Steps:
- Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes, until al dente, and drain.
- Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon.
- Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Season with paprika and salt. Serve over the cooked egg noodles.

EASIEST TURKEY LOAF
I wanted to create a meat loaf using ground turkey. I decided to try a boxed stuffing mix to bind the ingredients, and it worked! The kitchen will smell like Thanksgiving morning when you make this.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 5 3/4x11-inch loaf pan.
- In a bowl, mix the stuffing mix with hot water, and let the mixture stand for 2 minutes to plump up the bread crumbs. In another bowl, mix the ground turkey with beaten eggs, salt, and black pepper. Mix into the stuffing until thoroughly combined. Spoon the loaf mixture into the prepared pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand 10 minutes before serving.

- Heat the oil in a skillet over medium heat. Place the ground turkey and chopped onions in the skillet. Fry until the onions are softened and the turkey is cooked, drain if needed. Add in the garlic and fry for 2 minutes until browned and fragrant.
- Spray the inside of your slow cooker with cooking spray (the turkey isn't greasy so it can stick more) and place the in the ground turkey mixture, tomatoes, kidney beans, black beans, mushrooms, ketchup and spices..
- Cover the slow cooker, and cook 8 hours on Low or 4 hours on High. Season with salt and pepper at the end if needed.
- Heat the oil in a larger sized stock pot over medium heat. Place the ground turkey and chopped onions in the pot.. Fry until the onions are softened and the turkey is cooked, drain if needed. Add in the garlic and fry for 2 minutes until browned and fragrant.
- Mix in the tomatoes, kidney beans, black beans, mushrooms, ketchup and spices. Reduce the heat to medium-low, cover and simmer for 60 minutes on the stove top, or until the beans have softened to your liking. Season with salt and pepper at the end if needed.

EASY GROUND TURKEY ENCHILADAS
Easy enchiladas made with ground turkey, two cheeses and red enchilada sauce. Serve with some easy refried beans, recipe below in notes.

- Preheat oven to 375º.
- In large skillet, heat olive oil until shimmering. Pat turkey dry and add to pan, do not move, brown for about 6 minutes. Flip, brown other side for about 5 or 6 minutes. Add onion, garlic and spices and start breaking up turkey meat with a wooden spoon. Continue until no longer pink and onion has softened.
- Add ¼ cup enchilada sauce to pan, stir to combine and season with salt and pepper. Cook 1 to 2 more minutes then remove from heat and set aside.
- Spread ½ cup enchilada sauce in bottom of 9" by 13" baking dish. Place ⅛ of the turkey mixture on each flour tortilla, top with ¼ cup shredded cheese and tightly roll up. Place rolled enchiladas, seam side down, in baking dish.
- Top with remaining 1 cup enchilada sauce, evenly top with remaining shredded cheese and then the crumbled queso fresco.
- Bake for 20 minutes until hot and bubbly. If desired, garnish with green onions and cilantro and serve with more enchilada sauce and sour cream. Enjoy!

- PREP:.
- Preheat oven to 350 degrees and grease a deep casserole dish.
- Recipe as is fits into a 9x9 3" deep casserole dish. Doubled would fit into an 11x11 4" deep casserole dish.
- TURKEY:.
- Saute turkey and onion over medium heat until done.
- Add olive oil and butter, then flour and stir well, letting flour brown slightly.
- Add milk slowly, stirring as you go, then cream, spices and bullion.
- Bring to a low boil to thicken, then pour into greased casserole dish.
- VEGGIES:.
- Cook veggies, drain well, season if needed and layer over turkey.
- PASTA:.
