KING OF THE HILL FRITO® PIE
I was watching King of the Hill, Peggy mentions making Frito® pie. My husband looks at me and says see if you can find something like that on the internet. Looking at other people's recipes on other sites, I decided to make my own version of Frito Pie. While Hank Hill prefers Wolf Brand Chili, I made my own. :) Hope you enjoy!

Steps:
- Heat oven to 350°F and spray a 7x11-inch baking dish with cooking spray.
- Heat a large skillet, over medium heat, and add the olive oil and butter. Add the chopped onion and cook 3-4 minutes or until translucent and tender. Add the minced garlic, stir and cook 30 seconds until the garlic has blossomed and is fragrant. Transfer the onion and garlic to a paper towel-lined plate; set aside.
- Place the ground chuck in the skillet and cook until browned. Drain the fat from the beef in a mesh colander and return the beef to the skillet. Add the onion/garlic mixture, salt, pepper taco seasoning, Worcestershire Sauce, cider vinegar, tomato sauce and diced tomatoes.
- Mix well and bring the mixture to a low boil over medium heat.
- Reduce the heat to low and add the beans, mix well. Simmer, stirring often, for 15-20 minutes or until the mixture has thickened and most of the liquid has evaporated. Season to taste, with kosher salt and freshly ground black pepper. *Keep in mind, Fritos are very salty and so is cheese, so use salt lightly.
- To prepare the casserole:
- Place 2 cups corn chips in an even layer on the bottom of the prepared casserole dish. Top with 1 cup shredded cheese, taco meat, 1 cup cheese, and another 2 cups corn chips.
- Bake 15-20 minutes or until the casserole is heated throughout.
- Serve with chopped tomatoes, lettuce, black olives, chopped scallions, chopped cilantro and/or your other favorite taco toppings.
- Enjoy!

- Cut the tortillas into 7 strips and then once down the middle. (I stack all 9 and use a pizza cutter to make this easier.) Add the strips to a baking sheet or wire rack. Spray with a bit of nonstick cooking spray and sprinkle with sea salt. Bake for 6-7 minutes or until golden brown.
- While the corn chips are in the oven, add the beef to a large skillet over medium-high heat. Season the beef as it begins to brown and add the chili once the meat is cooked through. Reduce the heat and simmer for 2-3 minutes, stirring.
- Divide the corn chips into however many servings you're going to eat and top with the beef/chili mixture and cheese. If you'd like more cheese, feel free to add some. (To fully melt the cheese, you can plate each portion and microwave for 20-30 seconds or add beef to the chips as a whole and bake for a few extra minutes.)

- Turkey Sloppy Joes. Not only are these made with leaner turkey, but there’s also a slew of hidden veggies inside! When they’re diced small and covered in sauce, nobody will even know they’re there.
- Spaghetti Squash Casserole. I am a huge fan of spaghetti squash. I prefer it to other veggie noodles and will eat it with almost anything. For this recipe, it gets baked with the ground turkey and veggie mix as a faux-pasta bake.
- Ground Turkey Tacos Recipe. Once you’ve added the taco seasoning, most ground meats will taste the same. Want to save this recipe? Enter your email below and we'll send the recipe straight to your inbox!
- Turkey Stuffed Bell Peppers. Stuffed bell peppers are a great little dish to bring along to a potluck or a colorful and fast dinner or lunch. They travel so well and have a serving of veggies right in the name!
- American Turkey Goulash Recipe. This pasta stew is super filling and is usually made with beef. But I love this lightened-up version. It’s still a hearty meal, just without being overly heavy.
- Baked Turkey Meatballs. Meatballs can be so versatile, and I always make extra so that I can have them in the freezer for multiple meals. Serve them with marina and oven-roasted spaghetti squash on Monday.
- Turkey Meatloaf. Much like turkey meatballs, this meatloaf is a lighter version of the usual beef and pork recipes. One key thing to remember is that most ground turkey has almost no fat, which means it needs added moisture to keep from being dry.
- Turkey Lasagna. When I make lasagna, I tend to use a combination of beef and sausage meat. And I would be tempted to add some sausage here, too! The turkey will be super tasty on its own, but I like the flavor you can only get from sausage.
- Ground Turkey Burritos With Refried Beans. Since I don’t always have slow-roasted pork on hand, using ground meat for my burritos is an easy way to make a hearty meal.
- Healthy Taco Salad. I’ve mentioned before that I need my salads to be loaded with flavor and texture. Well, this recipe doesn’t disappoint. Full of taco flavors and crunch from the corn, tomatoes, and baked tortillas, every bite is better than the next.
