Steps:
- Cook pasta: Cook the pasta al dente according to package instructions. Reserve 1 cup of the pasta cooking water.
- Make sauce: Heat the butter in a skillet over medium-high heat. Add the garlic and sauté for 30 seconds to 1 minute, just until the garlic becomes aromatic. Add the goat cheese, half and half and stir. Whisk until smooth.
- Add pasta: Reduce the heat to medium. Add the cooked penne and 1/2 cup of the reserved pasta water to the skillet. Stir well to coat the pasta and let it bubble in the sauce for 1-2 minutes.
- Finish: If you'd like a thinner sauce, add more of the pasta water as needed. Mix in the basil, then season with salt and pepper to taste. Add the lemon juice and zest and more pasta water if needed. Turn off the heat and stir in the Parmesan cheese.
- Garnish and serve: Garnish with parsley and serve.

Steps:
- Boil water for pasta and follow directions on the shell pasta box. Typically 8-10 minutes to cook medium shells.
- In a dutch oven or wide stock pot, heat 2 Tbsp. of the olive oil over medium heat and cook the ground turkey. Season the ground turkey with salt and pepper. Once cooked, place ground turkey in a bowl and set aside.
- Then place remaining tablespoon olive oil in the same pan. Sauté the garlic, bell peppers, mushrooms and onions with salt, pepper and Italian seasoning until fragrant (about 5 minutes, stirring occasionally). Then whisk in the flour until combined. Pour in the beef broth and tomato sauce and let it come to a simmer. Then add in the cooked ground turkey.
- Pour in the cooked shells or pasta of choice, heavy cream and Parmesan. Stir to combine. Taste and adjust salt and pepper, as desired. If you would like it creamier, add more heavy cream.
- *Optional to make a pasta bake: place pasta in an oven safe dish (or leave in dutch oven) and bake at 350° F. for and additional 20 minutes. You can top with more Parmesan if desired. Enjoy.
- Other seasonings that make a great addition, but not necessary include garlic power, onion powder, red pepper chili flakes, dried oregano and cayenne.

- Add ground turkey and cook for 5 minutes, breaking into pieces and stirring with spatula.
- Add pasta, stock, salt and pepper; stir and level with spatula. Then cover and cook on low heat for 10-12 minutes, checking after 10 minutes. Brown rice pasta and any gluten free pasta cooks faster than wheat.
- When pasta is al dente (not too soft, so it doesn't become a mush), turn off heat and add broccoli, tomato, garlic and red pepper flakes. Stir, cover and let stand for 5 minutes.
- Add parsley and Parmesan cheese and gently stir. Serve hot.

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- Heat oil in a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until starting to brown, 2 to 3 minutes; add 2 cloves of chopped garlic, salt, and pepper. Continue to cook, adding mushrooms and remaining garlic, until turkey is fully browned and crumbly and mushrooms are softened, about 5 minutes more.
- Stir spaghetti sauce, stewed tomatoes, and fresh tomato into the pan. Add Parmesan cheese, half-and-half, and 1/2 of the cottage cheese; stir until incorporated. Season with onion, oregano, basil, garlic powder, salt, and pepper and let simmer to allow flavors to meld.
- While the sauce simmers, bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain.
- Pour cooked pasta into a large bowl and stir in remaining cottage cheese, making sure it is evenly dispersed. Add 1/2 tablespoon basil and mix thoroughly.
- Pour 1/2 of the sauce mixture into the bottom of a large casserole or baking dish. Pour pasta over and top with remaining sauce. Sprinkle with mozzarella cheese.
- Bake in the preheated oven, covered, until golden and bubbly, about 30 minutes.

Steps:
- Boil a salted pot of water for your pasta. Cook it al dente according to package directions.
- In a medium saucepan, sauté the onion in the olive oil for 5-7 minutes over medium heat (ok if it lightly browns).
- Stir in the garlic and cook for 30 seconds.
- Add in the crushed tomatoes, Italian seasoning, and red pepper flakes (leave them out if you don't want any heat). Reduce the heat and simmer the sauce gently for about 10 minutes.
- Stir in the goat's cheese and basil (the cheese should melt right in and make the sauce creamy). If you're at all unsure about the taste of goat cheese, add it in gradually and taste as you go. Season with salt & pepper as needed. Serve with the drained pasta (add a splash of the pasta water if you want to thin the sauce out) and freshly grated parmesan cheese if desired.

GOAT CHEESE STUFFED BAKED CHICKEN MEATBALLS
I didn't think meatballs could get better, but that was until we added creamy goat cheese to the middle of one! These easy baked chicken meatballs come together quickly. When choosing the cheese, goat cheese is an excellent option, but other cheeses will work well. Consider feta, cheddar or mozzarella. If you use a melty cheese (like cheddar or mozzarella), you might want to consider stuffing the cheese into the middle of the meatball and covering it completely with meatball mixture.

Steps:
- Heat the oven to 425°F and line a baking sheet with parchment paper, foil or a silicone baking mat.
- In a large bowl, stir the breadcrumbs, garlic, oregano, salt, egg, milk and roasted sweet peppers. Add the ground chicken and lightly mix. Try not to over mix the chicken, over mixing will result in a tougher meatball, so use your fingers or a fork.
- Form 16 evenly sized meatballs and place onto the prepared baking sheet. Break the goat cheese apart and press one or two small pieces of goat cheese into the top of each meatball. To help with browning, lightly drizzle the meatballs with olive oil.
- Bake until they are cooked through, the outsides are browned, and they register 165°F in the middle on an instant-read thermometer; 20 to 25 minutes.

GROUND TURKEY AND GOAT CHEESE PASTA BAKE
I created this recipe one night when trying to think of other ways to use up some goat cheese I had on hand, and didn't have any pasta sauce! It actually came out better than I expected. The goat cheese gives it a wonderful creamy texture and the tomato soup, rather than sauce, gives it a hint of sweetness.
