 bay leaves
½ cup uncooked white rice
½ bunch cilantro, chopped

Steps:

  • Combine chicken broth, water, zucchini, corn, carrots, potatoes, celery, peas, and green beans in a large pot. Bring to a boil. Reduce heat and simmer until vegetables are slightly tender, about 10 minutes.
  • Heat oil in a skillet over medium-high heat. Add turkey; cook and stir, breaking it up into small pieces, until browned, 5 to 7 minutes. Add onion and garlic. Season with 1/2 teaspoon salt, cumin, coriander, and turmeric. Pour mixture into the pot with the vegetables. Add the remaining salt, tomato paste, and bay leaves. Reduce heat to low and simmer soup until vegetables are soft, about 1 hour.
  • Stir rice into the soup; simmer until tender, about 15 minutes more. Portion soup into bowls and top each with cilantro.

My version, makes a great gravy to serve over hot cooked rice. Cooking time includes 1 hour to soak the beans.

1 lb dry red beans or 1 lb dried red kidney beans
6 cups cold water
6 cups hot water
1 lb ham bone or 1 lb smoked ham hock
1 large onion, chopped
2 garlic cloves, minced
1 bay leaf
1/2 teaspoon ground red pepper
1 lb smoked sausage, cut in bite size pieces

Steps:

  • Rinse beans. In a dutch oven cover beans with 6 cups of cold water. Bring to a boil, reduce heat and simmer for 2 minutes. Remove from heat,cover and let stand for 1 hour. Drain and rinse.
  • In same pan, combine rinsed beans, 6 cups of hot water, ham or hocks, onion, garlic, bay leaf, and ground red pepper. Bring to boil, then reduce heat and cover and simmer for about 2-1/2 hours, or until beans are tender. Add more water if necessary. Stir occasionally.
  • Remove meat and cut from bone, then add to the beans.
  • Add sausage and boil gently, uncovered for 15 to 20 minutes more, or until a thick gravy forms, stirring occasionally.
  • Serve over hot rice.

1 lb dried kidney beans
2 quarts water
1 lb turkey sausage
1 large onion, chopped
4 stalks celery, chopped
2 teaspoons fresh garlic, minced
2 teaspoons salt
Tabasco sauce, to taste
brown rice or white rice, cooked

Steps:

  • Soak the kidney beans overnight in the water, or you can use the quick soak method. Bring them to a boil and then let them sit, covered, on the back of the stove for an hour or two.
  • After you have done the initial bean preparations let them boil for about an hour or until they are getting tender. While they cook, you can prepare the vegetables and the meat. The onion, celery and garlic will need chopping.
  • Fry the turkey sausage in a large skillet. Crumble it up with a fork as it cooks. Set the sausage aside until the beans have cooked at least an hour.
  • After the beans have softened up and are getting close to tender, it is time to add the rest of the ingredients. If your sausage is spicy, you may not want to add the Tabasco, so taste it before adding any. If your sausage is not spicy, then a small shot of Tabasco will marry nicely with the rest of the dish. Simmer the beans, sausage and vegetables for about half an hour longer, or until the beans are all the way tender. If you put the brown rice on to cook right before adding the vegetables and sausage to the beans, they should get done at about the same time.
  • Serve this by putting some rice into a cereal bowl. Then, ladle a goodly amount of the bean mixture on top of the rice.

2 teaspoons chili powder
½ teaspoon salt
½ teaspoon cumin
ground pepper to taste
½ cup shredded Colby Jack cheese

Steps:

  • Cook rice according to package directions.
  • While the rice cooks, heat a large skillet over medium heat. Add in the ground turkey, onion, and garlic and cook until the turkey is no longer pink.
